1. Parmesan and/or Grana Padano - I use far too much of these cheeses as I sprinkle them on top of virtually every pasta dish I eat. And I eat pasta a lot. Also parmesan is key to making a good traditional carbonara, which is one of my favourite things to make as its so easy and super tasty.
2. Pizza - any sort of pizza, whether stuffed crust, thin, meat based etc, they wouldn't be the same without cheese. One of my faves is a plain old stuffed crust margherita with garlic dip
3. Quark - this is a soft, cream type cheese thats a staple in my house as it is a low fat/healthy alternative to things like normal cream cheese. It doesnt taste of much on its own (wouldn't recommend eating it that way), but i use it to mix in and make creamy style sauces rather than using actual cream or other products.
