The OP is spitting out some hot takes out there! It doesn't seem that there is any immediate plans to turn The Wave into an Incredibles steakhouse. Doing a quick Google search, the single source of this rumor is a site that is banned here. (I won't get into the specific reasons why; you can find them fairly easily). The date of this rumor coincided with WDW overlaying some test rooms at the CR with an Incredibles theme on the outside. My understanding that these were just test rooms and not meant to be permanent (for now at least).

Here's a
thread here about the Incredibles Steakhouse "rumor". The last of the discussion occurred in August of last year and didn't arrive at any definition conclusion about the future of The Wave. That's not to say that it won't happen, but based on what I could find, there is no evidence that is is occurring now or in the near future.
As for the rest (Hunchback taco stand at YC????!!! Wreck-It-Ralph fish and chips???!!) I'd take all of it with a massive grain of salt. I'd love to see where the OP is getting these rumors. t does seem like the Princess and the Frog restaurant is going to be at Reflections though. It could be a character meal or just themed.
This Disney Food Blog article says it will be "inspired" by Princess and the Frog, so who knows exactly how it will be implemented.
