I have a 3 day park hopper plus pass. Now I'm not sure this is enough. Can I apply these passes to a 5 day plus pass and pay the difference? If so, can I do this at the hotel or at the parks? If not, any suggestions on stretching our days at the parks? Thanks in advance for your help.

Yes you can upgrade them. Guest Services at the resorts or Guest Relations at the parks are the ones who will handle it for you.
