Thoughts on special activities for 7 year old girls Birthday?

We just got back from WDW, and we are planning our next trip. Thinking to go next October to coincide with our DD's 7th birthday. Any ideas on interesting things to do for her birthday? I'm already considering going to Beaches and Cream for that giant sundae in lieu of a birthday cake. We read about the Perfectly Princess Tea (but that seems awfully expensive for what it is, and i'm worried on when DD will start to not be so princess crazy).

Any other ideas?
 
Thanks for the ideas. We have done some character meals, but there are many left. And, we have done Pick a Pearl twice (both were great). Just did the MNSSHP last week. It was great too.
 

It's expensive but what about a dessert party or pirates league and the pirates and pal cruise (I think that is what it is called)
 
Let her picks the meals (or maybe just one meal so you all don't eat ice cream for all 3) for the day.

Let her be in charge of where you are going or what rides to go on that day.

That's a great idea. She LOVES to boss older brother around. Lol.
 
I also second the idea of letting her do what she wants for the day. We did that when our DD turned 5, and she thought that was awesome. We did a character meal she picked, the Pick a Pearl, and lots of ice cream and slushies. :-)
 
BBB and dinner at CRT. Those were hands-down my 7 year old's favorite activities on our trip.
