The What's For Dinner Thread - May '09(recipe index in OP)

Morning Y'all,

Having trouble sleeping, so I'm up early. But I think there was a reason for that. I sit down at the kitchen bar counter, where the laptop was sitting & I feel something dripping on my leg! :scared: I pick up the computer & a cucumber had fallen out of the veggie basket & was right up against the back of the computer, turned to total mush! Eeeewwww! The laptop is sitting in liquid! Laptop seems fine, both of our phones were sitting right there too, but just espcaped the Cucumber goo! Bleaaaah!

We had a nice quiet Sunday, went to church, out to brunch & grocery shopping. Came home & grilled mushrooms, onions & cornish hen for dinner.

That was the Rouses we went to where we FINALLY found the apartment book things. It was like the 3rd or 4th place we had looked. It's at Lapalco & Belle Chasse or something?

I did not go get to look at cars. I ended up taking a 5 hour nap. :headache: I am not getting much done lately because I keep falling asleep. I had to lay down because I had this crazy coughing fit;

Bethany, I am officially mad at Rouse's, that's where we went grocery shopping. They longer carry proscuitto or pancetta in the deli, because they don't sell enough of it. I asked if they could carry a packaged product & was just told "No we don't get that." :confused3:mad:

I'm so sorry you are feeling sick again!

We will be on the QM2 for 6 days & then in London for 4 days. I can't believe how quick it's approaching.
We need to set a date to meet before you go!!!!!

Kat & Sheryl, I loved your pictures, the diaper cake was adorable!!!! I wish we had DIS meets around here:sad2:
I'm going to have to start making day trips to Ann & Nancy.....I will look at that as a benefit of being unemployed.

Sheryl, thank you for the prayers my Mom is having such a rough time & the end of this week e should find out if the antibiotics worked for Leona.
The other day my Mom came home & I knew she had been crying so I went on FB & played the video of your little singer! She loved it & gave us something wonderful to laugh & chat about:hug:

Maria, I am so excited for you! That is going to be one amazing vacation!

I know I'm grateful for our new Nola girl's meets! It's really amazing how getting on a Disney Chat board can bring together such good friends. For me that here in NOLA & my WFD girls! :grouphug: I can't wait to get to meet you & Gretchen in Oct!!! :goodvibes

I'm so glad Alexis could make your smile! That's really nice! :goodvibes I can tell you she is a joy in my life and I feel blessed to have her around!

Kyle's schedule is getting more complex every day. Not sure if y'all remember he played with the Louisiana Knights during the summer last year. The coach called him last night and invited him back for the summer. He accepted but did tell coach that his umpiring schedule comes first. He'll only be available to play when it's not a work conflict. He was also asked over the weekend to pitch for the local Dizzy Dean 18-19 year old team. He's SO happy to be able to pitch again, and I love seeing that smile on his face. Sorry, I always seem to ramble on when it comes to my boy.:guilty:

Kat, That is so great for Kyle!!! I know he must just be in boy heaven! :yay: I'm happy for him & glad you get to see him happy again! After the last few months, y'all deserve it. :goodvibes

Well, I also know why most of you don't post dinner photos! I brought my camera for pictures of Liam and Caili, but did not bring the tripod! You REALLY need a tripod for food photos, I guess. Here is my tripod free dinner photo. Panko
crusted halibut:

Tripod or not, you're food still looks great!!! I do need to get one, I've been taking some photos, but not posting them cus they come out funky. I have a few I do need to post though. Hope y'all had a great day!

Today has been a whirlwind - we hosted another work dinner at our house tonight that went really well. We got home from picking up the dogs around 11pm and though I'm sooooooooo tired, I am determined to watch Desperate Housewives! Dinner was a chicken sopa casserole with salad, chips, quac. Made for 20 people or so.

Whew, 20 people at my house for dinner is a big deal! Literally scares me even when it's family! I'm sure you must be tired. I hope you got to watch DH! I won't telll you what happened ( in case you didn't see it ) but oh it was something else!

Morning Lindsay & Lauren!

Lauren, Be careful running around today! :goodvibes Have a good one!

