If i buy a 4 day hopper ticket but after being at Disney I want to add another day, Can I do that as long as I have at least one day not used yet?

You can do it up through the end of your last day.

Agreed, but to be clear, not on YOUR last day, but on the original TICKET'S last day.

To restate @FCDub's answer in a more precise way,
You can upgrade a ticket as LATE as close of business ON the same day that you USE the ticket's last "day."
