Three Things...Gratitude Thread

1. Parmesan and/or Grana Padano - I use far too much of these cheeses as I sprinkle them on top of virtually every pasta dish I eat. And I eat pasta a lot. Also parmesan is key to making a good traditional carbonara, which is one of my favourite things to make as its so easy and super tasty.

2. Pizza - any sort of pizza, whether stuffed crust, thin, meat based etc, they wouldn't be the same without cheese. One of my faves is a plain old stuffed crust margherita with garlic dip 🍕

3. Quark - this is a soft, cream type cheese thats a staple in my house as it is a low fat/healthy alternative to things like normal cream cheese. It doesnt taste of much on its own (wouldn't recommend eating it that way), but i use it to mix in and make creamy style sauces rather than using actual cream or other products.
 
This is tough for me since I love cheese but am in my eighth month of avoiding it... because I know no restraint when it comes to these nuggets of dairy gold! Well, that and for whatever reason, it seems to cause lipoma creation for me. Vegan cheese does quiet the cravings and doesn't trigger any responses like the real stuff. So, if I were to indulge and tempt the risk of more benign tumors...

Brie/Camembert - If I want to relax with some cheese, these are my top choices. I don't even need crackers. Just hand me the cheese and nobody gets hurt! 😀

Queso Flameado - Oaxaca is usually the cheese of choice for this dish traditionally served with chorizo and fresh flour tortillas. It is absolute cheesy bliss!

Macaroni & Cheese - My all time favorite thing to eat in the world and I can't have it! At least not without suffering consequences. I will say that while I like a cheesy mix and will often add in a homemade cheese sauce started from a roux, I don't like it when people try and get fancy with it. I usually use a blend of the good deli American, mild cheddar, colby, and jack.

YES!! Macaroni & cheese is my favorite thing to eat, with my own, homemade (starting from a roux) being my favorite of all. I usually use Cabot extra sharp cheddar (the one with the black and red plaid on the wrapper) and just a little Velveeta (not the store brand). I find the Velveeta helps keep the sauce from separating when heating up leftovers. (and I am also not a fan when people try to get fancy with my mac!)

Grilled cheese sandwiches, especially on the nights when DD makes homemade roasted tomato & basil soup to go with! A favorite variation on grilled cheese is grilled cream cheese with sliced green olive. Oh man... my mom used to make these for us all the time. The cream cheese gets all melty and soft, and the olive slices add just a touch of saltiness. Hmmm... might be breakfast!

Double-cheese pizza with a nice, thick, chewy crust. I prefer mine with canned mushrooms, sometimes also bacon, but usually I go for just the double cheese pizza. Also variations on this... cheesy breadsticks (basically a folded-over pizza), calzones (with ricotta and mozzarella, sometimes sweet sausage).

Runners-up include summer tomato sliced with sliced mozzarella and basil salad, a scoop of fresh ricotta on pasta (with fresh basil), cheese souffle, raclette, cheese dips (hot or cold), and the simple yet satisfying "cheese-toast" which is literally a piece of toast with cheese melted on top. I love cheese, and since my bariatric surgery it's become my mainstay for snacking (higher protein/no carb), so it was really, really difficult for me to choose just 3 cheese things!

My favorite cheese right now is Land o Lakes CoJack individual 3/4 oz size. If I have access to cheese that isn’t portioned, I can’t control myself!

Today's Topic (Thu, 6/5) - 3 strange or unusual things you're grateful for
 
Rainbows are unusual in that, I at least, don't often see one. By my faith belief a rainbow sighting is a reminder that God is with me always.

Quiet moments are out of the ordinary here and most extra welcome when they occur.

God willing when I am back to normal, going anywhere including the laundromat will be such joy. To some this may seem strange. To me, what a blessing health and mobility are.
 
Face masks. I find them helpful outdoors in the spring and fall, as I breathe in less pollen (and yes, I wore them happily and willingly during Covid, too). However, I also use them in the summer, as a sort-of cozie for take out beverages. I loop one ear elastic over the straw, pull the mask to the opposite side, around the bottom of the cup, and then loop the other ear elastic over the straw again. The mask catches the condensation that forms on the outside of my large Coke Zero from McD's... no more puddles on tabletops or in the car drink holders!

