Three Things...Gratitude Thread

Hi all! Missed yesterday and late posting today because my DGD was here for a sleepover. Can’t think of anything else I’m more grateful for and I am exhausted, but will try to catch up!
3 lazy things
1. Putting off the dishes until tomorrow
2. Playing games on my phone for longer than I should some mornings as well as hanging out on the DIS!
3. Spending time totally focused on my breathing and nothing else.

3 R’s (haha, reading, writing, and arithmetic!)
1. Reading, always has been and always will be.
2. My BFF from college who has always been there for me
3. Restful sleep: it doesn’t happen often, but when it does, I am so grateful!

Sometimes the sides are the best part of the meal :tongue:

#1 - My MIL’s Cole Slaw - It’s so good! I can’t eat it anymore, due to my UC, but when I could I loved it. She’s always willing to make it and bring it to cookouts in the summer.

#2 - My Mom’s Seven Layer Salad - Again, I can’t eat it anymore, but since everyone else enjoys it, my mom brings this dish at Christmas, Easter and any other time I request it. This is a time consuming salad for her to make.

#3 - My Grandma’s (RIP) Candied Sweet Potatoes - I always loved them at Thanksgiving. After she passed away, I decided to make them, the only problem was, is that I had no recipe. So after years of adding this and taking away that, I’ve finally got my sweet potatoes to taste very close to hers. There were many dishes/meals I loved of my grandma’s, but they went with her when she died. Because of this, I make sure that all my girls favorite meals are in writing, so when I die, they have them.

Potatoes - any way except for German potato salad never cared for that one but I’ll eat potatoes just about potatoes any other way
Green bean casserole you can never go wrong with this one
Seven layer salad another winner
Artichoke dip or anything with artichokes on it - yummy !!! or just artichokes!!
Sweet potato casserole !!! or just sweet potatoes
Macaroni salad

I literally can make meals out of side dishes
Don’t get me wrong I’m a huge meat fan but I do love side dishes and I like most all vegetables with few exceptions I could be here all day telling you how grateful I am for side dishes - most nights my meals are just side dishes I will have a big plate of vegetables for dinner I figure I’ve ate enough meat in my life I should probably do some catch-up on the vegetables🤣🤣🤣
 
Not necessarily my favorites, but definitely things that are fond memory based dishes.

German Potato Salad - My paternal grandmother's was so yummy! It's about the only dish of hers that I've been able to replicate, but I never make it because DH and the kids don't like it. Still, so many fond memories with it from childhood.

Potato Kugel - This was something we'd only eat at Passover and often was only made on the night of the Seder. What's funny is that I'm pretty sure it was never more than the boxed mix they were making. So, it's nobody's special family recipe. Passover is probably my least favorite Judaic holiday due to the food restrictions and span of time. Potato kugel was one of the few things in the food lineup that I actually liked.

Macaroni & Cheese - DH and I have often debated about this just being a side dish vs. a full on meal. For me, it can be either/or. It's one of my great food loves. While my kids were never overly picky, DD15 had her moments. I remembered my mom telling me about my brother's picky eating phase and how mac & cheese was one of the only things he'd eat. The pediatrician gave her some tools to get past it, but also had her work with the mac since it's filling and the cheese is a good source of protein and calcium. So, I also used this to help the kids if anyone was having a picky moment.
 
Dad and I one day God willing would love to give a home to a rescue dog.

Oh, good one! We have had nothing but rescue dogs for years - usually 2 at a time, but our current little guy was already 14 when his companion died and I don't think he'd take to a new dog. We are his 4th family! His first one took him to the pound, and he was adopted twice and returned. I cant believe people do that - but I'm glad they did, because he has been our fur baby for 10 years now.

(I was volunteering at an Art and Wine Festival for a group that used to give our Title I school free field trips, and I saw this cute little dog with a vest on that said "Adopt Me" - so I did!)
 
1. My beloved grandmother's stuffing - the best part of any holiday meal, and the best thing I have ever eaten. Luckily, we only make it on holidays, or I would be as big as a house! I have her letter to my mother the first year my mother had to make it on her own (my grandmother lived with us but was away one holiday) with the recipe - framed in my kitchen. That letter is over 70 years old! It ends, "It will all come back to you. Wish I was with you sweet babies." My grandmother was the sweetest lady in the world - one reason I love Coco so much is that she reminds me of my grandmother.

(And of course the gravy that goes with it.)

2. My DMIL's Macaroni Salad. Everyone loves it. It's the sweet pickles that make it!

3. My DDIL's corn casserole - a new addition she has added to our holiday meals that I would be happy to eat all on its own any time.
 
I am also a fan of making a meal out of sides and appetizers.
My favorite appetizer at Disney is the falafel dish at Skipper Canteen.
I love artichoke dip, with or without spinach
Coleslaw has always been a favorite. I used to make my own, which I learned from my MIL, (RIP). I occasionally order it in a restaurant if it says “creamy” :)
 
1) My Mom’s Spanish rice. Different from Mexican or Tex-Mex rice, it’s a recipe passed down from our relatives from Spain.
2) South Texas Potato Salad. My Grandma’s recipe that everyone on that side of the family makes. It’s a mayo based recipe that has Spanish olives, pimiento, celery and hard boiled egg. Sounds weird. Tastes amazing.
3) Cornbread dressing from my husband’s side of the family. It’s different than the sausage dressing I grew up with and I love it.
 
I'm grateful for...

An open window - It's finally not humid here, and I love that I can open the windows this morning!

Family photos - particularly one one of DS on a vacation with some little souvenirs in front of the frame

A pencil cup/mug - It's a smiley face with sunglasses, and originally came with flowers in it. It make me happy to look at it.
