I know that each adult can bring on 2 bottles of wine (within the size limits), but can you also bring on 2 additional bottles per adult at each port?
 
Yes. At each port, including embarkation, adults (21 and up on most sailings) may carry onto the ship up to 2 bottles of wine or champagne (or 6 beers). Additional types of alcohol may be brought onboard at ports but will be stored by DCL until debarkation. It sounds like this is also true for additional quantities of wine or beer brought on at ports (but not at embarkation).

Each person can carry 2 bottles of wine OR a 6 pack of beer. You can mix and match too.
 
Do they take them from you to store or that is what is allowed to be brought back to your room to enjoy during the cruise?

If you bring excess wine or any liquor at embarkation, they will take that and throw it away. You can bring up to 2 bottles of wine or a 6 pack of beer onboard at each port to enjoy in your stateroom. Anything in excess of that, or any liquor, purchased at a port of call will be stored until the end of the sailing (where you can pick it up in disembarkation morning).
 
Does anyone know if the main dining rooms will store a bottle for us? For example if we open it at dinner and drink half, will they keep it for the next night? Thanks.

We do this all the time, since DW doesn’t drink and half a bottle of wine is my limit. I have also had an open bottle sent down from Palo to the MDR scheduled for our dinner the following night.
 
I emailed DCL about this and they came back with this:

Guests who bring their own bottle of wine/champagne (including non-alcoholic options) into the main dining rooms, Palo, or Remy will be charged a corking fee of $27.00 per bottle.
  • If the Guest brings a bottle of champagne or wine to the dining room already opened (but has not yet been charged the corking fee) they will still be charged the corking fee.
  • If the Guest does not finish the bottle of champagne or wine and chooses to bring it to the dining room another night, an additional corking fee will not be charged.
  • Disney Cruise Line regrets that the Crew Members onboard are unable to provide refrigeration or storage for personal food or beverage items.
  • Guests may bring corkscrews onboard to be used in their stateroom.

This is mostly about if you bring your own wine into the dining room. I think it's different if you order a bottle from DCL or have the wine package.

The official policy is that alcohol brought onboard may not be consumed in any lounge or public area, and that wine or champaigne carried onboard and brought to the dining room is subject to a corkage fee.

Is there a way to check the origin of wine carried in a glass or flask? Probably not, but those are the rules.
