The What's For Dinner Thread - May '09(recipe index in OP)

I'm sorry to make y'all worry about me. I'm just going through a rough time right now financially. Trying to keep up with insurance, taxes, utilities on Mom & Dad's house and budgeting for Kyle going away to school is killing me. I've been steadily draining my retirement account and I'm not sure how much longer I can continue to do that. May need to cancel vacation this year.

WFD - Grilled shrimp, charred corn relish and not sure what else.

Kathy, I am glad you checked in. I know it is very hard for you keeping up with your parents house, college, etc. Please just take one day at a time and let us know if we can do anything for you. :hug:

Vickie -- Have fun at your boy's play. Tell him to "Break a Leg!" (Do they say that to actors in Scotland? That is what everyone says here instead of good luck.)

Kathy -- I'm sorry this is such a tough time for you. Prayers and pixie dust that the financial burden lightens soon.

Our neighborhood is having a school's out party this afternoon (at the same time as Liam's game and Caili's gymnastics show, of course!) so we will probably head over there to see if anyone is still around after the game. If so, we'll eat dinner there, if not, we'll come home and have sandwiches or something else quick.

dinner last night ended up being pizaa from a new place. It was very good.

WFD- Baked scallops for DH, Baked cod for me, boiled red bliss potatoes, and either carrots or zuchini.

Aimee~ If this is your 1st trip to the UK & your hubby thinks Ireland is his "mother land" I would spend the entire trip there. There is so much to do & so many "regions". The 1st time I went to Ireland it was for 11 days & was sure it would be to long, I was wrong.......I would be happy to give you a ring & tell you what we did on our first trip.

Thanks for your thoughts! Part of it is that I have always dreamed of visiting London and think that if we're going that far, I want to at least be able to visit it. But maybe we'll scale back to just Ireland. I have a couple more years to decide but will definitely call you when it comes down to planning the trip.

I went shopping with Marisa :woohoo::yay: and was able to find clothes that I liked!!!!!! Marisa also picked up a few things.....she has refused to buy new clothes and 50 pounds down makes for very baggy shirts. Jeff must have joined my nagging becasue she caved! She looks so good!

Buying new clothes was always my favorite part of losing weight. :banana: to you both!

:hug: Can Kyle qualify for some student loans? Not preferable, I know, but he can take a loan for his education and sadly, you can't take a loan out for retirement. :hug:



We have no food... I am going grocery shopping whenever I get the urge to change out of my pajamas and we'll see what I come home with =)

The Boy has his end of term drama show tonight and hes soooo excited.

Hey...no apologizing to family! You get to vent and we get to care about you. It's what we all signed up for. :grouphug:

You are not alone trying to stretch a budget further than it wants to go, we were not able to sell that nasty crop last year and our insurance carrier will not pay until next month some time. We never have filed this type of claim so we were not really prepared for this and have been paying OOP for everything. Tempers get testy here at times and while we know that "this too will pass", just as your worries will pass, waiting is not easy. Please don't feel badly about venting here, Budy and I were afraid to even plan a trip this year so I know I sure understand, and I am not balancing two homes, as well as school tuition as you are :hug:

Aimee- I always wanted to go to England. When Daniel was a Senior his Madrigal group went and the school asked for volunteers to charperone. :cloud9: Dreams come true! Well, my DS and in this case I did not think of him as "dear" did nto want me to go so after all those horrible trips I went along on for more years than I can count i missed the good one :mad: Buddy said I should have gone anyway, it was not like he was always happy with me so what was another week or two? ;) He came home with "Oh Mom, You would have loved it!!!!!!!!!!!!!!!!!!!" Yup......he made me real happy ............
 
Aimee -- Greg and I went to London for our first wedding anniversary. We really wanted to add Ireland or maybe Paris, but the cost was prohibitive. You have a lot more time to save for the trip than we did though, but if you run into budget problems, it will be less expensive to stay in one country.

Nancy -- You've mentioned missing out on the London trip before, but I never knew it was because Daniel didn't want you to go. :headache:

We did find that the neighborhood party was still in full swing when we arrived, so we had pizza there. Caili's gymnastics show was good, but Liam's game was not. I never got the final score, but they lost by a lot. Oh well. Playoffs start Wednesday.

Tonight's dinner was YUMMY! I served it with creamy mashed fingerling potatos and a cheesy pasta/veggie dish.


Grilled Salmon Pepper Steaks

2 tablespoons cracked pepper
6 (6-ounce) salmon steaks
2/3 cup rice vinegar
2 tablespoons fresh lemon juice
2 tablespoons Dijon mustard
1 tablespoon dark sesame oil
1/4 teaspoon salt
1/8 teaspoon pepper
4 garlic cloves, minced
Vegetable cooking spray
1/4 teaspoon cornstarch


Sprinkle cracked pepper evenly over both sides of each salmon steak, and place steaks in a 13 x 9-inch baking dish. Combine vinegar and next 6 ingredients (vinegar through garlic) in a small bowl; stir well. Pour vinegar mixture over steaks; cover and marinate in refrigerator 1 hour, turning steaks occasionally.

Prepare grill. Remove steaks from dish, reserving marinade. Place steaks on grill rack coated with cooking spray, and grill 5 minutes on each side, basting frequently with half of reserved marinade. Combine remaining half of marinade and cornstarch in a small saucepan; bring to a boil, and cook 1 minute or until thickened, stirring constantly with a wire whisk. Spoon about 1 tablespoon sauce over each steak.

Yield: 6 servings

I am so glad that you have someone to help with the loans, etc. It is good to get a different perspective on things too. A student loan sounds like it might be the way to go and renting sounds like it may be a good option for now too. I hope everything falls in to place soon for you. xoxo

I was chatting with Greg as we (I) were doing some yard work & he asked if you would consider renting the house....that was one of the reasons I gave you a ring.:hug:

Dinner tonight for me was a cinnamon bun...I made Greg & cheese & pepperoni plate.

WFD - All of Johnny's faves for his bday....Fried chicken, 'Ohana potatoes, collard greens and white chocolate bread pudding with rum sauce. I'll need to hit the gym pretty hard next week to burn off all those calories.:scared1:

It is pouring here. The kids and I are heading out to my parents in a bit. My mom is making roast beef, gravy, roast potatoes, spinach gratin and butternut squash.
 
Kathy--has the recipe for the bread pudding been posted? that sounds heavenly! And I'll echo what everyone else has been saying, vent here all you want/need to. That's why we're here. Glad you have someone to talk with today. I made it through undergrad on scholarship, but I had to find a way to pay for pharmacy school myself. So, my only option was student loans. I'm happy to say that I paid my last bill last month! 2 years early!:thumbsup2 So, please consider that. So, do we still get to be friends since our teams will be playing each other this next round in baseball? ;)

Laura--glad to hear that your party was still going when you got home. Yay for Caili, sorry that Liam's team lost. Good luck to them in the playoffs

Well, the parties last night were okay. We went over to our neighbor's first. And almost immediately, Scott got an emergency call from his boss and had to leave to go to work (he was there until 5am!) So, I was left alone with my kids. Then after a bit we headed to my work gettogether. The kids had a great time swimming and I got to chit chat for a bit. It would have been much nicer had it not been super hot and humid.

Today is Scott's work picnic. The company has rented out a picnic space at our local minor league baseball stadium. Can't beat free ballpark food and tickets to the game. The kids are excited! Okay, time to get ready for church

Yummo...is this recipe somewhere!!!! I love bread pudding but white chocolate just put me ovver the edge. Tell me there are no raisins in it. I hate raisins.
