Tilapia anyone?

I am planning to make tilapia for dinner tonight. I am looking for some inspiration on something yummy to do with it.

My usual is salt/pepper/flour, lightly fried in olice oil. Served as is or can also be put in soft corn tortilla with cilantro, lime juice and shredded cabbage for fish tacos.

Anyone have a new idea to hit me with?
 
I love to grill it. I put it one of those aluminum foil bags with lemons, butter, garlic and spices. Served with white rice and roasted veggies:love:
 
I throw it in a pan with butter and serve with sauted zucchini, squash, carrots and onions. I saute the veggies in butter too. It has become DD's favorite meal. Hmmm....I'll have to get some tonight for dinner.
 
I don't eat fish, but I cook tilapia for DH sometimes. I use salt, pepper, and lemon juice. He says it's yummy. :)
 

This is my favorite recipes for Tilapia:

1 pound raw tilapia
1/2 cup grated Parmesan cheese
1/2 cup margarine
3 Tbsp mayonnaise
2 Tbsp fresh lemon juice
1/4 tsp dried basil
1/4 tsp black pepper
1/8 tsp onion powder
1/8 serving celery salt


Instructions


1. Preheat oven's broiler. Grease a broiling pan or line pan with aluminum foil.

2.In a small bowl, mix toghether the parmesan cheese, margarine, mayonnaise, and lemon juice. Season with basil, pepper, onion powder and celery salt. Mix well and set aside.

3. Arrange fillets in single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and brol for a couple more minutes. Remove the fillets from the oven and cover them with the parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook fish.

I like to make a batter by dipping the fish in egg, then coating it with Italian bread crumbs with a little bit of parmesan cheese. Then I fry it in some olive oil. It's fast and really good.
 
I sautee a yellow, red and green pepper with an onion and whole fresh tomatoe, chopped in 1TBS Olive Oil. Then I add about 1/4 cup. Terriaki sauce (not soy sauce, I use Yamasa brand if you can find it). Simmer in Terriaki sauce for a few minutes. Dish that out of the saute pan, set aside. Add the fish to saute in the juice that's left in the bottom of the pan from the pepper mixture for about 4 minutes until fish is white.

Spoon the mixture over fish and serve with brown rice. It's healthy, easy,and yummy!
 
We like Tilapia, too, but I cheat.. I get it pre-seasoned/breaded at the store, then bake it in the oven! I like to serve it with steamed asparagus and garlic mashed potatoes! Hmm.. you just gave me a great dinner idea! :)
 
I rub my fish lightly with lemon juice then add dill, salt and pepper. Then I put two fillets in one of those microwave steaming bags and steam them in the microwave for about 4 min.

For sides I cook up some basmati rice and grill some veggies like zuchinni and asparagus. It's a low fat meal that is also delicious.
 
I actually just made tilapia two nights ago. All I did was season with salt and lemon pepper. I also added a little dillweed and a pat of butter on each piece. I baked it for about 10-15 minutes until flaky. DH loved it and I thought it was rather tasty also.
 
Tilapia is a "go to" meal in our house. My standard is broiling with lemon, garlic and white wine, but here's another one I came up with a while back that is different, yet still quite healthy.

Mix some panko (Japanese bread crumbs) with flaked coconut. Bread the filets as normal - flour, then egg, then bread crumbs. Drizzle with a little olive oil (use an olive oil spritzer if you have one - more even coverage). The oven fry on 350º until fish flakes easily - usually 20 minutes or so.

In a small sauce pan, sautee in oil one small, chopped red onion and some garlic. After a few minutes, add some diced tropical fruit (I've used papaya, mango and pineapple - or a combination of two or all of them), some lemon or lime juice, salt and pepper, cilantro (fresh or dried - whatever you may have) and a little brown sugar. You could also toss in a diced jalapeno if you like a little heat. Cook this until it gets sort of caramelized but still has some consistency to it. Add in some chopped scallions at the end and let them warm up.

Top your baked tilapia fillets with the fruit mixture and you've got what I call "tropical tilapia". I usually serve with some couscous and roasted veggies on the side.

Tilapia is so mild and versatile. I've also used an Asian inspired technique. Mix some sesame oil, soy sauce, lime juice, ginger (or use five spice powder if you have it) and whisk together. Pour this mixture over the filets in your baking dish and bake until fish flakes easily. I serve this with stir fried bok choy and onions.

I used to pan fry but I've found that not only is oven frying healthier, it's cleaner as well. One secret I've found is to always cover the baking dish with aluminum foil though. It keeps the juices in and kind of steams the fish without drying it out.
 
I like easy "recipes" and don't measure anything, so use your imagination for this ;)

Very finely mince red onions, red or green peppers, tomatoes, jalapeños if you like spicy, capers, olives and a drizzle of evoo (a half teaspoon or so, you don't want it oily). Add herbs, could be basil, cilantro, oregano or whatever you prefer. I don't eat garlic, but I'm sure it would be good in this too. It will be like a pico de gallo or a "dry" salsa, if you will. Sprinkle each fillet with s&p to taste, and top each one with a good couple of tablespoons of the veggies. Squeeze lemon or lime juice over the whole thing and bake. You don't need to turn the fish or anything, and it looks really pretty on the plate with the veggies on top.
 
We had it on Tuesday....... ummmm

I put it in a plastic bad and marinated it with salad dressing then I put it on my pizza stone crushed ritz crackers on top and baked.

]Tilapia with Citrus Bagna Cauda
Recipe courtesy Giada De Laurentiis Ingredients
3 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil, plus 2 teaspoons
4 anchovy fillets, minced
1 1/2 teaspoons minced garlic
2 tablespoons orange juice
2 tablespoon thinly sliced fresh basil leaves
1 teaspoon lemon zest
1 teaspoon orange zest
6 (6-ounce) skinless tilapia fillets
Salt and freshly ground pepper


Cook the butter and 2 tablespoons extra-virgin olive
oil in a heavy medium saucepan over low to medium heat just until the butter is
melted, stirring frequently. Add the anchovies and stir until the anchovies
dissolve, about 2 minutes. Add the garlic and cook just until fragrant, about 30
seconds. Remove from the heat. Stir in the orange juice, basil, and lemon and
orange zests. Season the sauce, to taste, with salt.

The bagna cauda sauce can be made 1 day ahead. Cool, then cover and refrigerate.
Rewarm before using.

Meanwhile, preheat oven to 200 degrees F.

Sprinkle the fish with salt and pepper and brush both sides of the fish with
remaining 2 teaspoons extra-virgin olive oil. Working in 2 batches, fry the fish
until just opaque in center, about 3 minutes per side. Transfer fish to platter.
Cover with foil and keep warm in the oven while cooking the second batch of fish.
Drizzle the sauce over and around the fish and serve.
