Potato Dauphinoise
Everyone has their favourite Potato Dauphinoise recipe....
My starting ingredients:
Preheat oven to 150 C.
Gently heat the cream, milk, thyme and garlic until barely simmering. Remove from heat and set aside so that the thyme and garlic flavours continue to infuse through the mixture.
In a lightly greased oven dish, layer the potatoes to fill one 'row'. Season with salt and pepper.
For cheese-lovers, you can sprinkle some grated cheese on a layer of potatoes.
Continue to build up the potato layers....
....and then pour the cream/milk mixture over the layers. (Remove the thyme and garlic from the mixture.)
If using cheese, sprinkle some cheese on the top.
Bake in the oven for about 1 - 1 1/4 hours.
I served the potatoes with scotch fillet steak....
....that I pan-fried to brown...
...and then finished the cooking in the oven with the potatoes.

- Cream, about 150 ml
- Milk, about 100 ml
- Thyme, 4 or 5 sprigs
- Garlic, 2 or 3 cloves
- Cheese (optional - not pictured)
- Salt and pepper to taste
