The What's For Dinner Thread - November '09(recipe index in OP)

I had a rough afternoon at work... honestly, I'm blaming it on the steroids. They really do change my personality so much and I get upset over things that I normally do not get upset about. But even knowing it's the meds, it's hard to keep my emotions under control - you know? I broke down when I got home and sobbed for about 20 minutes which helped a LOT. DH was so sweet; he grilled steak, corn on the cob, and asparagus for dinner while I cried on the couch. None of it was a great choice for me to eat but I was hungry and it sounded good so I ate it carefully.

Nancy, I'll have to think & look around for something for Welby. Pasta & chicken aren't typical cajun dishes, but I know I "cajunatize" everything I cook!

Aimee, Years ago before DH was diagnosed with MD, they believed he had another disease & prescribed high doses of prednisone. He was on 60 mg ! a day for almost 2 years! Yeah, he was something else to live with. He hardly slept at all, to put it mildly he a quite a temper! We now know that he never should have been kept on those high doses for that long & it has affected his bones. Anyway what I'm trying to say is I know the affects & I'm sorry you are feeling so rotten!:hug:
 
Good Morning! Not sure what dinner will be...we had the chicken mexican bake last night and it just did not hit the spot. I have leftovers but may have that for lunch and make something with pork chops or I have chicken.

Aimee, Hugs to you. I hope you get all the answers and comfort you need at the doctors and pray that the surgery will eliminate all of this pain and other crap.

Maria, hope you are feeling better today.

Day off today so I get to be lazy :woohoo: I still had to get up early for the dogs though.

It is going to be cold today so I am making something warm for dinner. I wonder what that might be? :rolleyes: I'll post when I figure that part out I need more coffee.
 
Just a quick post this morning to update y'all on Timothy.

I took him to the doctor at 3:15 yesterday afternoon. He was miserable! He had a fever of 103.7, eyes were all goopy, and nose was too. The doctor checked his eyes... infection in both. His ears... infection in both. He felt that the infections were secondary, so listened to his chest, and immediately ordered us to the hospital for chest x-rays. He also wanted an RSV swab done.

I frantically made some calls to my family and got my other kids taken care of, and Timothy and I headed to the hospital. On the way, I called Alan who was 5 hours away on a news story. I updated him, and promised to keep him posted. I was really scared, at this point. Timothy was in his car seat, wheezing and crying so pitifully.

We got to the hospital and went to get the x-rays done, first. His fever was really bad, and the technicians were a bit scared that he was going to go into seizures. They got the x-rays, and sent us to respiratory therapy. They tried to get an oxygen level on him, but it was difficult, as he didn't want anyone to touch him. Finally they got one at 89 which is a little bit low. They did the swab, and then called my doctor with the results of the oxygen levels. He was concerned that Timothy has not been eating well since Friday, and ordered us to be admitted to the hospital.

By the time we got to the pediatric ward, the chest x-rays came back showing pneumonia. They gave him some ibuprofen to get the fever down, and tried to get an IV in. It took them several tries (and a couple of bloody arms), but they finally got a line in. It was so pitiful to see him lying on the bed. He was so pale, and terrified! We got settled in our room, and Alan called for an update. I told him what was going on, and he told me that he was on his way home. His boss at work told him to forget the news story he was on, and to get his hiney home with his family! I love his work sometimes.

Timothy and I just rested and hung out until Alan arrived at 10:00 last night. He brought me dinner, so I was a happy camper! Timothy has had a semi peaceful night. The IV fluids have perked him up and he has had 2 bottles of milk!! That's more than he's had since last Friday! The RSV swab came back positive, and he also has thrush. They are going to give him a round of antibiotics in his IV this morning for the pneumonia, along with eyedrops, and something for the thrush.

Hopefully, we'll be going home this afternoon. Keep us in your prayers, please! I'll update as I can.
 
Nancy -- I hope Buddy is doing okay today. I'm sorry I missed that yesterday was his scheduled surgery as well.

Robin -- Thanks for the recipe link. I haven't seen The Middle, but from your stories, I think I have a pretty good sense of what your daughter is like, especially since she and Caili seem to share some similar traits.

Kathy -- I hope Johnny is doing better today. Heel spurs sound terrible.

Lauren -- Are you feeling any better today? Your cold has been hanging around for a while. I hope you're enjoying your time with your mom.

Aimee -- I hope you're feeling better today. It's horrible knowing the reason for feeling emotional but not being able to control it anyway. I'm glad your DH was able to comfort you.

Maria -- I'm sorry you are still have problems with your tooth. I hope the infection clears up quickly.

Janice -- Thanks for the update. Enjoy your day off!

