The What's For Dinner Thread - October'11 (recipe index in OP)

Not here today, it's windy and chilly! :cold: I wish this weather would make up it's blessed mind! :headache:

Nancy- I'm with you, I have fallen off the wagon and can't catch up to it. Once I get through this week things should get a little easier.

...what are Greek meatballs? :confused3 Are they made with ground lamb?

This is the recipe:

1 lb ground beef
1/2 lb ground lamb
1 chopped onion
1 1/2 tbl chopped mint
2 eggs
1 slice bread, torn into small pieces
salt and pepper to taste
---------------
flour
oil
1 28 oz can diced tomatoes
1/2 tsp basil

Mix first 7 ingredients. Shape into meatballs, dredge in flour and saute in oil. When all meatballs are browned, return to pan with tomatoes and basil. Simmer covered for 15 minutes. Serve with Egg Noodles and Yogurt sauce

Yogurt Sauce

8 oz yogurt
3 cloves garlic minced
2 tbl parsley chopped

Mix above ingredients, serve with meatballs and noodles.

For dinner tonight we had baked swordfish, orzo in broth with spinach and zucchini from our garden!

Nancy - I need to get back on the wagon too. Been trying to start tracking again this week but failed miserably. The good news is that I've managed to stay on the good side of the WW program. Determined to be tracking next week!

Dinner tonight was the left over taco beef. I warmed it up in the micro and dumped the rest of the lettuce and tomato in it. And then I found out there there is no bread left in the cupboard!! :sad:
I'm home alone - the boys have gone out for the regular Friday activity.

Oh well....I didn't need the carbohydrate points anyway. ;)

PIO- vacations always killed me! I remember the last WDW vacation. Marisa and I were following WW and doing really well. We had a plan. A good plan. :thumbsup2 And a commitment to stay pretty close to the program. It lasted right until we got off the plane and headed to the Starbucks for one of their winter coffees. I added whipped cream bu tpromised that was it. We were at POFQ so lunch was that lovely taco salad thing. Perfect :thumbsup2 Dinner was at Riverside and it was a downward spiral from there. :sad2: Sweet potato salad...........bananas foster something. Cocktails. Oh well, that was a great 12 days! :lmao: Then I got home and the girl Donny was dating commented on FB about "the ring" she got for Christmas and my phone was ringing off the hook. Off to Costco to shop for Holidays and I bought every dessert and appetizer I saw!

Nothing compared to the trip I took with my sister Gail. 6 pounds in 7 days. In my defense we were visiting her DD Kim who was a CM at DLR. :crazy2: :dance3: We needed alcohol for that one! ;)

Dinner was late but good last night. I stuck to my dinner salad and Buddy turned his into sandwiches with some salad stuffed inside. Tonight will be some sort of fish and a big salad with a steamed veggie.

Have a weekend of work ahead of me, at home and the job. Trying to get ahead of my work, work so when it's crazy next week I can sail through it.

I want to get my new craft desk done this weekend and put up so that I can get a little better organized downstairs. And also it will help with getting through as much of the crap in that area because I am doing a yardsale next weekend.

So dinner has changed. I told Buddy I had hot dogs for him and salad with chicken for me. We are going out to dinner ;) Last week I forget what delightful entree :upsidedow I told him he was having and we went out to eat. I see a trend :thumbsup2

I love this place...Casa Di Lisa has fantastic Italian food and the best steak buddy has ever had, according to Bud.... so I am off my diet. i want Veal Milanese!

Marisa saw that there is a Top Chef tour at Fanueil Hall next week so I think we are going. Pre registration is completely filled but we don't mind getting there early and signing up to attend and then shopping. I hope she can find someone for Kady after school
 
Hi everyone!

Just going on noon on Saturday; market day. I took a leaf out of Brandi's book and came back from the Vic Market with the following items. Not sure which nights the meals will fall on; but this will be what we might be having for dinner in the next fortnight:

1. Porterhouse steaks with veg. DH will have a shrimp meal.
2. Hamburgers with the lot. I'll have to get a vegie equivalent for DH.
3. Pasta bolognaise. I got some mince meat and will cook this up this weekend and freeze. DH will have a marinara sauce to go with this....sauce is still in the freezer which I made from the tomatoes I grew this year.
4. Snapper fillets. I'm thinking of baking them in foil with oyster and soya sauce and chinese vegies.
5. Tuna fillets. I'll pan fry these.
6. Chicken tenderloins, which I'll crumb. Not sure what DH will have.

