we have encountered staff that frankly couldn't care less about giving us good service and even treat us as an inconvenience, and so on those occasions, we leave a penny tip - to show that we're not ignorant Brits that don't know to tip, but that we're not happy with the service that we received (learnt this from an American couple who's dad had taught them!). All this said, when we do receive excellent service we are more than happy to leave a tip in excess of 20%.

having worked in the service industry for tooo many years and having dh who still does, i agree. Tipping should be a recognition of service above and beyond, not because they have to. I can honestly say i never have experienced bad service in the US, unlike over here
, in europe the service industry is seen as a career, not just something you do before doing something else, and i think it is a lesson that could be adopted both here and the US. I agree that staff are generally under paid and (dont shoot me down in flames here) less educated than people who work in other fields, however if staff do do that little bit more, and often its stupid things like getting crayons for my kids or putting extra bits on the kids sundaes, then i offer them a drink on my restaurant bill as well as money. Staff may or may not take the drink, but at least i have said thankyou before i leave.
I also ask to speak to the manager and let them know if anyone has done a fab job
generally people only speak to the manager to complain, nice feedback is important too.