I'm enjoying hearing about everyone's Super Bowl plans.

Dinner tonight will be breakfast food for the kids. I'm not sure what I'll have yet. Something quick.

ETA -- Glynis, I'm so sorry to hear Timothy is in the hospital! I'm not sure what RSV is? Anyway, prayers said for a quick recovery!

Glynis- poor poor baby! I am so glad the Dr caught it in time. Gail takes care of kids with RSV and she has told Marisa that it can be bad.

Maria-I hope that teh antibiotics work quickly!

Aimee- Oh, Aimee- steroids can really wreak havoc. :grouphug:

sheryl- I was no help to Welby, I really did not think pasta dan cajun went hand in hand. I just know I made her hungry when I told her what the girls in this thread cook.

Buddy is doing great! He told me that it might be in his head but that the pain he has had from his elbow down the past several years is gone. I told him it was nto in his head....it was in his arm and the surgery helped.

I need to use up the roast pork I have in the refridgerator. Maybe hot roast pork in gravy sandwiches. I don't know.
 
Glynis Prayers for you and Tiimothy. Alex has RSV when he was a baby. He hated those nebulizer treatments. I hope he get better quickly and home faster.:hug:
 
Glynis, I am so sorry to hear that Timothy had to be hospitalized! Poor little baby! I hope he is doing better today. What is RSV?? Please keep us posted on how he is doing.

WFD: not sure yet. Something easy. I just ended up making myself a BLT last night.

It's awful stuff, isn't it? I'm on 60mg as well. The lower doses don't allow me to sleep much but the higher doses just change my personality.

Oh, poor baby Timothy!! I am so glad your doctor took his symptoms seriously and got him some help. Poor little guy. Let us know how he is doing!


Ladies who were asking, RSV is a respiratory virus that is very common in children but can be VERY serious in babies. A friend of mine almost lost her newborn to it - she came home from the hospital with 2 day old baby, 2 year old brother unknowingly had RSV and handed it off to the infant. ICU for a week or two and a scary time for that family. Because it's a virus, you have to let it run it's course - antibiotics don't do a hill of good. Most kids have likely had it but it looks just like a minor cold.


Tonight is another long day - I think I'm going to Chili's for lunch with DH and "his" two girls so hopefully I'll have some leftovers to dine on later.

Thinking of little Timothy, hope he's feeling better already. All I know of RSV is from the commercials on tv, I thought it was just something premies got.

Aimee- In case I don't get back here before you go, I hope your appointment goes well tomorrow. Just think, your new life is about to begin. I know your nervous but I'm so excited for you to be feeling better.

Marilyn- I only get mascarpone at BJ's when they have a coupon for it, it ends up being 2 dollars for a 1 pound container. Have you looked at Trader Joe's, they might have it. I don't think it's worth what they charge at the grocery store.

Laura- I was thinking of you yesterday. We are taking the train to florida and my aunt sent us a flat rate box of goodies for the train. Wow, she's good. I thought I could pack them good but she's got me beat.

Nancy- So glad to hear how well Buddy is doing.


The sun is shining and it is beautiful out! I'm grilling chicken for dinner. I know it will be cold and dark at dinner time, but oh well. Cheesy brown rice and a yet to be determined veg. Have a great day all.

Aimee - I'm so sorry about what you're going through. :hug: When you add the pain to your change in personality, it has to be hard to be yourself. But your husband and coworkers will get over it. Honestly, they're probably more worried about you than anything else. I pray that the surgeon can get to you quickly.

Kat - Heel spurs!!! :scared1: Much worse than a man cold. ;) Seriously, I hope he can get some relief, I've heard those are horrible.

Nancy - I'm glad Buddy did well with the surgery and so sorry I missed it.

Robin - Would you like to share your cheesy brown rice recipe? That sounds like a good way to get my kiddos to eat it without complaining so much.

Tonight's dinner is shrimp creole with steamed cabbage and corn bread. Last night I ended up making pork loin with cranberry/red wine sauce from a recipe on the pioneer woman site. Thanks to Becky and Glynis for pointing me there, the pork was delicious. Well, everyone but Amanda thought so, but in my house there is never a unanimous vote on dinner.
 
Gretchen - We're not for sure that it is a spur but his heel hurts really bad. He has an appt with a podiatrist tomorrow. We're hoping for a quick cure, he needs to be able to walk in WDW in two weeks.:cool1: Guess he could always go the scooter route.

I hope he does get a quick fix. But tell him if he needs the scooter, Bob may be able to give him all sorts of tips about where he can plug it in. You may have to watch out that he doesn't offer anyone else a ride. ;)
