Hey guys. I just looked in my pantry and realized I over bought on the Girl Scout Thin Mints this year. Does anyone kow of a recipe to make a dessert using Thin Mint cookies?

I do!!!

1 part thin mints
1 part shipping container
400 parts packing peanuts
1 part postage

Mix well and mail to me. :rotfl2:

Are these what we call After Eights? I know a great party game with them (works especially well after :drinking: :rotfl2: ) - you take it out of the envelope and put it on your forehead, then you have to get it into your mouth without using your hands :lmao:

or you can just eat them:thumbsup2
 

I'm thinkin' cheesecake...

Crush the Thin Mints instead of graham crackers for the crust in your favorite recipe. Then coarsely break some into the filling before you bake it.

No, those are candy these are crisp chocolate cookie wafers covered in mint flavored chocolate. They are probably the post popular Girls Scout cookie around.

As for the extras...you can freeze them and use at your leisure or you can crumble some up and then layer with some vanilla or chcolate ice cream to make parfaits, use them to top off a pudding pie - sprinkle them in the whipped topping of a chocolate pudding pie. My kids love when Thin Mint ice cream comes out (I think its Edy's that makes it) so you could make your own.
 
Our guides and brownies don't sell cookies :sad:
 
Thin mints belong in the freezer. they taste much better frozen and will keep as long as you need them to.
