The What's For Dinner Thread - November '09(recipe index in OP)

Hi All! I am going to try to remember everything but apologize in advance if I forget.

Glynis- let us know how Timmy is please. Poor little guy :sick:

Aimee- Holy Smokes Woman! You are not whining.....you are in pain!

Vickie- if the cousins were not there I know what I would do......AS Lori has pointed out renting DVC would be perfect! i wish I knew how to do that :confused3

Maria- I have been wondering how you were feeling. I worry about you!

Laura-at least Caili is easy. Budy gave up when Kady started naming them after fruit

Sheryl- I have a favor.....Welby said she cannot get cajun fod out of her head ever since I talked about the food you all cook. SHe wants to know if you or Kat can help her with a cajun chicken pasta dish.

I also thank you for offering to send a jar of the salad to us, I would gladly reimburse you if you would not mind.

Dinner is chicken and ? Welby is making us dinner and bringing it over. She worried I would be tired after going with Buddy and I confess i am. It is no secret I don't sleep well at night adn we needed to be at teh surgery center by 6:30. Buddy is fine and he is napping. I gave him pills even though he is not in any pain now. I am afraid he may be and i don't want him trying to catch it up later. BBL!
 
Nancy- I must have missed it, I didn't realize Buddy was having surgery today. I'm glad you have Welby next door, I'm sure she is more than happy to help.

Laura- One stuffed animal she couldn't decide if she wanted to name it Ed or Bob, so she named it Edorbob. If you have ever seen the show "The Middle," she is exactly like the youngest kid. Anyway, the mascarpone pasta was good, we are having leftovers tonight. I wouldn't go out of my way to buy the cheese but if I had some around the house I would make it. Here's the link...

Gretchen- I'm glad things are getting a little easier for you and your mom. I loved your story about Hailey, she probably new the neighbors deserved it.

Lauren- Hope your feeling better. It's a good thing we can't order groceries online here, I'd get a bit carried away.

"Debris" Po'boys

Directions

1 boneless beef chuck roast (about 3 pounds)
Ingredients

  • 10 cloves garlic, peeled and cut in 1/2 lengthwise
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon ground black pepper
  • 2 tablespoons vegetable oil
  • 1 cup beef broth
  • 1 to 2 long po'boy or French bread loaves*
  • Mayonnaise, for dressing sandwiches
  • 10 ounces grated provolone cheese
  • Thinly shredded iceberg lettuce, for dressing sandwiches
  • Very thinly sliced tomatoes, for dressing sandwiches
  • Thinly sliced dill pickles, for dressing sandwiches
  • Red hot sauce, for dressing sandwiches, optional
* Traditional New Orleans po'boy loaves are airy, long French breads. If you cannot find po'boy bread in your area, substitute any long Italian or French bread loaves that are not too dense. If the only bread you can find is very dense, consider pinching out the center doughy portions so that your po'boy is not overly bready.
Using the tip of a sharp paring knife, make 20 evenly spaced small slits about 1 1/2-inches deep all over the pot roast. Using your fingers, insert the garlic cloves as deep into the meat as possible. Season the roast on all sides with the salt and pepper.
Preheat the oven to 300 degrees F.
Heat a Dutch oven just large enough to hold the roast over high heat. Add the oil and, when hot, sear the meat until very well browned on all sides, about 4 to 6 minutes per side. Don't be afraid to let the roast get very brownthis is where a lot of the flavor comes from. When the roast is evenly browned on all sides, carefully add the broth and cover the pot. Transfer the roast to the oven and cook, turning once or twice during the cooking time, until it is falling apart-tender, 3 to 3 1/2 hours. Check occasionally to make sure that there is always at least 1-inch of liquid on the bottom of the pan. Add more water, as necessary, to keep this level during the entire cooking process.

