Hey lassies, for various reasons I have not and will not be able to keep up here.
But after readin the last few pages you all seem to have gotten back to basics and are " cookin " up a storm, so I think we can all agree my " culinary " skills will not be missed !! :rotfl2:

If allowed I will pop my heid in from time to time and add my own unique tilt to things.

This is not goodbye.....I will be watching.:cool2:

I really need to read back and catch up with all of you. But until I do please know my thoughts and prayers are always with all of you my dear friends.

I have been swamped at work, but in such a good way. I am finally getting some training on the programs that we use for our payroll and accounting. I am starting to see a bigger light at the end of the tunnel. It is such a good feeling. I have a LOT more to learn but each day it seems to get better. Plus we are heading into Advent and that is a joyous time in the Church.

I have tomorrow off - Veterans Day. I am so excited as I haven't had a day off for months. I get 3 weeks paid vacation and I have only taken 2 days so far. We are leaving for Thanksgiving and that will be 3 more days. Usually, if you don't use it you lose it. But SPPRC is letting me either carry my 2 weeks over to 2012 or they have offered to pay me. This has been a rough year so they are making an exception for me. YEA!!

We are playing Penn State this week in football. Our players are there and all reports are saying that they are being treated ok. I really worry about the fans though. I am so glad we aren't there. We thought about flying out - but I am so glad we didin't. Please keep all the players and fans in your prayers - this could be a bumpy ride on Saturday.

Marty and Stephanie, are coming tonight for dinner. I am so excited!! She is starting to get a baby bump. She is very thin and I really thought she would start to show before now but she hasn't till just the last few weeks. She in just starting her 5th month. YEA!!!!

WFDT ~ Roast, potaotes, carrots (in the crockpot), gravy, peach salad and homemade biscuits.

Jen - I hate to say it, but I'm one of those who also likes Hamburger Helper. If you get the whole grain version it's not as salty.

Ellen -That whole Penn state thing is just an awful mess, it's good you're not going to be there.

Glynis - Your Dad could never come to my house, or maybe he could because our house definitely looks like no one COULD live in it! :lmao:

Fran's attempt to go to rehearsal the other night was an epic fail. She tried to get into the SUV with no luck. She can get into our Malibu, so that will be our back up plan for the weekend.

DInner tonight will be turkey a la king.

Jen- I can't believe it was in the 30's by you, it was almost 70 here yesterday. I was working outside in a tshirt, granted I was splitting firewood so I broke a sweat within a second. I don't mind telling you where I work, but it's a fairly public position and I'm not comfortable posting it for the world to see. It's a seasonal job that depends on tourism.

It was in the 30's this morning, but it's warmed to a nice toasty 65, which in Jen's world, is practically blizzard weather. :lmao:

Dinner tonight is from Pinterest. Jen, you pinned it yesterday... the baked creamy spaghetti. I have everything on hand, and it looks yummy and easy. It's from the Plain Chicken blog, originally.

Jen - I used to love Hamburger Helper, and lived on it in college, but now it makes me shudder! Way too salty!

That recipe looked fabulous! I'd love a review before I try it!!

And yea, I can't do hamburger helper. I've never figured out why, but maybe it is the saltiness. :confused3

I was thinking above why I don't like hamburger helper when Glynis mentioned it. But, I don't think it's the salt. I just don't like the flavor at all. :headache: And UncleR says to tell you she doesn't do whole grain. :snooty:

Tonight's dinner changed. Instead of the cheesy mac we're having fried cube steaks with fried potatoes. Hmmmm...lots of fried in there. :lmao:

I've been going through my pie recipes, trying to narrow down what I'll be making for Pie Night this year. Oh, by the way, pie night has grown so much, I'm attending 3 separate Pie Nights this year. One at my SIL's house on the Monday before Thanksgiving, one on the Tuesday before Thanksgiving at a neighbor's house, and one Wednesday before Thanksgiving at my cousin's house. Unfortunately, I don't think it will dampen my love for pie, at all!

Anyway, I ran across Jacob's favorite pumpkin pie recipe so I thought I'd share it with you all! It is a must do for him every year. I do the crust, and he mixes the filling.

Eggnog Pumpkin Pie

1 can (15 oz.) solid pack pumpkin
1 1/4 C. eggnog
2/3 C. sugar
3 eggs
1 1/2 tsp. pumpkin pie spice
1/4 tsp. salt
1 unbaked pie shell (9 inches)

In a large bowl, combine the pumpkin, eggnog, sugar, eggs, spice and salt. Pour into pastry shell. Bake at 375 degrees for 60-65 minutes or until a knife inserted near the center comes out clean. Cool on rack. Refrigerate until serving.

I'll probably be posting more pie recipes in the next few days. Oh, that reminds me... my dad's favorite pie is Gooseberry. Anyone got a tried and true recipe for that?
 
Hi Everyone,

I am jumping back in once again. It was a busy week, as usual. The kids and I have tomorrow off from everything...work, school and activities...so we are looking forward to relaxing! I think our plans are just to sleep in, have a big breakfast and hang out. I suppose I will have to hit the grocery store if we want to eat dinner, but other than that, we have no plans. It is probably our last real day off for a while, so we better make the most of it!

Dinner tonight was beef and broccoli. Last night we had chicken pot pie that I made over the weekend. It was another hit for foods that touch each other! :laughing: Liam's pie was Mexican style with chicken, black beans, corn and spices. Caili's had regular chicken pot pie flavors but with just carrots and corn for vegetables. Mine had peas, pearl onions, carrots, corn, herbs, and of course, chicken. Tuesday was meatball subs with the leftovers from Sunday supper, and Monday was...stretching my brain to think back that far...roast chicken, gravy, roasted winter squash (oh my, were they sweet! I went a little heavy on the brown sugar. The kids loved it.), and broccoli.

I will get caught up with everyone eventually, but until then, I hope you can bear with me. I do think of all of you often, and I miss being here more regularly!
