The What's For Dinner Thread - November '09(recipe index in OP)

Good evening ladies,

I feel I have missed so much. I have been swamped at work and haven't had a lot of time to play. I so agree Maria, I have no idea where to post either. Today it's here, tomorrow there. :lmao:

Maria ~ how is the tooth feeling. I have been so worried about you. I hate dentists and especially one I don't know.

Glynis ~ OMGoodness sweetie, I am so sorry to hear about Timothy. I sure hope he is feeling better. I got tears in my eyes when you were telling us about talking to Alan and he said he would be right home. What a good Daddy!! I sure hope he starts to feel better real soon.

Nancy ~ Prayers for Buddy!! I hope he feels better quickly.

Kat ~ Prayers for Johnny. Heal spurs sound really painful. I will be anxious to hear what the doctor says.

Aimee ~ good luck tomorrow sweetie at the doctor. I am so anxious to see what he says. It is so time for you to be feeling better. Prayers are on the way.

I got a frantic IM from Jay this morning that he hadn't heard (skyped) from Elizabeth since yesterday morning and was she ok. Well I assured him she was and then I called her. She told me that her computer crashed. I had my IT man there all afternoon and her hard drive has crashed. So tomorrow morning I am taking my laptop in to her. This is her only lifeline she has to Jay, so of course I will - but I don't want to. What a terrrible Mother I am but I love my laptop and I want to be able to be with all of you. If I take mine into her (which I WILL) I will only be able to be on at work. :sad1: Hopefully it will only be a couple of weeks - or until I completely fold and go buy her a new one. Damn being a parent is the pits sometimes. Of course no one but all of you know this!:rotfl2: If she knew this is how I feel she would never take it, but afterall she needs it more than I do. RIGHT?? :rolleyes1

I hope you all are having a great night and I will talk to you all tomorrow.

Semolina's Muffaletta Pasta

Olive Salad
2 1/2 cups green olives
1 cup black olives
1 cup diced tomatoes
3 tablespoons diced pimiento
2 tablespoons chopped garlic
2 tablespoons basil
1 1/2 teaspoons red pepper
3/4 teaspoon black pepper

Combine all ingredients in a bowl and mix well.

Muffaletta Pasta
1 1/2 ouncse ham, cut in sticks
1 1/2 ounces Genoa salami, cut in sticks
1/2 cup olive salad
2 cups cooked penne pasta
2 tablespoons Parmesan cheese
2 teaspoons toasted sesame seeds
1/2 cup provolone cheese
Chopped parsley

Sauté the ham and salami in the olive oil until lightly browned.

Add the olive salad and the penne pasta and cook until the pasta is heated through.

Transfer the ingredients to a serving plate and garnish with the remaining ingredients.

Servings: 4

Good gracious, that looks delicious. I told DH I wanted to make "NOLA" fare for Super Bowl - he asked if I was rooting for the Saints and I told him I didn't care about the game, I just like the food :laughing: I think I'll make this :thumbsup2

Quick update: We are being released in 20 minutes. Baby will return twice a day for nose sucking. On heavy meds for all the other crud. Thanks for prayers.

Small world... a friend of mine on FB went to last night's show, too!

Ladies I really need some advice. I found out today that our neighbor and friend just found out he has cancer last night. His wife told me herself. Our backyards back into each other and our kids play all summer so we see them then almost daily. In the winter not as much, we've formally socialized twice and have done some formal playdates and I do talk with his wife in some form almost every day. So we're close but not super-close. They have a large support system but I want to do something and help as much as I can, especially because of my proximity but I don't want to overstep my bounds either if that makes sense. They're the type to turn down offers of help so I need to just do something. What do you guys think they would want to the most. She says she's been crying all day. Please pray for them, he's in his late 30s and his kids are 4 and 1.

Oh, that's awful. I think a play date is a great idea since the pattern has already been set and they obviously trust you with their children. I wouldn't even ask - er, maybe ask but be more like "Hey - I want to have Suzie and Johnny come over on Thurs morning for a few hours. Is 10am okay?" I think people respond better to that then the "Let me know if you want them to come play..." or "Tell me a good time..." Esp for prideful people that are overwhelmed with grief right now.

I also think food is always a good thing - esp since you can walk through your backdoor and bring it over hot. If it gives mom/dad a few more minutes of time together without being in the kitchen cooking a meal, then I think it helps the family dynamic. Since you're so close, you could do a double batch of your dinner and just walk it over.

Michelle – I agree with the others. Offering to help with the kids, giving them alone time would probably be the best thing you could do for them. A nice home cooked meal is always a huge help when facing difficult times too. I will keep them in my prayers.:hug:

Good Morning. Thank you for all your thoughts and prayers. My brother seems to be comfortable and as most of you know, they have stopped all machines, etc. and it is a matter of time. My sister sent me an email late last night that he woke up and was smiling. Friends and family are coming and going. I feel bad that I cannot be there but with this cold, the kids and my Mom, it is just not possible.

Glynis, glad Timothy is home but so sad that he has to continue going to the dr.

Tomorrow is shrimp. Maybe scampi. Something easy- I plan on doing shrimp stock with the heads and shells to put up for SuperBowl- and that'll take me a bit. Have you ever seen an inland Northern girl try to trim and devein shrimp?:rotfl2: Yeah, it takes a bit.:eek:


Here's my Northern girl cheat way to quickly peel and devein shrimp. I use kitchen shears! Just stick the point of the shear right into the middle of the end of the shrimp (where the head would have been....if you have head on shrimp, just twist the head off and proceed), then cut down the back of the shrimp to the tail joint. This will expose the intestinal vein for removal and you'll be able to pull off the shell in one piece. It goes really fast if you do it this way.

