Toffee recipe request

Does anyone have a good recipe for homemade toffee (preferably without nuts and corn syrup) that does not need a candy thermometer. I wanted to make chocolate covered or enrobed toffee and I can't find my candy equipment. All my tried and true recipes need a thermometer.
 
you just use 1 stick of butter, 1 cup of brown sugar..mix together in saucepan, bring to boil..in meantime , put tin foil on a cookie sheet (a middle size sheet, not the large one), spray with nonstick spray, open a sleeve of saltine crackers..place them edge to edge in the pan..break them in half to fit at the end...then pour the brown sugar/butter mixture over it..bake in 350 oven for 10 min...Cool 1 min..pour 1 pkg of chocolate chips (I use dark chocolate for 1 batch, white chocolate and reg. chocolate for another, and reg. chocolate for the third)..put back in oven for 1 min to soften chips..take out and carefully spread the chocolate out evenly..you can add nuts if you wish sprinkled on top..I used chopped walnuts and chopped craisins this year..everyone is raving over it..and it's just too simple!

Holy cow! That saltine recipe sounds delicious! I'm going to have to try it out with my kids, it sounds so easy. Plus, salty crackers and chocolate go together very well. Salty sweet, one of my favorite combinations.:thumbsup2

and sooooo simple to make...just be careful..the darn stuff is addicting..lol!
