Is there any way, via phone or Web, to determine how many days are left on a park hopper, or do you have to do it at the park?

Unfortunately, the only way to find out what is left on your ticket is at the gate at the parks. This is why buying on ebay is such a bad idea!

Also bad to buy on EBay now since all tickets require ticket tagging. You could find out that the ticket had been used by someone else and now you can't use it.
