My Dad said that this is standard practice on the cruiseships. All the tips get collected by the ship and then given out by the ship, not the guest. This didn't ring true as they have you give the tips directly to the server/hostess. Does Disney do this?

On Disney, you are given an envelope for the server/asst server/stateroom host/ and head server. You then present these envelopes to the individual. It is my understanding that each person gets to keep what they are given.

Each individual gets to keep the tips they earned. That is the substantial portion of those positions income (they do get a salary, but just like the waitress salary, it isn't much. If the waitress didn't get tips, it is not lucrative).

Definitely not standard practice on Disney. They include the suggested tip amounts with your cruise documents and distribute a sheet and envelopes for tipping the individual crew members. We often give over the minimum amount, and sometimes we add phone cards or FL lottery tickets for fun (in addition to the tip, not in place of it). Phone cards and lottery tickets are also a nice way to say thanks to crew members in positions that do not traditionally receive a tip.
I have been to dude ranches where they do the tip pool think (10 percent surcharge on top of your trip fee). But even then, most people handed out additional tips.
