Tilapia anyone?

My favorite - Nut crusted and baked

I don't have the exact recipe in front of me, but it's basically

season the fish with salt/pepper
dip in flour, then egg, then...
instead of plain breadcrumbs, make a mixture of 1/2 breadcrumbs and 1/2 finely chopped nuts (macadamia is my favorite, but almonds work really well too)
bake on a cookie sheet at 350 for about 20 minutes, depending on the thickness of the filets
I like to serve these with cole slaw or broccoli slaw on the side.

The original recipe was actually in Parenting Magazine
 
Salt and Pepper.
Then cover with a thin layer of that "Krab Log" stuff they sell at the deli. Bake until done.

Also works with Salmon. :thumbsup2

I make a Louisianna creole type blackened tilapia that is great!
Similar to the dish at Ruby Tuesdays, but MUCH better!

top with a few sauted shrimp and a white sauce...
Serve with confetti rice pilaf (with sauteed diced red and green peppers, onion, garlic and salt)

Sprinkle top side of filets with:
salt
garlic
Tony Chatchere's Spice and Herbs seasoning

Blacken in a preheated skillet with the little remains of oil from sauteing the peppers and onions for the rice pilaf.
Once the top side is nicely blackened, turn off the burner, turn the filets, and add a few tsp water to to finish until done.

for the white sauce, use a cup or so of milk, a tsp or so of corn-starch pre-mixed in to the cold milk, one slice american cheese, salt, maybe a slight pinch of garlic, maybe some parsley or chives.
 
We like Tilapia a lot. I usually put it in a baking dish with about 1 tbsp. of olive oil and butter melted. I coat both sides in this and then sprinkle with seasoned salt, dill weed and put crushed ritz crackers and bake about 400 degrees afor about 10 min. I put lemon juice on it when served.
 

Ok - Funny Tilapia story. Went to a local Mexican restaurant yesterday for lunch - I've had their tilapia before and it's really good! So I ordered it - the waitress asks, fillet or grilled....now I didn't completley understand her (heavy accent) so I said grilled.

She brings out the whoe fish!!!!!!!!!!!!!!!!!!!! Scales, eyes, tail - I picked up the tail and said "Wow...it didn't look like this last time I ordered" - I was laughing so hard I was crying!!! Reminded me of "A Christmas Story" when they bring out the whole duck in the Chinese restaurant at the end!

Needless to say, I asked her if I could get it the other way - and it was yummy.