Lindsay, Thanks for thinking about me! I'm doing pretty good actually. My leg now has a nasty looking bruise on it. ( I wondered why it takes me so long for a bruise too show up. ) Saturday I felt really good, no pain or numbness. Yesterday I started having some numbness & muscle spasms again but nothing bad. I guess the anesthesia is just wearing off now & the steroids need to kick in.

Sorry I've never made biscuits like that.

Oh WFD! I'm going to make a Bob comfort dinner tonight. Butter beans with smoked ham hocks & rice. Mustard greens on the side. He is going to have a horrible week! I don't know if I mentioned it but they had that 3 million $ job shut down & now this week the evil auditors are returning for an equipment audit. They have refused to accept the equip. even though they actually found no faults in the work, just didn't want to accept the "American" style paper trail. So this week they may even be cutting into the equipment to find any faults!!! It's very bad for their small company & I have never seen Bob so unhappy with his work. :sad1:

Good Morning ladies! I am going to try this without multi quote- it would take three pages :rotfl:

Lindsay- I have made cream biscuits but mine did not come out well. I think I am a Bisquick gal. Cream biscuits are delicious if they are made right.

Maria- your poor mom :headache:. She sure is having a rough transition. I think of her often and include her in my prayers.

I am hoping that everything is positive for Leona.

Three agents? Buddy's cousin is a Realtor and is fantastic! If you need any referrals let me know and I will see if she knows anyone in the area you are looking at.

Sheryl- I am hoping that Angelina gets this job! It is amazing when you get to see your kids go from being your child to that Professional who you never get to see in action! I have been able to listen to Donny when he had calls from home and I was floored, he goes from being Donny to "Don" and it is :goodvibes

I think that I saw you are feeling well. YAY!

I also almost dies when I saw 2 pairs of shoes for 250! I am not a name brand shopper and cringe when I have to pay full price for anything. My DH is like yours, he is "burdened" with me. Tell Bob that he "signed up for it :lmao:

Janice- that hand must hurt! Advil and rest! Glad that Minnie is springing back~

Robin- I am going to look for you a few times a week! Have a good summer!

Gretchen- Welcome home!

Becky - I hope that I am not too late to wish you a Happy Birthday!

Laura- Caili is so sweet when she skates!, I love watching your videos. I am glad Liam had some good plays!

Bethany- you have been feeling lousy for too long now, are you seeing the Dr? Don't worry about being MIA, we all know that this is a crazy busy time for you!

Ann- I am so very sorry for your loss, what a tragedy :lmao:Please give yourself permission to rest, you don't want to get too run down now

Janice- we are also trying to be careful with money. I am a spender but DH is a saver so while I try to boost the economy my DH is trying to stop being my stimulus package :rotfl2:

Kathy- Glad to hear that Kyle will be pitching again! He loves his sport so it is nice to know that he is going to be where his skills and his sportsmanship is appreciated!

Lauren- do you ever slow down????? I think that your sister and your Mom will find their fit, it just takes a little time.

Becky- I agree with Sheryl- your food looks great and I enjoy seeing those pictures!

Sheryl- I think Bob is going to need more thatn one of your comfort meals  Being responsible for others is so heartwrenching when work is lost. I wish Buddy's employers felt that way. They actually have been turning work away and still not all of their guys are not back yet. If those men are out much longer they will lose their health insurance, still the management does not care :sad2:

I hope I caught up, if not I apologize for missing someone :grouphug:

Kady's day was lovely! SHe did look angelic :cloud9: Yesterday she wore her dress to Church again and asked if she could have her picture taken in front of the statue of Jesus holdoing the little children, She made my heart sing!

SHe saw your well wishes for her and thought that you all were so nice! Thank you for thinking of her!

Marisa- Pictures please?

Dinner is more leftovers from Saturday.

I have to go to a wake for a childhood family friend. She passed away during heart surgery, only 46. It is going to be very hard to see the family.

 I am so sorry for your loss.

I am not getting much done lately because I keep falling asleep. I had to lay down because I had this crazy coughing fit; I'm still coughing even after waking up. :headache: This came out of nowhere and my ears hurt too. I hope I'm not getting ANOTHER cold. It's been like one after the other since the beginning of October. :headache:

Have you been to the doc ?

Maybe you need a wee pick me up.

