Many folks tour the WDW area with monorail rides (no parks are entered) and shopping at Disney Springs, dining at the resorts or Boardwalk, etc. Some like to spend time touring the Deluxe resorts.

There is so much to do at Disney World without going into a park. Start a thread and you will get plenty of ideas.

Visit AoA and Pop resorts to see and get great photos with all the Disney decor and huge icons.
View the Wishes fireworks and the Electric water pageant from the Grand Floridian dock or the Poly beach.
Ride the boat to Fort Wilderness for the Trails End BBQ
You can pack quite a bit into a no park day!
We went for 10 days in March. Thought about going into parks for a day but never got there. We enjoy resorts so much and just hanging out. We have 10 day never expire tickets that we got at least 4 or 5 years ago. We still have 4 or 5 days left. When we do go we do three parks in a day for just the highlights. If I had known they weren't going to sell them anymore I would have invested in more. The greatest deal we ever made.
