Thin warm coats?

Go to REI or whatever good outdoor store is nearby. Layers are the answer: your base layer should be a wicking fabric (like propylene)to keep you dry; the next layer is insulation for warmth, fleece is good; the outer shell is to block the wind and rain, it can be light.

None of these should be cotton, once it gets wet it stays wet. It doesn't wick or insulate well anyway.

Some lightweight gloves (or glove liners), warm socks (again, not cotton), and maybe a hat and you should be good for as cold as it ever gets at WDW. For those really cold days (like January 2003 when it got down to 20's) a base layer of pants helps too.
 
I went to UNIQLO this week and got their water blocker thin down coats for me and my kids. Fun colors and they roll up and fit in these little bags. I put one on in the store and it was warm! They have hoods and are good for temps as low as 30 degrees. I'll let everyone know how they work when we get back!
 
We wear a spring/ fall anorack style jacket. It is nylon on the outside, and a fleece type fabric on the inside. It has a hood, so it is water resistant, wind resistant and especially warm when we wear layers. So, on an especially chilly night, we would have on tee shirt, shirt, sweatshirt, jacket, gloves or mitts, and our hoods pulled up. If the sweatshirt is a hoodie, it is tucked into the hood of the jacket too. As a side note, panyhose under jeans are quite warm too. We are from northern Ontario so we can manage the cold, even if we don't like it. We take our jacket with us on the plane, to save space in our suitcases.

I have a lightweight North Face fleece that I paired with a hoodie while we were there in November, during record cold temps. Kept me mostly warm. I also have the Patagonia re-tool pullover that is very warm which I love, but it's heavier so I didn't bring it with me. Wish I had!
 
The higher the down rating, the warmer something will be for it's weight and bulk. So, 8 oz of 800-fill down is warmer than 8 oz of 650-fill down, and so on. On a lot of the bulky jackets, they are using cheaper down or cheap synthetic insulation to make up for the lack of warmth. For the thinnest, you'll want a high fill power jacket. Or something like Primaloft Gold.
