We got our Girl. She is just precious!! Stephanie had a picture perfect labor and delivery. She went into labor before they were to induce. Lilly was born at 5:15 p.m. Mother and baby (and proud Daddy - who has not come out of the clouds yet) are doing great.

Thank you all for your prayers. They worked. When we woke up this morning Doug looked at me and said, "I need to get a second job so we can spoil these Grandbabies". I said, "Oh yes you will - Lilly needs shoes, tutus, hair bows etc.". He just agreed. Oh being a Nanny is the best!!!

So I have finally convinced David to let me do meatless Mondays. It has only taken me 8 years and his Dr telling him to lower his cholesterol, that he finally agreed.

So this Monday I am making Quiona and Black bean chili, but I am on the lookout for more ideas, so does anyone have recipes that have used and liked?
 
Good morning everyone, and a very Happy Easter to you all!

We are getting ready for church. After that, the kids will hunt for their baskets, and spend a bit of time enjoying a sugar rush.

East dinner will consist of a ham cooked in the crockpot with an apricot glaze, baked yams, steamed asparagus and hollandaise sauce and strawberry shortcake for dessert.
 

For those of you not on facebook, Ellen posted a picture of the new baby GIRL!!! Lillian Rose. She is beautiful!!! Congratulations to Ellen and family!!!

As for us, we just got home from our family Easter Egg hunt. It was a lot of fun, although there was some drama. We expected it, though, so it was easy to avoid.

Now, I'm going to rest for a while, before braving the crowds at the store for some last minute Easter stuff.

Holidays always mean drama in our house. :lmao:

Other than that, it's been a good 3-day weekend! So sad I have to go back to work tomorrow.

WFD - we've been having great sales on produce at our markets. I have strawberries and artichokes in my fridge, so our dinner will be multi courses. First Strawberry Soup, then the Artichokes. I think that will be sufficient, we won't need a meat protein. Didn't plan it that way, but it should be fine.

Kathy - It's so good to see your typeface around here!!! I've missed you so much, my friend!

Brandi - I'm no good with meatless meals. Our only meatless meals are tomato soup nights. And even then, DH thinks there should be meat somewhere!

Alison - Your dinner sounds really good! Artichokes and strawberry soup??? Sign me up, please!

Just finished dinner, and the ham was the best that I've ever done! Slightly sweet and very savory all at the same time! Yummo!!!
 
I like to eat vegetarian when I can, it just tastes so fresh! Some of my favorites are black bean burritos and roasted vegetable sandwiches (recipes for both can be found online). They are both quite filling and filled with nutrients.

Here's one that has been a staple for me for years. I sometimes make it as a midnight snack when I come home from band on Tuesday nights. I found it in some cookbook while I was in college and it was cheap and quick and I've been making it ever since.

Angel Hair Pasta with Tomatoes and Basil

1 serving

1 tbl oil
2-3 cloves of garlic chopped
1 14 oz can crushed or diced tomatoes
1/2 tsp basil
1/4 tsp black pepper
1/4 tsp crushed red pepper
Angel Hair Pasta (I don't know how much, but I always grab the right amount out of the box for one serving for me)
Parmesan Cheese (optional)

Heat oil in a saucepan. Add garlic and cook until soft, do not burn. Add canned tomatoes, basil, black and red pepper. Cook Angel Hair Pasta according to package directions. Drain pasta, toss with sauce.

Thanks! After a several hour delay the surgery fi ally went off without incident. She is in major pain, understandably, when they go digging around in your leg how could it be pleasant? But hopefully the healing begins.

Finally! She has been in way too much pain for way too long so I pray this will be the beginning of better times!

I am tearing up just thinking about her and how Blessed you all are. enjoy your new Princess and if Doug is anything like Buddy she will never be looking for bows, ribbons, party shoes, new dresses..........:cloud9:

I missed wishing all of you a Happy Easter and a Joyous Passover. We went out for dinner. Buddy put his foot down and said no cooking for me so Marisa and my Sis Il Janice made reservations for lunch. He was right, by the time Mass was over and we spent time with his Mom I never would have been able to make a decent meal. I do have a fridge full of food so if I don't cook this week, shame on me.

If you can, please include Alice in your prayers. Buddy placed her in Hospice care which has been a Godsend. She has declined rapidly these past few weeks and he is daily revisiting medical decisions that include removing medications etc. I am not sure what her plan is but I hope that whatever she has left to finish she is able to do so. I have called Buddy's brother several times to update him but have only gotten his VM. As angry as Buddy has been with his Mom he has always been compassionate. His brother is not. I am not blaming him, his mom chose her path with her behavior but I think she wants to see her son one more time. She is comfortable with Buddy and his older sister and believes that they are reconciled and still upset with the sister who mismanaged her care so badly. We just want her to go with an easy heart. :sad1::sad1:
 
I think it's going to be a grab my gal and go out for dinner night! I'm thinking Italian...:yay:

Sounds like you all had a real nice Easter. We sure did!! I am still stuffed and I really didn't eat that much - just different. We ended up with 12 for dinner so there was plenty for everyone. I even sent leftovers home with everyone.

Oh my--- you all can't even imagine how my heart was bursting yesterday with all of my kids and babies here. What a wonderful day. Ethan had a ball finding the Easter Eggs that the Easter bunny hid. What fun. Liam is really starting to laugh, giggle and talk his tales, he is such a joy. Lilly slept and we all just started at her. She is just precious.

We are headed to Kearney tonight as soon as Doug gets off of work. I have 2 weeks of dinners for them. She has had friends bring stuff over also, so she should be set and not have to worry about dinner for awhile. That is such a big help, she can just concentrate on learning how to be a good mommy.

WFDT ~ Chicken pot pie (it's big enough for all of us and lunch tomorrow). green salad and cheese cake.

Wow!!! Where is everybody??

:grouphug: for all of you.

Last night was so much fun. At one point Lilly was in the cradle next to the table while we were eating and we realized that all 4 of us were just staring at her. We all got a kick out of it. Something only 7 lbs can make 4 grown adults turn to mush. Oh and speaking of mush - Doug is completely a pile of it over this baby girl. It is so funny. He hardly put her down, looked at anything else and we both hated to leave.

Elizabeth and Liam are heading to Kearney early this morning and spending the day with them. I will go tomorrow and stay until Saturday. The kids asked me last night if I would come. Of course I said YES!!!!

Tonight is Bunko night so I am looking forward to that. Girl time!!

WFDT ~ Planned overs from Easter dinner. There is alot!!

David has his dinner last night and did not notice it was meatless.... Now granted it was a chili and had lots of other things going on in there...

But it went well.

Plus, it's been really busy around here.

Tonight my lovely wife is taking care of dinner...her famous burgers! YUM! Although I'm going to make tater salad...cause ya' can't have burgers without tater salad! :teeth:

My computer is breaking as we speak, so I ordered a new one today. Cross your fingers that this one lasts until I get the new one in my hands.
