Lemon Cake


Ingredients for the Cake:

  • Lemon, 1
  • Unsalted Butter, 250 g - softened to room temperature
  • Castor Sugar, 200 g
  • Eggs, 4 - large
  • Self Raising Flour, 250 g - sifted
  • Baking powder, 1 teaspoon
  • Pinch of Salt




Ingredients for the Syrup:

  • Castor Sugar, 150 g
  • Juice of 1 lemon



Preheat over to 160 C. Line an 18 cm round cake tin with baking paper.

To make cake:

1. Zest and juice lemon. Pulverise the zest with the sugar in a food processor.
2. Sift flour with salt and baking powder and add to the food processor with the butter and eggs. Process until smooth.
3. Pour the cake mix into the prepared tin, smooth the top and bake for 1.5 hours.


To make the syrup:
1. Mix the sugar with the lemon juice.
(It will be crystalline as the sugar does not dissolve fully into the lemon juice).


Turn the hot cake out onto a serving dish and spoon the syrup over. Leave to cool.
(But I like to serve it warm!)

ps. Now you've got me hankering after this cake. The good news? My lemon tree is laden with fruit right now and I got some nice butter from the market today. If I do make it this weekend, I might come back and add pictures. :thumbsup2

...obvious choice: ZEBRA DOMES

....realistic choice: vanilla and cherry parfait cups



SOOOOOOO easy to make and so elegant! Make a double batch of instant vanilla pudding and carefully fold in 1 cup whipped cream (lightly blend). Using a can of Comstock's cherry pie filling, alternate [in tall parfait cups] 2 heaping tablespoons of vanilla mixture with 1 heaping tablespoon of cherry pie filling, to make 'stripes' in each cup, topping with cherry filling. Chill for about half an hour and add a dollop of whipped cream just before serving.

The domes are just too hard to make! But agree the pay off is wonderful

The parfait cups sounds easy and good!
 
You guys are killing me! I wish I could make something but we've got another full day of moving tomorrow. Today is driving. I can't wait to go home to my 75 degree weather. This 100+ degree weather is not fun for moving furniture!

I hope we can go out for dinner tonight.

Hi All! Just got back from Relay for Life. I am on my SIS IL team and spent the morning in the RAIN!!!!!!!!!!!!! THe really committed one, Marisa, Erica, Kady and Dan have been working since October. It is a shame that the weather is terrible, a lot of fundraisers up in smoke and not as many folks walking.

We have a birthday party this afternoon so dinner will be whatever is served. IF is is outside we won't last long, I am already waterlogged.

Brandi- One of my favorite desserts is an easy riff on a cobbler.

1 can cherry, apple or blueberry pie filling in a 13x9 in pan
add 1 can crushed pineapple with juice
crumble a box of cake mix on top
finish with 1 stick melted butter

Bake about 45 minutes at 350

Sounds wonderful... I am allergic to pineapple, is there a sub for it?
 
So far today I have been grocery shopping....

I have rice cooked and cooling for Fried Rice,
I have Masa Dough finished for tamales
Pinto are soaked and cooking
Black Eyed Peas are soaking for cowboy caviar
Lemon Cake is in the oven


So much to do and so little time to do it in...
 
Nancy - My best 3D friend used to organise a team for Relay for Life here. I think we walked in 7 or 8 of them in a row. She's "passed the torch" over to her teenage daughter in the last 3 or 4 years. The teenagers now walk RfL and us "oldies" just donate money now.

WFD? Yesterday was market day.

I got some snapper, flathead tails, marinated chicken breast fillet, chicken mince and hamburger patties. We will probably cook some pasta meals as well during the next 2 weeks. And cauliflower is back in season.

Last night I baked the chicken breast fillet and served it with some beans, carrots and peas. I also made some cauliflower soup; so DH had some of the soup with a green salad.


DS wants fish and chips for dinner tonight. *sigh* All this nice food; and he wants take-away.
 
On our way back into town, we stopped at the pharmacy at the market to get prescriptions and I noticed that artichokes are two for $3. I have to sort out a little mess before I go to the closer market and pick up supplies for dinner, you see Jim nicked the fender of one of the neighbors with the U-haul truck. He's calling in the claim now and I'll have to give her all the claim information to get it fixed. Thank goodness we paid for the maximum insurance coverage!

I'm not sure what I'll get to go with the artichokes, either fish, beef for pork. I'm not much in a chicken mood today.

Tomorrow night we're having hot dogs, beans and cole slaw. Tomorrow will be a heck of a day, we're unloading the truck. :faint:

it was awesome... DH, said this is awesome, and kept eating it, it is so dense and buttery and wonderful.

this will become my goto desert. really it was just what I wanted.