When the roast is very tender, remove it from the oven and let rest briefly. Increase the oven temperature to 375 degrees F. Using 2 forks, pull the meat apart into thin shreds, mixing the meat with the accumulated drippings left in the bottom of the pan. Allow meat to cool slightly before making po''boy.
Cut the po'boy bread into the desired lengths according to guests' preferences, (most po''boy come in 4, 6, or 8-inch sizes.) Slice the bread(s) in half lengthwise and spread both cut sides liberally with mayonnaise, to taste. Spoon the moist meat filling over the bottom portion of each piece of bread, drizzling with extra drippings, then top with grated provolone and place in the oven just until cheese is melted, 2 to 3 minutes. Remove from the oven and top with lettuce, tomatoes, and pickles. Sprinkle with hot sauce, if desired, top the po'boy with the other half of bread, and serve immediately

Aimee, That recipe for jambalaya looks good! :thumbsup2 Smoked sausage would be more authentic then kielbasa. Lots of people throw shrimp, sausage & chicken in it. I'll usually do it with either shrimp or chicken & smoked or andouille sausage. Your surgery is this Thursday? or am I confused. I've been eating everything in site, from the steroid injection. It's finally starting to wear off.

Thanks for looking at that recipe - I have a hard time finding diff kinds of sausage at my grocery store, and I won't eat "sliced" sausage - only if it's ground - so I sorta improvise on it.

I have the surgery consult Thurs to get the actual surgery scheduled.

Those steroids cause major hunger, don't they?!

Nancy- that recipe looks about right. The only thing I would change is slice into the bread instead of cutting it into halves. Should make it a little less messy to eat.

Slice into= still connected on one side, like Subway.

And I like a little pan juice on the side.

Mmmmmmmm.

Now I'm hungry.
 
The worst part is that the Prednisone makes you hungry ALL THE TIME but anytime I eat it hurts so I have this hungry pain going on.

Can you drink those meal replacement drinks? Maybe they would help with the hungry's and even when you can't eat at all.


Rachel Ray made a pasta recipe using mascarpone that I would really like to make but I would have to get it on a good sale. The only packages I have looked at were around $4. :scared1:

Dinner tonight is going to be Salsa Chicken with Lime Cilantro Rice. :cloud9: I got a differant salsa to try this time.

Really have to get to Trader Joe's tonight. I am out of fat free half and half and have been using non-dairy creamer in my oatmeal. :rotfl:

Becky- that laptop lunchbox website has some good lunch ideas. I am getting tired of the same old stuff all the time.

Janine, That debris recipe looks good. I like to do a pot roast & then cook it until it's falling apart. I then take the roast out & using the juices from the roast thicken the gravy with a small amount of brown gravy mix. Then I shred the roast & put it back into the gravy. Then when I make the poboys, I use a fork or spoon with holes, letting some of the gravy drip off, so it's not too messy, but messy is good. Lori is correct don't slice the bread all the way through, the poboy will fall apart.
p.s. I've never seen anyone put hot sauce on a roast beef po-boy but I'm sure some people do. Bob likes his with extra black pepper. Cheese isn't traditional, but I do like provolone or swiss.

Aimee, With IBS, I have periods where no matter what I eat, I'm going to hurt after. I'm not very good at ignoring the hunger pains & usually eat then suffer after. DH no longer tells me not to eat, he just rolls his eyes at me. :hug:

He is doing well. The left will get done in two weeks.

Welby is craving some kind of cajun chicken adn Briam likes pasta. She is a very good cook but was hoping that our authentic Nola gals could come up with something for her to make.

There is a guy that sells a olive relish he comes around out Costco and the farmers markets. That relish is really good it comes mild and hot. I've been eating on crackers with cream cheese. Now you know why I have to diet. :rolleyes1

Maria, I am praying that you get better quickly. So sorry that this happened.

Hope everyone is having a good night. Tom got stuck in traffic going home from DC...he stopped in Pittsbugh for a Primanti sandwich without us. I guess now would be the perfect time for him to do that since this cold is affecting my taste buds.

I had a rough afternoon at work... honestly, I'm blaming it on the steroids. They really do change my personality so much and I get upset over things that I normally do not get upset about. But even knowing it's the meds, it's hard to keep my emotions under control - you know? I broke down when I got home and sobbed for about 20 minutes which helped a LOT. DH was so sweet; he grilled steak, corn on the cob, and asparagus for dinner while I cried on the couch. None of it was a great choice for me to eat but I was hungry and it sounded good so I ate it carefully.