Lauren, I hope your cold goes away soon. I'll be thinking of your brother.

Michelle, you have gotten some great advice already. Don't ask them what they need because they will probably say "nothing." Just make some extra food and bring it over in a casserole that they can reheat, bake them a loaf of bread, take the kids for a while....they will remember your kindness.

So, dinner last night was kind of weird. I have a cookbook about sandwiches by Nancy Silverton, and this one sandwich was listed as one of the top recipes of the year when the book was published. It's an open faced sandwich covered with slow cooked broccoli (stewed in garlic, onion and olive oil for two hours), topped with scrambled eggs, then topped with feta cheese and chives. It just sounded so weird and I could not figure out how it could possibly taste good. But, last night I went ahead and made it anyway. It actually was really, really good! The flavors worked really well together. I ended up getting rid of the bread, didn't need it. So, here is a picture of this very strange sandwich:

I just chuckled at your dinner - Salisbury steaks - my NOLA gal is doing beef. That is just about as funny as me doing seafood. :rotfl2:

I just heard from Wendie and they have checked out and returned the rental. Their flights leave at 3. She is glad to be coming home. Prayers continue - her heart hurts and I feel so sorry for her.

FINALLY things have settled down here at work. Thank Goodness!! Just in time to be behind again on here. As I won't have my laptop for awhile (am I whining or what) I will probably not be on at night unless I want o use the PC. We shall see.

Oh and another thing - I have looked everywhere for the Lock 'n Locks you all talk about and we don't have them. I feel so out of it!! We really do live in the boonies!! :confused3

Someone please call me if there is something I might need to know. PLEASE!!

WFDT ~ Tonight we have a basketball game so we will just grab something there. Probably a hot dog or maybe I will try to smuggle in a Subway - that would be much more healthy. We shall see!!

Ellen- Don't feel to left out, we don't have lock and locks here either. I used to order them from QVC but now I don't have to, my mom has bought me so many sets. Some people think where I live now is quite, but when I lived on a mountain in NY we were really in the middle of no where. Plenty of cows though.

Lauren- I'm really not sure what to say other than you and your family are in my thoughts.

Kathy- My husband loves salsbury steak in an onion soup like gravy. We have some chilly days coming and I bet that would hit the spot.

Nancy- I got a laugh about Welby worrying about dog hair. I vacuum every day, but I really don't see the point. I have a long haired orange/red cat and a long haired golden dog. It's really to bad I fell in love with a chocolate brown quilt, there fur shows up really good on it and the animals aren't even allowed on the furniture. Welby shouldn't worry about it, animal fur is a never ending battle.

Michelle- I agree with everyone's advice, especially having the kids over. The kids will want a distraction from what's going on too.

Maria- Hope you aren't uncomfortable and the antibiotics kick in.

Aimee- Hope you hear everything you want to hear today.

Dinner tonight is beef stew, so we can also have pioneer woman buttered rosemary rolls. A nice big salad on the side. I made the salad dressing from 'Ohana a week or so ago, we've going through it like crazy it's so tasty.

Joanne, I realized the other day that the pain in my wrist (from the CT surgery) is finally gone! The PT has really helped that! Now if it will only do the same for my neck!

Michelle, I agree with everyone else. Don't ask, but she won't want to ask for something you might not want to do. I would bring over food whenever possible & bring the kids over for play dates a lot more often. I'm sure they are going to want to try to keep things normal for the kids & extra play dates would do that.

Last night ended up being take-out roast beef po-boy for me, softshell crab for DH & the most delicious (but seriously rich) shrimp, crab, corn soup I've tasted! My headache came back, so DH picked up for me.

I haven't decided on dinner tonight. My headache is not intense but still kind of just there. I can't decide if I want to go healthy with tuna or something comforting.

Thanks for all of the advice everyone. You're right, they never will ask for anything so I'm going to just start doing things and food is one of the easiest ways and probably the most appreciated. Although I might be intimidated at first to start bringing over some of my cooking since he's a professional chef! But I know they'll appreciate it because I would too.

Becky- that sandwich is very intriguing. I've made the slow-cooked broccoli before on its own and didn't care for the mushy texture. I bet its much better in a sandwich, I might try it sometime.

Dinner tonight will probably be grilled sweet apple sausages and a cranberry-cashew spinach salad. Except Mike (DH) is getting out of work early because he has to have a sty removed from his eye. Part of me is hoping his eye won't bother him afterwards and we can take advantage and go out.
 
Maria, I forgot to say,, that I'm glad you were able to make it to the play! I'm glad the antibiotics are starting to work. Try not to think about the dentist. :hug:

I printed out a recipe for sesame noodles. Just last night I was thinking of doing an Asian lunch, I have Cilantro dumpling things from Trader Joes, and thinking it would be good to have them with some sort of simple noodle dish.

In case any of you who have been to the website and haven't seen them she has videos, one of which is a sushi chef that her DH had come out as a birthday gift teaching she and some friends how to make sushi.

Dinner tonight will be meatloaf. My DM found a recipe using Stove Top, we'll see how this goes. Last time she found this "great recipe" it ended up being chicken breasts with season salt that were "baked" in foil in the crock pot. :sad2:

Marilyn, That meatloaf might end up being pretty tasty with the extra seasonings in the stove top.

Okay, I'm fixing seared tuna steaks, maybe coated wasabi peas, PW sesame noodles, I'll use soba noodles and some kind of salad or slaw.
