I have never made or even eaten pork carnitas, always feared they were greasy, not sure why. Enlighten me ladies!:flower3:

Here's the recipe I'll be using:

You let the pork cook down so that the fat melts out. :goodvibes It can be somewhat rich, but not outrageously greasy. Carnitas is about the meat itself, no strong flavors to overpower the pork.

You're close-ish to us. Want me to put some on ice and ship it over? ;)
 
Homesick Texan's? I got the ingredients to do those this weekend. :teeth:

yes the one of the website... they were fall apart tender and so very flavorful. I loved every bite. It took every last morsel of self control, not to just gorge myself on them....

ok so these are the most tender pork roast that you can imagine.

pork fried in pork fat at the end after hours of rendering out the existing fat...

OMG they are wonderful!

I made these for dinner tonight and they were a huge hit at this house. So good, I used the extra hot chili powder and next time I will use regular. It was a little spicy, but so good.

I also made the Pork Carnitas and they were amazing, David and I can not wait to eat these, we nibbled on them but put them away until tomorrow... I will post pictures later.

This is from Bon Appetit a few months ago - made it this weekend (with canned peaches... shh!!) and it was delicious and easy! Very cakelike, and perfect hot from the oven with vanilla ice cream over top.

I didn't make the whipped cream but not sure how that could be bad :confused3

Skillet Peach Cobbler
2 cups all-purpose flour
1 1/2 cups sugar
2 teaspoons baking powder
2 teaspoons salt
2 large eggs, beaten to blend
1 1/2 cups crème fraîche, divided
1 cup whole milk
2 teaspoons vanilla extract
1/4 cup (1/2 stick) unsalted butter
2 pounds peeled, pitted peaches, each cut into 1/2" wedges (about 2 cups)
1 cup peach preserves
1 cup chilled heavy cream
2 tablespoons sugar

Preheat oven to 350°F. Whisk first 4 ingredients in a medium bowl. Whisk eggs, 1/2 cup crème fraîche, milk, and vanilla in a medium bowl. Add egg mixture to dry ingredients; whisk until smooth. Melt butter in a 12" castiron skillet over medium heat. Swirl pan to coat with butter. Remove from heat.

Add batter to pan. Scatter fresh peaches over, then spoon dollops of preserves evenly over batter. Bake until a tester inserted into center of cobbler comes out clean, 45–50 minutes. Let cool slightly. Meanwhile, whip cream in a medium bowl to form soft peaks. Fold in sugar and remaining 1 cup crème fraîche. Cut cobbler into wedges and serve with whipped cream mixture.

OK so my middle name is Laura and the only carnitas I've had are from the reheatable section at Costco. I'm ready for my lashing.

I woke up this morning to a surprise. My phone is my alarm. My phone's front screen is also a weather bug. I look down at the phone to turn off my alarm and see that it says that it is 28 degrees and snowing outside. :scared1: I immediately think, "Hmmmm, it's supposed to be 70 degrees and rainy today. How odd!" I look outside. Nothing. I check the weather on my computer. It's still 70 degrees out there and it's not snowing. :rolleyes1 I don't know what sort of glitch is on my weather app, but it's enough to scare me out of a good sleep! :lmao:

I have made pork carnitas in the crock pot and it was great. I have not looked at the recipe from the Texan website so I think I must.

I lost my whole train of thought...ugh! I am not feeling well the past couple days. I am really tired and have started peri menopause so I am a bit out of it. Not sure if its my lack of thyroid or what. I am learning to deal.

Lindsay, great picture! We love Beaches and Cream, especially the no way Jose!

Dinner tonight is TJs carne asada, rice and tossed salad.

I have a roaster chicken out that I will dry rub to cook tomorrow. I am trying to clean out the fridge, freezer and pantry. I buy too much stuff!
