It is cold and rainy again this morning. We got our lawn sprayed yesterday so it needs to be watered by tomorrow. It is suppose to rain tonight and tomorrow which is great, but I have no idea how we are going to get it mowed before we leave. It will be a foot high by the time we get home if we don't. We just might have to pay to have it done. Which is VERY expensive when we have 5 acres. :eek:

Only 2 days left till vacation. :cool1: Getting so excited.

NOt this time sweetie. We are headed to Branson for 10 glorious days. This is the vacation that the Church gave us. Can't wait.

Swedish Meatballs​

[PLEASE NOTE: do NOT use these when making your Swedish meatballs, although you CAN eat them when making your Swedish meatballs...]

2 lbs ground beef (I usually use 85% or 90% lean)
4 t. onion flakes
4 oz. plain bread crumbs
dash milk
dash s & p
1 t. nutmeg
1/4 t. nutmeg
2 c. beef broth
3 or 4 bay leaves
1 heaping T. cornstarch

Combine first 6 ingredients together in a large bowl until well-mixed. Using a teaspoon, scoop enough meat mixture to make small-sized meatballs (using the spoon will help to keep them uniform). Heat a large skillet (like a chicken fryer) with 1 oz water. Place meatballs in skillet and add broth, 2nd helping of nutmeg and bay leaves. Cover and simmer on low flame for about 45 minutes. Combine cornstarch with enough water to make a slurry/paste and add to broth, raising heat to bring to a slow boil. Cook 5 additional minutes. Serve with white rice or mashed potatoes.

5 acres! I can't even imagine! That would be about three blocks in our neighborhood!

Dinner tonight? I'm back on WW and I've settled for one of their frozen dinners. I've lost almost 4 kgs to date and would like to lose another 3 kgs before the end of June. Since the holiday, I have NOT been good. Time to get back on the lean and correctly portioned sized!
 
Hi Girls,

I am still here but I am trying to get out of here a bit early. We had a funeral here today so I had to wait till they were gone to be able to get the Sanctuary set for Sunday. Other than that I am ready to blow this joint.

I have a few errands to run and then I am hoping that Doug got the last of the packing done on his lunch hour so we could leave a bit early.

We are so excited to get going. Plus we have dinner tonight with Matthew. We haven't seen him since Easter so I am excited.

You all play nice and I will see you in 10 days.

Crystal Lotus Dim Sum


Apologies to those that have seen these before but I am sharing all food porn with the diners.

I'd booked us into a restaurant called Crystal Lotus at the Hong Kong Disneyland Hotel for dim sum lunch. The restaurant has dim sum on offer every day for lunch; but on Sunday, there is a special menu.

Morning all! Today Scott and I are going to the Mellow Mushroom for lunch/dinner. So no cooking for me. Sorry I've been a little scarce lately. Things have been really busy around here.
