If I purchase my Discovery Cove tickets and choose the Sea World option, can I go to Sea World on day 1 and 3 and Discover Cove on day 2?

If I'm reading both packages correctly, yes. You have 14 days to visit Sea World as many times as you like in the 14 days. They don't have to be consecutive.
