Pikester, "fend for yourself" night, which it sounds like you had, is another one of my favorites. I've been teaching Alexis and Livvie how to use the microwave so those nights really help with that.

Oh, I'll never make grasshopper pie. It requires a double boiler? I'm afraid of that....won't do it.

You do realize I'll have to make grasshopper pie now that you reminded me about it.
 
GRASSHOPPER ICE CREAM PIE
1 pt. vanilla ice cream, softened
2 tbsp. lemon juice
2 tbsp. green creme de menthe
2 tbsp. white creme de cacao
3 c. (8 oz.) Cool Whip, thawed
1 (9 inch) chocolate crumb crust


Or use 6 drops green food coloring, 1 teaspoon vanilla and 1/4 teaspoon peppermint extract. Combine ice cream, lemon juice, creme de menthe and creme de cacao in bowl. Fold in Cool Whip, blending well. Freeze if necessary, until mixture will mound. Spoon into crust. Freeze until firm, at least 4 hours. Garnish with chocolate curls, if desired. Store any leftover pie in freezer.

MK ~ Here's an easy version from allrecipes. I'll dig mine out sometime and post it as well:


Ingredients:
25 chocolate sandwich cookies
1/2 cup butter, melted
2 cups marshmallow creme
1/4 cup creme de menthe liqueur
2 cups whipping cream

Directions:
1. Crush cookies and set aside 1/4 cup of crumbs. Place remaining crumbs in a medium bowl and mix in melted butter. Press mixture firmly into bottom and sides of a 9 inch springform pan.
2. In a large mixing bowl, whip together marshmallow creme and creme de menthe until smooth. In a separate bowl, whip cream until soft peaks form, then fold into marshmallow mixture. Pour mixture into pan and sprinkle reserved cookie crumbs on top. Freeze at least 2 hours, until firm. Remove from freezer 20 minutes before serving to soften slightly.
 
So many different ways to make grasshopper pie! For some reason whenever I say "grasshopper pie" I think of Jiminy Cricket.

 
ooh, we'll have to do a taste test....marshmallow creme versus vanilla ice cream!

My Dad and I had a flan-off once. I made mine Mexican style, he went traditional Filipino style. I thought mine was better. The main difference is that I used whole eggs, he used mainly yolks. I hate using just yolks. I try to save the whites and freeze them for later, but I never remember them...
