To dream... the impossible (chili) recipe...

I'm great at putting things off until the last minute, but in fairness to me I just learned about this yesterday.

We're having a chili cook-off at work Tuesday. I know what I want to make, but I can't find a recipe for it.

It needs to be made in a crockpot and transported to work fully cooked (and relatively quickly :teeth: ). Don't worry, work starts at 2.

I'm looking for a recipe that doesn't require ANY precooking - I don't really care to be browning beef at 5 AM. I want to be able to just put one of those Reynold's liners in the crockpot, add the ingredients, stir if necessary, cook, and walk away - maybe even go back to bed for a few hours.

Now, the ingredients: I want either something that uses hot dogs as the meat ingredient - vs. a chili topping for hot dogs - or I want something entirely vegetarian that, again, doesn't require ANY advance preparation, including but not limited to soaking dried beans.

Here you go. This takes 5 minutes to prepare
In your lined crockpot add:
1 pkg morningstar farms crumbles
1 28oz can crushed tomatoes
1 can drained and rinsed kidney beans
1 can drained and rinsed black beans
1 can Campbell's french onion soup
1 soup can water
2 cans chopped chilies
2 Tbsp Chili powder

Stir. Cook on low to heat through.
 
Ah, the french onion soup has beef broth.

Here is my chili recipe. I realize you don't want ground beef, but you could sub moringstar crumbles. Iti s a one pot recipe.:
Brown 1 lb ground beef with 1 small onion diced and 1 tesaspoon garlic. Add 2tablespoons chili powder, one teaspoon orageno, and cook 2 min more. POur in 2 cans tomato sauce, one can diced tomatos, and one can black beans drained and rinsed. Addd one bell pepper diced(optional). Simmer in the pot 25 min, or pour into a crocpot and simmer. You can make this up the night before and just sit the crock in the fridge with the lid on. If you plug it in as soon as you get up on high, it will be hot in plenty of time, and with the mornigstar it will be completely veg. You would likely need a bout a teaspoon of oil to saute the onion though.

I think that will work. Our vegetarians eat cheese - plus, I know in a recent issue of Food Network Magazine, Rachael Ray provided a non-processed-food onion dip recipe. I bet I can just use all the ingredients except the sour cream :)
 
Here's a great tip: whatever recipe you decide to use, buy pinto beans instead of kidney beans. They are more tender and taste way better in chili!!! Hope you win.
 
You can always put cooked ground beef in the fridge for a day or two til you use it. I do this ALL the time and it works out fine. Then, just dump in the already cooked beef when you're ready to make the chili. I also sometimes make large batches of ground beef and cook the taco meat, chili meat, etc. and freeze til I use it.
 
This is great - thanks, everyone! QVCShopper (love that name ;)), thanks for the suggestion. I can deal with ground beef MUCH more easily on a Sunday afternoon than first thing on a Tuesday morning!
 
I love a white chile with chicken, and especially a green chile, pork, so different and tasty.

The difference is the base, not red, white beans, chilies, green peppers, maybe google a good one. Mine is usually what I have on hand.
 
My aunt for christmas lunch at her job, she would always make a HUGE pot of chili. And just turn it on low and simmer overnight. So she'd start it at like 10pm and go to bed, and have it ready by morning to take to work with her.

Is every one a vegetarian or just a few?? Cause I'd suggest browning up some meat, and once the beans and everything else cooks, split the soup up and add the meat to one. My aunt would also cook in some noodles to it.
 
Just a few - thanks, Sandra! A bunch of us are making chili, and it occurred to me that of about 150 people, a few of us are going to refuse to eat meat (that, and the last time we had an event, there were two trays marked "vegetarians first please" :teeth: )
 
Use a deep pot with lid
Chop 1 medium onion
Chop 1 medium green pepper
Saute these till tender
Add 1 lb ground beef and brown then drain any extra fat
Drain 3 cans of kidney beans and add (Get light and dark red beans)
Add 1 large can of diced tomatoes
Add 2 regular cans of tomato sauce
Add 1 can of Chili with beans (optional)
Season with chili powder, salt and pepper to taste (Go easy on the salt)
Simmer for at least an hour


This is my aunt's reciepe. And I could've sworn, she or my g'mother would add in angel hair pasta. Not much, and usually broken in half. I always dug around for the noodles and meat as I'm not much of a bean fan.

In a fancy pot pour

1 Can of Chicken chilli

1 Can Walla Walla Onion Chilli

2 Cans Extra thick Chilli

Some Chilli powered and black pepper and if you want a little heat a tiny bit of cumin.

And you will win show!!!

That sounds so good and very different. We just had our chilli cookoff at church but i will definetly do this one next year. I am going to make it today if you would be so kind as to share your recipe. Thanks disneymarie!!!!!:thumbsup2
 
Vegetarian chili..

In the crockpot.

One package of extra firm tofu drained and crumbled.
One can of Kdny beans rinsed.
One can of Black beans rinsed.
One can sweet kernel corn drained.
One can of crushed tomatoes (28 oz)
One can of diced seasoned tomatoes.(19 oz)
One package of chili seasoning. (I cheat and use the packet.. you could season on your own if preferred.)

Then top with shredded cheese or fat free sour cream if desired.. or not if you prefer it vegan.
This is so easy. If I have time I add carrots or onions.. but this is the basic no fuss recipe and it's really yummy.:)
 
1 can corn
1 can tomatoes
1 can tomato sauce
1 can kidney beans
1 can black beans
1 can pinto beans
any other beans or veggies in cans I have on hand that I think will taste good
chili powder
white pepper
cumin
taco seasoning
salt
pepper
garlic salt
all spices above to taste, I just put them in until I like the way they look and mix it up
cook in your crock pot on high for 4 hours or on low for 10, the kids and DBF LOVE this.....I make it regularly in the winter. We eat it with sour cream, cheese, avocado, onion, and chips. MMMMMMMMMM

If you want to add meat do it, I make it with hamburger or ground turkey and it's great. :) Oh I've also made it with a can of beer, just drain the corn and beans so it's not too runny. :) I actually also drain the veggies, about half the liquid comes out of each can so it's not too runny in the end, but we like non runny chili. LOL
 
Here's one for white chicken chili that I have won a chili cookoff contest with before:

All of the ingredients can be adjusted as you like depending on how spicy, juicy, garlicy that you like the chili.

Put everything in a crockpot (yes you can do the night before)
4-6 chicken breasts cut into bite size pieces
1 large jar of Great Northern white beans (or 2 small) with the liquid
1 large onion chopped
1 can diced green chilis
2 small cans of chicken stock (more if you like it more liquidy)-I usually pour it into the bean jars to rinse them out before pouring into the crock pot.
2-4 tablespoons minced garlic
1 teaspoon cumin powder
1 tablespoon dried oregano
few dashes of hot sauce, depending on how hot you like it

Pepperjack cheese (shredded-don't put this in the crockpot until the very end)
Cook on low for 8-10 hours or high for 4-6. Just before you are ready to serve, stir the shredded pepperjack cheese in until it melts and the chili turns white.

Serve with cheddar cheese on top.
