for some reason I can’t buy a 5 day park hopper?

So if I buy 4 day park hopper and more.... can I use the and more before I check in? Or do I need to use a Park day first?

Well, first why can't you buy a 5-day Park Hopper? You should be able to.

To answer your second question, yes you can use an "And More" entry prior to a park day, however once you use it, that starts the clock on the 14 day life of the ticket, so don't use it more than 14 days prior to your last planned day (likely not a problem for most).
 
Online it won’t give me the option of hopping with a 5 day- 4 day yes or 6 day yes.

Oh, well, I believe that depends on the ticket. If it is part of a package I think sometimes they activate after you check-in to your resort (not a theme park entry). However, you can visit a Guest Services location instead and have them activated there if there are any issues. I am not 100% sure about the package tickets.

Also, you should be able to buy that 5-day park hopper. That's weird.
 

You're probably looking at Florida Resident tickets. When I click the "Options for Florida Residents" button, it only offers up to 4 days.

FL Resident tickets must be activated prior to usage and everyone is supposed to be present. Adults (ages 18+) will need to show proof of FL Residency.

No I’m looking at packages
It’s best to purchase your tickets separately and then link them to your MDX account. That way you can use any aspects of your tickets before your onsite stay begins... you won’t be tied in to your actual resort check-in day.