Raw oysters- one place we go serves a frozen wine mignonette which is to die for, and another place does a spicy tomato based vodka sauce, sort of like a bloody Mary shooter. Yum. I'm also branching out to try other raw seafoods; last time I was at Morimoto, I tried the octopus sashimi! The taste was fine but it's really, really hard to bite thru... between that and just ethically- because octopus are so freaking smart and amazing- I probably won't order it again.

Smells- even (especially?) the bad ones. I have a friend who hasn't yet regained her sense of smell after a bout with the first rendition of Covid. She says she never would have guessed how horribly this would impact her life. For some reason, I remember this most when I smell really bad things... rotten garbage, for example. Makes me grateful that even with 3 rounds of Covid, I never lost my sense of smell.

Yes! I would say his entire works should be under the dictionary definition of strange and unusual 😂

1. Definitely Stephen King - I've been reading his books for decades and they've provided me with so much joy and thrills and entertainment. Less so of late, but thats why I reread the oldies instead.

2. Strawberries & Cream Pepsi - every time I mention this to anyone I get funny looks so it must be unusual, although I really like it and having a can of this satisfies my sweet tooth without having to resort to a chocolate bar.

3. Early morning pre-work walks - some might not think this unusual, but with the lighter mornings I've been able to go out for walks before starting work at 7am. The early morning start kills me, but by the time I get home I feel really refreshed and energised, and it feels great to get my exercise out of the way first thing.
 
Modern Art - There is so much modern art that is unusual or strange when compared to more classical styles, but think about how lucky we are to have all of the incredible (but sometimes seen as unusual) works from people like Dali, Picasso, Kandinsky, and Calder... just to name a few.

Unusual Food Combos - I love when two things go together that seem unusual and shouldn't really go. Wendy's fries dipped in a chocolate Frosty is the first thing coming to mind.

Tim Burton - I keep hearing Lydia from Beetlejuice saying "I myself am strange and unusual," which immediately got me thinking of all of the unusual entertainment we've been given from Burton.
 
Prisons/Pits Genesis 37:24 and 39:20 Joseph was thrown into both and for that Egypt/ south of Jericho was grateful. And here are the pits for which I am grateful

frenulum...frenum and 5 other names...why spellcheck does not even recognize the tab of skin under your tongue. Mine is longer than normal and hence as a child i had a tendency to stutter and could not articulate difficult words correctly. Had elementary school therapy and one doctor visit...nothing came of it other than being bullied for that and also my height, lack of kickball and baseball skills and my poverty.....and for that i was given responsibility of the milk and ice cream sales as a fifth grader....the highest honor.

so while in high school freshman orientation for signing up for classes my mother signed me up for....SPEECH...thinking it would be the therapy I would need...not knowing it was competitive public speaking class...the class saved my life, oriented me toward university and I was removed from the PIT that awaited my peers in the logging/agriculture employment traditions...GRATEFUL that my mother had no idea other than save her child.

Ford Pinto....you know...combustible upon impact and may have very well been the first vehicle recalled. I didnt want a car but dad said that as 20 year-old you need a car. Boy did that car cause grief...because of that car i met my soulmate and we were going to solidify our relationship....but the car broke down 1977..and she met her soulmate later that week....1980 the horse stumbled again in Joshua tree at a wedding, nothing major, but enough to throw me into a PIT of despair...so went WILD with my cousin for 4 months to return to oregon to find that my roommates moved out..and with no money...I had to surrender the apartment. 1981 the PIT of a pinto finally died...homeless....uninspired....I joined the army....and that saved my life and even now with veterans medical benefits providing cancer therapy.......there is hope in the PIT

THIS IS THE PITS!!! say teenagers from Kansas as they hit the Oregon Beaches!!!! No swimming, no tanning, no surfing, no volleyball, pick-up football games..not a single scene from any movie about teenagers and the beach.....but put your feet into the surf edge of the cold Humboldt current and freeze every emotion and watch your feet sink into a PIT of sinking sand up to your ankles....hear the crush of the waves, feel the breeze, smell the sea....No...this is not Kansas anymore nor those 10 minutes that Katy Perry and Gayle King had...no...this central Oregon beach is living at the edge of the world...a world that is swallowing you in peace and leaving behind what ever imprisons you. Grateful that I had those 10 minutes x 1,000

HOWEVER. However.... however... I am a fan of Green Mile and Shawshank redemption is truly...by survey/polling the best movie ever so for that I am thankful...so.. yeah... I don't agree / participate with anything you posted.. but truly a great post and for that you are recognized in my daily search of the best post