Kyle's schedule is getting more complex every day. Not sure if y'all remember he played with the Louisiana Knights during the summer last year. The coach called him last night and invited him back for the summer. He accepted but did tell coach that his umpiring schedule comes first. He's SO happy to be able to pitch again, and I love seeing that smile on his face. Sorry, I always seem to ramble on when it comes to my boy.:guilty:

I will not lie....I just dont get Base ball !! :confused3

But it clear your Boy loves it and Im so happy he will still get to play !! :cheer2:

Today has been a whirlwind - we hosted another work dinner at our house tonight that went really well. We got home from picking up the dogs around 11pm and though I'm sooooooooo tired, I am determined to watch Desperate Housewives! Dinner was a chicken sopa casserole with salad, chips, quac. I came out in a cold sweat just reading this....20 people !!

Oh WFD! I'm going to make a Bob comfort dinner tonight. Butter beans with smoked ham hocks & rice. Mustard greens on the side. He is going to have a horrible week! My dad was in the building trade.

Every company he worked for wanted to push him for high management jobs.

He finally took one but the stress on him was terrible and he left to go back on the tools. He could not make calls that would make money but lose guys jobs.

Some guys care and some dont...looks like Bobs a carer !! :thumbsup2

Ham Hocks and hugs for Bob !!

Maria - We are 400 miles from London.I want to ask your exact dates for your stop over but i dont think I will like the answer....ok go on tell me !!

I LOVED West Side Story.

And yes ...I knew the gun shot was coming....but i still yelled so loud my whole section of the theatre jumped.....what can i say,Im a jumpy kinda lassie !! :rolleyes1:laughing:

I had a really carpy day yesterday tho.

I know its only a game but my Footie team drew and pretty much handed the title to our much hated rivals....Im not a happy bunny !!

One game left and we need to win but they need to lose...

Hope youse are all well..BBL.x

Oh, sorry its late but HAPPY BIRTHDAY BECKY !!

Hey...

Just want to add wee some thing....you know how i refer to Matthew as " The Boy " well it is done in a loving way.....hes not like the guy who was kept in the basement all his life and called " it "...just want to make that clear !!

:lmao: ;)

Good morning Ladies,

I am having a heck of a time keeping up in here. I still have about 6 pages to catch up on. I am so sorry!!

Please know my good thoughts, prayers, congratulations and anything else you might need are with you.

I will try to catch up today and BBL!! I'm not even going to promise today, but I WILL try. :)

WFDT ~ Spaghetti with meat sause, garlic cheese bread and a kitchen sink salad.

Tata ladies -

Vickie, I will have to tell Bob he was sent Ham Hocks from o'er the water!!! Thanks! :goodvibes He was able to pick up a small job & keep from laying off guys for a couple of weeks. But he got this new audit news Saturday & is really worried now.

Sorry your Footie team lost the game!

Nan, Glad that Kady had a lovely communion! That is sweet that she wore her dress again yesterday!

Marisa, Hope the whole family enjoyed it has much as the Nana did! :goodvibes I can't wait to see some pics of your pretty girl!

/
So, today is shaping up to be an annoying day. I got to work only to find that I had brought one each of two different styles of shoes with me Gargh!

Dinner is going to be sandwiches. Leftover steak for John, and mushroom for me.

Have a good day everyone!

Quick check in...gotta get A off to school and get ready for the gym!!!

You go girl!!!!:yay:

Bethany, I am officially mad at Rouse's, that's where we went grocery shopping. They longer carry proscuitto or pancetta in the deli, because they don't sell enough of it. I asked if they could carry a packaged product & was just told "No we don't get that." :confused3:mad:

WHAT?????? Do you know if Winn Dixie carries them?

Oh WFD! I'm going to make a Bob comfort dinner tonight. Butter beans with smoked ham hocks & rice. Mustard greens on the side. He is going to have a horrible week!

 for Bob.

Kady's day was lovely! SHe did look angelic :cloud9: Yesterday she wore her dress to Church again and asked if she could have her picture taken in front of the statue of Jesus holdoing the little children, She made my heart sing!

This made me smile.:goodvibes

:lmao: ;)

You kill me....:rotfl2:

WFD - Red beans & rice with grilled chicken sausages.

