There are very few "regular" king bed rooms at the Wilderness Lodge. Most are handicapped accessible. All types of rooms are spread out through out the WL. No specific area for any type rooms except the Honeymoon Suites and the VP and Presidential.
Honestly, my DH is 6'2" and we always get two queens and it's more than fine. He has no problem with the bed. You will have a much better chance at getting a specific "room" request if you stay with two queens as they are the most abundent.
Yes, the courtyard area that faces the Villas is a very nice and quiet area. If that is what you would prefer, you will need to call back CRO and ask if you can put a request for a room on your reservation. The other courtyard view can be of the lake, the pool and also the upper courtyard view will be of the waterfall. Also, when you have them on the phone ask them to make a note that it is your Anniversary. You may get some Pixie Dust! Remember, everyone has their own preference in which area they prefer. Make sure it is what you like. We actually like the fact of facing the pool with all the activities going on, but that is just us.
As for Artist Point, I think it is a very, very good choice. You will need to request a window seat when you check in at the restaurant for your dinner. Disney Dining will not take requests, they will tell you to ask at the podium. What I would ask for when you get to the restaurant would be "a window seat overlooking the waterfall". You may have to wait a little longer for your table. ALSO, remember when you do make your dining reservation with Disney Dining (and tell them at the restaurant), make sure you tell them it is your Anniversary you will be celebrating that night at dinner. Again who knows, you may get something special!
