tips for visiting the parks in the evenings in May

I am going to a convention in May but I will be heading to the parks with my mom (senior) for late afternoons and evenings. I have only been to Disneyland twice before in 1984 + 1991. I am a huge WDW planner and I know how helpful a good plan can be. Any tips you want go share would be great. Places for a quick bite, not to miss rides, etc. Thanks.
 
The park hours will be short ,closing at 8pm, but on Grad Nights it will be busy and possibly open until 10pm or 11pm. I would not spend time eating if it your visit is on a early closing evening.

Grad Nite dates in May, 10, 11, 16, 17, 18, 23, 24, 25, 30, 31


You may want to see WoC on a midweek night. It may be hard to get a show pass so going with a picnic or dinner to get a ticket may wrok out.

I'm trying to figure out what to do for my partial day (night time) too. I'll be there during the busy spring break so I'll have a late night. But I have and 8yo so I won't be there till closing. Do you have a smart phone? I'm definitely going to be checking wait times to decide what rides to choose, Mouse Waits is the app.