Thank you all.... :cool1::cool1: He got the job, and starts June 1 :cool1::cool1: This means huge changes for DH. He is going to be able to retire from his fulltime day job after 28 years and collect a pension. He will also be able to quit his part-time night job and work just one job like normal people!! It will be nice to have him with home more with the kids and I!!! :goodvibes

Ann

:cool1::cool1:

Vickie- Shouldn't you be asleep now? The only thing that keeps me from complaining about my inlaws here is I wouldn't stop. They have told me to my face my husband (their son) is a dissapointment for not graduating college and he needs to find a respectable job, he does have one, just not good enough to them. Mind you, he loves his job and has been supporting us with that job. They have barely spoken to me since I stood up for him. The important thing is my husband and I are on the same side and my little girl thinks her dad hung the moon. I think that somes them up so I won't complain anymore. I have good company in the bad daughter-in-law club.

Dont get me started on my MIL. She is pure evil. When Kady was born she came to the hospital and when my mom asked if she was so excited to have a new grandchild, she said, " I already have one". That is how she is. We dont talk to her much and dont see her more than once a year or two. Thats enough. The last christmas we saw them, I got an expired jar of salsa and Jeff got a beef stick. His sister and brother both got digital cameras with printers. :confused3 I think she goes out of her way to be mean. Kady doesnt need people like that in her life so thats ok.

Have a box of kleenex nearby for both! I bawled like a baby! Both are SO GOOD!!!

OMG!! Lost finale was amazing!! I was just sitting there speechless for a few minutes!!!

Hi everyone! We're back and we had a great time!!! The weather was really hot, but we toured the parks in the early morning and the evening when the temps were bearable and hit the pool or took naps the rest of the time.

I've tried to read and catch up but we are a chatty bunch. Hope everyone is well.

I cant wait to hear about your trip!

 You got up at 5am?! I am soooooooooooo far from a morning person it's not even funny. If I am up before noon on the weekend it's a miracle. I had no issues staying up until well past 4am. I do my best work past midnight!
!

:scared1: I cant stay up until 9 anymore. Last night Kady and I fell asleep watching Beetlejuice. We watched it in her room, and I woke up it was over and she stayed sleeping right through the night... The strange thing is.... It was on from 5pm - 7pm. I dont know when she fell asleep, but she must have been really tired.

Nancy & Marisa- please come to the BIG CITY as well!

When are you planning on going?

Kadys First Communion was so nice. I will post pictures tonight. She was so cute, and I got her a ring of daisy's to put in her hair. She was just so pretty. The party was great, but when I got home I was tired. I couldnt complain too much about being tired because Jeff works nights, so he went to work on Friday at 4pm got out around 4 am on Saturday and then couldnt fall asleep. (must be the energy drinks ;) ) So he watched tv and stayed awake all day. We left Nan's around 7pm. So by the time we got home he didnt want to sleep because he needs to make sure he sleeps at his normal times. He ended up taking an hour or so nap then staying up until 6am. I couldnt do that! I get up at 5:30 am and I am tired by 7pm!! :rotfl2:

WFD tonight? I think we are going to have pasta with red sauce and garlic bread. Kady has dance tonight so we dont have much time for dinner.

Have a great day and I will check in tonight with some pictures

Becky, I'm sorry about your shoes!!! :scared: I guess you're going to be spending a lot of time with your feet hidden under your desk today.

Kat, I can tell it's Monday!;) I haven't been able to find it at either of the Marrero Winn Dixie's. Maybe they keep it stocked at the Eastbank Rouse's. I wonder if Wal Mart carries it?

Ellen, Dont worry about keeping up, just check in & keep us updated on how you're doing. :goodvibes

Lauren, Good luck at the gym this morning! I hope you don't push too hard, you don't want to get hurt & then not keep it up.

We have had a distressing problem this week. Our Home Health Aide for Bob as sort of disappeared. She was here on Tues, eveything fine. She didn't show up on Thurs and didn't call. Which is not like her, she has been very good about showing up or calling if she can't. We tried her several times thursday night. She called DH back Fri. afternoon & said she was in the hospital the night before for severe headaches. ( She has been complaining about headaches.) She said she was medicated & had slept all day. She wanted him to call her back on Saturday. We haven't gotten an answer. We are worried, but also wondering if she may be just trying to quit. She told us she wasn't getting enough work from the agency & was going back to the hospital part time. Bob is going to call the agency today when he has time.

