Tip added for CRT?

I was reading another post about tips being added and it made me think about our reservations. I was wondering why they add a tip to CRT reservations?

I guess I understand paying for the meal in advance. But why do we have to pay a set tip in advance and before we even experience the service? We are only a party of 3 eaters and a baby.

Was that right to be charged the tip in advance?

I had breakfast there in June, the tip was included in the prepay. You don't even see a check at the table.

When she totaled my bill I was surprised and thought she had added a price for the baby. Then she explained it was for the tip. I thought it was strange but had forgotten about it.
