I can't do most simulators because of motion sickness. We took our three kids (then 4, 5, and 9) to US before Disney last summer, with two day tickets, staying onsite. I was never once bored and the rides were different enough to be interesting. Each had a story line and though there are many simulators, they are typically different kinds of simulators. Simpsons is a roller coaster type ride, Shrek is a show with 4d effects, Transformers and HP were more adventure-types. Here is my two cents:
Shrek is fun for the kids. When it got to be too much for me, I just looked down. Not a problem on that ride as it's not doing much of the false motion that makes most simulators too much for me.
We were there a few days before Transformers opened, but one of those days was one of the soft openings, so I wasn't about to miss it. It was a bit much for me, but I'm glad I rode it once. Just walking through the line area was pretty cool. I had to look down a lot and take a lot of deep breaths, and I'm glad it wasn't any longer.

Rode the Simpsons once with my kids and husband. Then the 4 of them rode it again about 3827273 times. Having ridden it on a previous trip, I knew even once was pushing it for me, so I quit while I was ahead.
I lost my lunch (breakfast) after HP and the Forbidden Journey. In a trash can right outside the ride.

My 9 year old (who is pretty fearful of rides) also did not like it.
MIB was, strangely, a bit dicey for me too because of all the spinning but I never felt like I couldn't do it, and we rode a few times.
I love the Mummy but my 9 year old only wanted to ride it once so I skipped it this trip and let my husband ride (could have ridden alone, but didn't care to).
We all loved ET and could have ridden it all afternoon; same for Flight of the Hippogriffs, Jurassic Park, and Bilge Rat Barges (it helped that it was June and scorching hot). Perfect for the ages of our kids.
I skipped Spiderman but kids and husband rode it multiple times and all loved it.
We skipped Rip Ride Rocket, Hulk, Dragon Challenge, Pteranodon Flyers, and Dr Doom's Fearfall because our kids were either not tall enough or not interested. The little kids and my husband did Twister, but I had to leave early with my sensitive 9 year old.

Ripsaw Falls was fun for me and my oldest, but the line was HORRIBLE, even with the on-site line privilege. If you are claustrophobic at all, be aware of that.
So in short, I also thought there were a tremendous number of simulators and was worried, but we all enjoyed it very much.