Good morning, all! Sorry I didn't get back to you during the weekend. Things got hectic. Alan and I had a wonderful time on Saturday! The play was fabulous! I was really impressed! After the show, we went to a Greek restaurant, and had a late lunch/early dinner. Yummy!!!!! Then, we spent a couple of hours running errands, and just enjoying our time together without kids. When we got home, the kids had surprised us by cleaning the kitchen and the backyard! What kids! Every time I'm ready to throw them away, they do something like this and redeem themselves!

Yesterday, we just spent the day together as a family. We went to church, and then spent the day playing games and relaxing together. We don't do that often enough! I made a pineapple upside down cake and we watched "Toy Story" for our Disney movie night! What a fun day!

Today, it is going to be above 90 degrees! I can't believe it! It's also the kids school carnival today. This is our PTA's fundraiser, and it's always a big one. I spent last night making cookies for the bake sale. I'll drop the kids off at the carnival at 4:00, and then Timothy and I will join them at 6 for the last hour. Should be fun. Even better, I don't have to cook! The carnival offers boxed meals from a local Mexican place, so I get to support the school, and not have to cook!

Nancy - How did Kady do yesterday?

Sheryl - I'm so glad you are feeling better!

Bethany - It's so good to hear from you. Sounds like things are moving right along (no pun intended). In answer to your question, my dad likes to take all his kids (and their spouses and all the grandchildren) to Disneyland every other year. We've done it now for the last 18 years! It started because my Mom and Dad didn't want to miss my niece's reactions to Mickey, so they offered to take everyone. It was such a hit, that it became a tradition. This year will be bittersweet, without my Mom, but we are doing it in her honor! Should be fun! I'll do a mini TR when we get back for y'all. In all likelihood, it will be the closest some of you get to DL! I'm glad to be your "tour guide" for it!

Kathy - I'm sure glad that Kyle is getting back his enjoyment of the game! I hope it continues!

Vickie - I'm glad you enjoyed West Side Story! I just love the play!!!

Becky - I'm so sorry that I missed your birthday! I hope you had a great day!!

Laura - I just have loved the skating stuff on FB! Tell Caili I think she's amazing!!! How's Liam doing at pitching, these days? Tell Greg, he's still in my prayers!

Lindsay - let me know how those cream biscuits turn out, if you do them! They sound wonderful!!!

Ellen - How are things going with Matthew home? Are you getting excited about your trip?

Aimee - Have you found a home for Rocky, yet? Is life slowing down for you at all?

I know I've missed some of you. Please know that I'm thinking about y'all and praying for you. I hope you all have a great day today!

Hi Everyone! Caili's recitals went well yesterday. She looked so pretty. I also got word from Greg that he passed Ranger School, so he is graduating Thursday. :cool1:

Lauren -- Congratulations to Andrew for playing so well! Good luck at the gym today.

The mice like chips. You have to check the bag to make sure there are no holes in them from the mice.
 That is so gross.

Kathy -- I'm so happy that Kyle is going to get to pitch again. You and Johnny must be thrilled. I know you were missing watching the games.

Just want to add wee some thing....you know how i refer to Matthew as " The Boy " well it is done in a loving way.....

Of course I knew that!

Ann -- I'm sorry for your loss.

Nancy and Marisa -- Congratulations again to Kady. I can't wait to see pictures. I'm sure she looked beautiful.

Sheryl -- I'm sorry Bob is having such a difficult week at work. Hopefully, he is able to relax a little with the good meals you make.

Sorry, Lindsay, I have never made cream biscuits.

Tonight is a skating night, so dinner will be quick. My mom gave me some leftover chicken from Saturday, so I might have that.

Ok, so I had this huge multi quote reply and then hit preview and got some message about exceeding a limit ....then DS hit my key board and my screen blanked out!!:scared1: So I am trying it again from memory.

Ellen, don't worry about catching up, it can be hard. Just jump back in and know we all have those days.

Sheryl, good luck with the aide. I wish Angelina well on hospital job. Thinking of you and Bob while he is going through the mess at work. But not to worry , "ham hocks and hugs" from oversees...:rotfl: I loved Vickie's line.

