Thought I understood FP+?

So I've read just about every FP+ booking thread I can get my hands on as well as Mesaboy's FP thread and am still a little baffled by the booking process.. I think.

My family and I are staying at SOG and our FP window opens up in two weeks and are trying to priortize what we'd like to FP. Our first day is going to be at DHS. My mother and I want to ride TSMM and see the Muppets while my father wants to ride ToT and RRC. Am I correct in saying that I would have to book my mother and I and then book my father since we're doing different things? And I know I have to book all three of us another random FP because you have to have three. Is there a way to simply delete just 1 FP? I would hate to take a FP from someone else that I am not going to use.

Also, just looking for a bit of advice.. If I am trying to get A&E and 7DMT for our day in the MK, it's probably worth my while to just not book any FP at midnight on the 30 day mark if I check and none are available? This way I can continue checking up until our arrival and not have to worry about deleting any pre-existing FPs? Am I correct in my thinking on that as well?

On our recent trip, when booking FP, you are provided the option to select from your party who you are booking for. You can choose you & mom for TSMM & Muppets, then book your father a separate FP.

We had to book the 3rd FP one day that we were not using. I booked a ride for park opening that would not be busy, that way, it was not disruptive to other travelers. We were riding standby for the first 3 rides, so our first usable FP was not until 10:00.
