To EMH Or Not - Week Before X-Mas

After worrying about this for months, I have decided to ask the experts. We are going to WDW December 18 -23 and staying at the GF. I can't decide if we should go to the park with EMH or not daily. My husband likes his character breakfasts and isn't real excited about this trip, so I want to try to please him too. Our last trip in December 2002 we became so tired, we were rarely at the parks at night. Will plan on afternoon breaks this time. Do you think it would be a mistake to go to MK and MGM on EMH days and non EHM days to Epcot and AK? I know that EMH is a perk of staying on property, but this would give us time to sleep in a little (by little I mean 7 a.m. - we are usually early risers) and do these breakfasts that DH loves. We usually do character breakfast in the morning before we head to the parks and early dinner for our meals. I should add our daughter will be 8 when we go. Any suggestions are welcome.
 
We're planning our first Christmas trip this year but I've read tons and tons from last year. It seems last year they actually opened MK earlier than posted - 8am rather than 9am so early entry would be super early! Why not plan to get to MK very early, do the rides you most want without lines and then do a character breakfast around 10 or 10:30? Personally, I love ee but my family does NOT! It's hard enough to get them to the gates 15 min before opening!
 
I almost always go the week before Christmas and have found at EMH is great, much less crowded than in the Summer so you get a lot more done. By the 22 and 23rd though the parks are getting more crowded than earlier in the week, so maybe do EE on the first days of your trip, and then skip it toward the end, or start your day at an EMH park and then hop to another park later in the day when the park gets crowded.