Kat, so glad to hear Kyle is playing again. I know how he loves it. But don't they love the crazy schedules. My DN joined two summer leagues, I dont know how they do it, but they love it.

Lauren, you go girl...how you have time to join a gym amazes me. I wish you all the success in the world with your goal!

Aimee... 20 people!!! :scared1: How you do all you do, what a woman!

Becky, blurry or not loved the food pic. Can I hire you to cook for me a week after the baby comes!!!??

Laura, I wish I could see Caili skating, but no facebook for me...I have this grace vision in my head of your sweet girl.

Janice, rest that wrist. Glad Minnie is a bit better.

Maria, I am so excited about your trip and I am not even the one going!!! I loved the benefit of unemployment comment regarding day trips. Someday maybe all of us can arrange a meet. Hugs to your DM and DMIL, prayers to you all. You are such a good friend telling me to take it easy so much. I will have you know I am having a lazy rainy day today. DS & I did not get out of bed till 8am...shhhhhhh, he has had about 5 nights of full sleep. :woohoo:

Nancy, your story about Kady requesting to have her pic taken in front of the statue warmed my heart. And yes , Marisa pics please!!!

Vickie, thanks for making me smile daily...good luck to your footie team. Dont worry I dont have you pictured as a wack with the "boy" locked in the basement!!:lmao:

Who am I forget, who?!?!?!

-----

Last night was a very sad night. I went to the wake with my brothers and my parents. So sad, so young. Makes you appreciate all those around you and their health. :grouphug:

My parents took 14 of us out to dinner after the wake. It was nice spending time with my brothers from Mass. & NH., to bad this brought us together for a random dinner.

WFD- grilled steaks with mushrooms and bearnaise, fries, and a veg of DH's choice.

! What kids! Every time I'm ready to throw them away, they do something like this and redeem themselves!

:lmao: I love this line, you taught them well!

Hi Everyone! Caili's recitals went well yesterday. She looked so pretty. I also got word from Greg that he passed Ranger School, so he is graduating Thursday. :cool1:
Great news, CONGRATS Greg!!!:cheer2:

Glynis, You're weekend sounds wonderful! I'm happy you were able to have a "date day" & a family day! Nice.

I can't believe you are getting 90degree weather today! Someone must have sent all of your cool air down here. It was in the 50's this morning, with highs in th 70's today. :confused3 Nice but unusual.

I like the sound of that carnival, especially the Mexican boxed meals! :goodvibes

:rotfl2: I'm so glad you won't be throwing the children away!!! :lmao

YEAH FOR GREG!!!!!:yay: WOOHOO!!!! :cool1::banana:

Laura, That is awesome! Tell him we are all so proud of him! :goodvibes

I love the wasy Vickie says things too! She makes me smile everyday! :) Just the description of your dinner has made me hungry already!:goodvibes

Here's some of the food pics I've neglected to post.

Ah, summer!

Caprese Salad & sliced cucumber

Cheese, olives and cannelini bean dip
IMG_1504.jpg

This is one I wish the picture would have come out a lot better. The glass tray really messed up the picture. Bacon wrapped scallops over wilted spinach, lamb chop over cannelini bean mash, and caprese salad with added vidalia onions. This was all so good.

Proscuitto & Mozzarella Paninni

Grilled Lemon Shrimp

Glynis -- I too am glad you won't be throwing the children away! Have fun tonight!

Sheryl -- I meant to wish Angelina luck with the job and you and Bob luck with the aide. That is such a pain...you were just adjusting to having her there.

Those pictures are great! Now I'm hungry...

Becky has all the pictures from the dance recitals yesterday. I forgot to bring my camera. :upsidedow

Here's some of the food pics I've neglected to post.

Ah, summer!

Caprese Salad & sliced cucumber

Cheese, olives and cannelini bean dip

This is one I wish the picture would have come out a lot better. The glass tray really messed up the picture. Bacon wrapped scallops over wilted spinach, lamb chop over cannelini bean mash, and caprese salad with added vidalia onions. This was all so good.

Proscuitto & Mozzarella Paninni

Grilled Lemon Shrimp

Now that food porn is just so wrong on so many levels :rotfl:...it all looks so heavenly!! I will take one of everything please!!!!! You girls on here really make me feel like a slacker with your creative gourmet meals.
