Monday - 7 Layer Tortilla Pie (meatless)
Tuesday - Grilled Pork Chops and Roasted Brussel Sprouts
Wednesday - Angel's Chicken Pasta and Steamed Broccoli
Thursday - Grilled Swordfish and Brown rice pilaf
Friday - Leftover's....

That is how I grocery shop! We stick to it and buy what we need and use most of the left overs as lunch....

....I live within a half mile of 3 major food stores [Stop'n'Shop, Pathmark, AND Shop Rite] so, many times I just pick something up to cook later that evening. Or, I buy stuff that can be prepared in many different ways. For example, I might buy two packages of 2 lbs of chop meat and use each to make meatloaf, or meatballs, or bleu cheese burgers, or nachos, or whatever strikes me that day, when I am defrosting the pkg of meat...

That sounds nice!

I do most of my cooking on the weekend. With our current commuting requirements, I just have the time to cook every night, so I have to plan ahead and decide what we are going to eat, and do most of the prep or actually finish the meal and reheat when the day arrives. We leave the house at 5:30 AM and don't get home until 6 PM, we change, cook, eat, clean up, pack meals for the next day (breakfast, snack, lunch and snack), shower and go to bed.

So today I am making the bread for the Bierocks, cooking the filling, and will make them tomorrow and let them rise and cook them off to eat at a later date, I am also making the marinade for the swordfish but will wait to put the fish in it until the day I cook it. I also will defrost meat and prep for the other nights. Today I have the pinto and black beans soaking in water, I will cook them tomorrow morning and assemble the 7 layer pie tomorrow night and cook on Monday after we get home.

Planning is what I do for my job, so it just spills over into our daily life.

I was amazed at how spotless Hong Kong was...even the city.

And you eat those eggs with rice congee.....no need for a pound of bacon. :)

I have 1.45 hrs to 2 hrs each way! ! commuter bus, 2 subway trains, and a bus to get to the office and return the same way!

I wish I was a mile from work!
 
Kimmar ~ I do KWIM!! But even a redone kitchen would be great right now. We have an old farm house and we are trying to redo each room. The kitchen will be the last on the list.

Brandi ~ your menu looks really good. I don't know how you can commute like that. I get to work in less than 5 minutes. Only 2 stop signs and we live North of town on a farm so some of the roads are on gravel.
When we lived in St. Louis my dad commuted into the city each day - took him 2 hours each way. That was the biggest reason why we moved from the city.

Happy Belated Mother's Day to all. I had a wonderful day from start to finish. I hope all of you wonderful ladies did too.

It's Monday!! I had a Physical this morning. So I am just now getting to work. I am so glad I only have to do THAT once a year. YUCK!!!

The sun is shining and there is not a cloud in the sky - It is a good day.

I am finally cleared to go back to zumba tonight and I can't wait. I have really missed it.

WFDT ~ Beef Stew (in the crockpot) and homemade Cracked Wheat bread.

Busy, busy, weekend. Went to a lacrosse game Friday night, then ran to meet my Dsis in VA to get my youngest DN, her sister and dad were away at a swim meet, and my Dsis wanted the weekend to herself.

We went to yard sales Saturday morning and I get her the prettiest pink fancy dress for $5. It's a Cinderella line and in looking online, if it's the same company, their dresses are over $100. :eek:

After that I dropped her at home to spend time with my DM and helped a friend with something then later in the evening she and I went shopping and had dinner and frozen yogurt.

Yesterday she helped me build my new end table from IKEA and we worked on a few other projects. Took her back to meet her DM last night and ended up stuck in traffic because of an accident. By the time we met up with her DM, got her sister from the bus (her dad rode separately and they were delayed), went to eat dinner with them and got home it was after 9. :faint:

I need a break! :rotfl: Dinner tonight will be salmon and something.

Merle ~ I don't know how you do it. You are one busy lady and such a good Aunt!!

It is election day here. So as soon as I get off of work I will go vote.

It is to be in the high 80's today so a quick walk before dinner will have to do. We haven't turned the AC on yet this year, but this week just might have to be.

WFDT ~ grilled sirloins, sweet potato, and a green salad with a vinegarette, and Lemon Bars (recipe following in next post)

These are so easy - and OH so good. You just have to try them.

Lemon Bars

1 box Angel Food cake
1 can lemon pie filling

Empty pie filling in a bowl. Fold in dry cake mix. Pour in a 9 x 13 pan.
Bake at 350 degrees for 25 minutes. Dust with powdered sugar.
 
Hey, everyone! Haven't been around much lately. I'm dealing with my annual "start of summer cold". I've been miserable! I'm trying to get over it quickly, since dad is having his second heart surgery next week, and I want to be there with him.

Not too much to report here, except we're on tenterhooks waiting for word from Alan's bosses. They told him they'd have news for him by the middle of this week, so we're keeping our fingers crossed. In the meantime, I'm being proactive, by doing some small fix it up projects around the house that will have to be done, whether we move or not. I'm also decluttering everything! I've taken 2 loads to the dump, and about 5 to Good Will. Feels good to lighten things up.

Dinner last night was an oriental chicken salad, that was a huge hit, I do have some modifications to make on it, like adding some almonds, and perhaps some mandarin oranges. The kids liked it, though, and it didn't heat up my kitchen. Tonight will be sloppy joes, green salad and cookies for dessert... it's National Chocolate Chip Cookie Day, today!

...see, now I am thinking the OPPOSITE. Since a kitchen reno is such a big undertaking [and VERY messy!] I personally would like to get that job out of the ways ASAP....JMHO:confused3

Well David got the job he interviewed for, so our life should return to normal around June 1st....

Thank you all for the support, the prayers and the venting, and I feel very blessed that he was able to get a new job so quickly and that we have a great circle of friends that include you all.

Manage to get my new end table downstairs last night, all by myself. Man that thing was heavy. And I managed to put it where I wanted it to be. :woohoo: I have a daybed in the family room that I use as a couch and because the space was tight I had to stand on the bed, pick it up and put it over the side of the bed. And I did it without breaking anything including myself. :rotfl:

Well I would agree except what is holding us back is the money. Kitchens are very expensive to remodle. With 2 daughters weddings and a son in college in the last 8 years we have had to wait. The rest has been cheaper.
