This may seem like a silly question, but if Epcot closes at 9:00, what would be the last ressie accepted at Le Cellier? I imagine we would have to be finished and exit the park by 9:00, correct?

Not silly at all--official park closing time isn't when they kick everyone out. Illuminations won't even start until 9:00, and they wouldn't expect to have the park emptied until at least 10:00, probably more like 10:30 or 11:00, so I would guess they would take reservations until at least 8:00, probably even later. (It seems to me that the busses don't stop running until 2 hours after park closing for most parks.) Of course, you might feel a little more rushed if you had one of the last reservations of the night.

No, they often seat people until the park "closes." It really doesn't close until much later than 9pm because IllumiNations doesn't begin until 9pm.

We have 830 reservations for LeCellier on a night the park closes at 9pm. Since LeCellier is fairly notorious for being backed up, I wouldn't be surprised if we aren't even eating by 9pm =)