Assuming that we'll have 2 nights of mum's cooking and 2 nights of takeaway and 2 nights of baked potatoes, that leaves about 2 nights unplanned. :thumbsup2

They are!!! I know I've been making them since the late 80's every so often. I'll make a full recipe and freeze about 2/3 since there has only been two of us ever...

Are you that close to Boston that you can just drive up like that? I still don't quite get where in the US that you live! Or perhaps my geographic knowledge is failing me!

Tonight Fran was dying to get out of the house. We went to Sam's Club around 3PM and it was 6before we got home. I had to get some stuff at the regular market, put in trash cans etc, so by the time dinner was ready it was nearly 8PM. She hates that, but she keeps me out all day so I can't prep.

We have a big day Sunday!
 
Well I have my menu set for the week

Sunday - Grilled pork chops, baked sweet potato, and roasted brussell sprouts
Monday - Spinach, feta quiche for our meatless Monday
Tuesday - Burgers and Fries
Wednesday - Shrimp with lobster Sauce and Pork Fried Rice
Thursday - Chicken Enchilada's
Friday - Left overs


So today I made the Enchilada Sauce, got the Quiche together, and made the rice for the fried rice....

Cleaned house and spent time with my DH....

WFDT? Well....DS went over to a friend's place yesterday and came home asking for Pastitsio. Looks like we're having Greek lasagna for dinner tonight.

Just as well I already had bolognaise sauce made up in the freezer.

DH will be having pumpkin soup.
 
We did a parade today. I am wiped :faint: Every muscle in my body would be sore if I hadn't taken one of Fran's pain pills. Even though we didn't march, we rode on a float, the hurry up and wait was exhausting. Not to mention climbing up and down off the float and then managing multiple musicians.

I should sleep good tonight. We went out to dinner tonight ag the Acapulco chain of restaurants. I had two Grande Margaritas, but one was for PIO so it was OK. :rotfl2:

On Day 3, we headed up to Victoria Peak to check out the night lights.

We ate at a place called Tsui Wah.

It is rated for the soup noodles; which is what we had.

So what was special about this dinner? Afterall, it should just be a matter of dunk the rice noodles in hot water, cook the 'balls' and then pour some soup over it, right?


Well.....every single one of the dishes we had, the soup tasted different and each of the different soups reflected the protein of the dish. I don't know about you....but getting one big pot of stock with the right balance of flavour is hard enough. This place managed to get the balance right for all 3 dishes we had. Just enough flavour to complement the noodles but not too much to overpower it.


Tsui Wah is not the most highly rated noodle shop in Hong Kong. Three doors down from it, at the Peak, is Mak's Noodle Shop which has consistently figured in the top 5. I would have loved to have eaten there...except they didn't cater for vegetarian.

Tonight Fran was dying to get out of the house. We went to Sam's Club around 3PM and it was 6before we got home.

We are just shy of 2 hours from Boston and just over two hour to NYC. IF you look at a map at the border of Northern CT and Southern MA there is a little notch. We live in the Notch.

Your Sam's Club outing makes me chuckle! When I am stir crazy and need a few things I head to Costco. Pretty pathetic huh?

Beautiful!!!!!!!!!!!!

This weekend was gorgeous here! Friday night was dinner out. Saturday night we attended a benefit for Buddy's friend who passed away suddenly last year. It was awesome! Food was picnic food, hot dogs, hamburgers, salads and sausage and peppers and pasta. A dessert table filled with every cookie and cookie and brownie under the sun! They raised a lot of money for a new scholarship fund set up in his name. He sure did touch a lot of lives in a very positive way and he will continue to influence lives for years and years to come as this is going to be an annual event.

Sunday was a lazy day. Lovely weather and sunny skies. Kady, Marisa and I went to see Mirror Mirror, laughed and laughed! Then Buddy and I had hard blueberry lemonade coolers and grilled hot dogs. I figured if I was off my diet I might as well have a summer favorite :goodvibes

This evening we are back on track with a large salad, broccoli and grilled steak.

Waiting to see if Ellen is okay...........saw tornadoes hit her State :sad2:
