Are these what we call After Eights? I know a great party game with them (works especially well after ) - you take it out of the envelope and put it on your forehead, then you have to get it into your mouth without using your hands

No, those are candy these are crisp chocolate cookie wafers covered in mint flavored chocolate. They are probably the post popular Girls Scout cookie around.
As for the extras...you can freeze them and use at your leisure or you can crumble some up and then layer with some vanilla or chcolate ice cream to make parfaits, use them to top off a pudding pie - sprinkle them in the whipped topping of a chocolate pudding pie. My kids love when Thin Mint ice cream comes out (I think its Edy's that makes it) so you could make your own.
