The What's For Dinner Thread - March '11 (recipe index in OP)

Potato Dauphinoise


Everyone has their favourite Potato Dauphinoise recipe....

My starting ingredients:

  • Potatoes, 4 - peeled and thinly sliced
  • Cream, about 150 ml
  • Milk, about 100 ml
  • Thyme, 4 or 5 sprigs
  • Garlic, 2 or 3 cloves
  • Cheese (optional - not pictured)
  • Salt and pepper to taste



Preheat oven to 150 C.


Gently heat the cream, milk, thyme and garlic until barely simmering. Remove from heat and set aside so that the thyme and garlic flavours continue to infuse through the mixture.

In a lightly greased oven dish, layer the potatoes to fill one 'row'. Season with salt and pepper.

For cheese-lovers, you can sprinkle some grated cheese on a layer of potatoes.

Continue to build up the potato layers....

....and then pour the cream/milk mixture over the layers. (Remove the thyme and garlic from the mixture.)

If using cheese, sprinkle some cheese on the top.

Bake in the oven for about 1 - 1 1/4 hours.

I am beat I only did my deep clean on the downstairs this weekend. I suppose I really should do the upstairs too:rolleyes1, but my library books were calling to me to come and play. So yesterday evening I played.;)

Last nights dinner was nothing fancy just sauted chicken breasts,rice and salad.

Kat- Thanks for you kind words. I did feel good in my cool new dress and 4.5 inch spikes. Boy did my feet hurt though! I can only dance in shoes or with nylons and my shoes had that non skid sole. Erica had brought a pair of ped for me but my darn dress was too long when I took my shoes off. Buddy got off easy, he only had to dance slow dances with me or I would have fallen down :lmao:

He did try to polka with Welby :eek::rotfl2: He is a fabulous dancer and was probably dancing before he could walk. Now he plans to chat with Welby's dad.............a Polish girl who cannot polka???????? Hmmmmm. First she stood on his feet and tehn she told him to stop and just let her lead :lmao::lmao:

Our weekend again, went way to fast. As we were driving home last night, Doug remarked that it seemed like we just left the house to go to Lincoln, and here we were on our way home already. The game was fun, albeit the drizzle and cool temps. WE WON!!! So that makes it all alright. After the game we went to Lone Star for a steak and then went to the new Lion King 3D show. WONDERFUL!!!! You all have to go.

We don't have any home games for the next 2 weeks, so I really need to buckle down and get caught up. I feel I am sooooooo behind and I hate that feeling.

Welcome!

I'm Marilyn, single but have lots of children, none of whom I had. They are all nieces, nephews and 3 godsons. I live with my DM.

Tried to post Friday night but my phone was being a pain and I didn't have the energy to get up off the couch to go to my computer.

Went to my godsons football game Friday and it was :scared1: the worst part of it being the behavior of our players. One boy came off the field and was so mad he threw his helmet breaking something on it, pieces went flying!

Then two of the boys got into a fight on the sidelines which was mainly broken up by the other players because none of the refs or coaches were paying attention. The game was stopped at the time due to an injury. They ended up losing 35-7.

Ran errands, worked on sewing projects and read all weekend. Really need to get it together and get my downstairs done, it's beginning to look like a hoarder house. :rolleyes1 I have enough fabric to make a hundred quilts. And enough clothing to clothe a bunch of peoples. :rotfl: What with the piles for Goodwill, yard sale, repairs and what needs to be put away there isn't much in the closet right now.

My goal for tonight is the Goodwill stuff as that is the easiest pile to deal with.

Not sure about dinner tonight, didn't take anything out and didn't get to the store to get any chicken thighs. May just make the pulled chicken with some chicken tender strips I have in the freezer that need to be used.

Ellen - Well, our basement is about 2/3 clean, now. I'm not counting the girl's bedrooms. That's their responsibility! I'm talking about the family room down there. We still need to cull our bookshelf, move the furniture and tv around a bit, and put up the new storage shelfs that we bought. It felt really good, though. I was able to fill the trunk of the van up with stuff for Goodwill. Usually, I just let it pile up, but I was on a roll, so I had the kids take it straight out to the car, and we drove immediately to Goodwill! Hooray!!! As for the fooseball table, well, it's still around. The kids got Alan on their side, and there was no talking them down. Alan is positive he'll be able to fix it. I told him he's got until Halloween, and if it's not done by then, away it goes. Maybe having a deadline will help him either get it done, or not feel guilty if it doesn't!

Katie and I went to the concert Saturday night, and I have to tell you, it was AMAZING!!! It was our local symphony orchestra with a guest artist. Her name is Jenny Oakes Baker, and she is a concert violinist. She is tremendous!!! She has cut several albums, and her concert was from her latest album. It was all arrangements of Disney songs. If you like orchestral arrangements, at all, you need to check her out! She was amazing! She talked to the audience members after the concert, and Katie was able to talk to her for a while about her own violin playing. It really made a huge impact on Katie! To have a concert violinist encourage her, really made her day!

NOTE: Bear in mind that our cost of living is running about 30 - 40% higher than yours; and that minimum wage here is around $15 per hour.
Admission fee was about $20 for adults and $11 for kids. Most of the restaurant plates ranged from $8 - $12.
The samples that were at the stands were either free or charged at $2 or $4. The cupcakes were cut into slices and shared round for free....otherwise about $4 each (or 3 for $10). Macaroons were 3 for $10.
There was a LOT of alcohol freely handed out; usually in the portion sizes like that of the ginger wine or mineral water shots. Otherwise I think they were charging about $10 or $12 for cocktails. I know that Rum laced Mai Tai was $8.

I worked about half a day today and then headed home to rest. I'm going to cook tonight and see how that goes! I'm trying a new recipe (of course) - sour cream chicken enchiladas. It's DH's fave enchilada and I've tried several recipes so I'm hoping this one is a keeper.

WFD? I have a Sesame Chuck Steak marinating and I'll sautee some spinach for a veggie.

I wondered what those potatoes were PIO. We call them Scalloped Potatoes in my house.

I don't follow sports, but it sounds like everyone's teams did well.

Seems we have lots of musical folks here! I love the symphony, but haven't been in ages.

Dinner tonight is pizza. Donny and Anna will bring her family here before they all take off tomorrow. I am trying to reach my neighbor up the street. Her parents are here and I would like to make dinner tomorrow night before they leave on Wednesday. Jeannie missed the wedding. She had an inner ear infection that triggered vertigo. :sick: SHe is better today but the weekend was terrible.
 
Jen - The Empanadas sound great! I've had great success with the Neely's recipes (LOVE their Chicken Fried Steak!), so I'm sure they were great!

Then I just stuffed the zucchini boats with the filling, topped with a bit more parmesan and then put it all the in the fridge until tonight.

PIO- Think the potatoes recipe could be done with a blue cheese/shredded cheese mix? We had something similar with breadfruit in Martinique and I'm trying to find a base to jump from to try to recreate it.

Well, we've had an interesting time of late. I had work ask why I was posting to a forum when I was supposed to be on a jobsite. As this is a public forum, I'm guessing they meant here. So, I decided to just drop the DIS for awhile. (Can't help I'm stuck somewhere at lunch, I'm going to post dang it!) Since I'm not friends with anyone from work on Facebook, I doubt it's there-I've locked down most everything to friends only.

But we're cleaning this way too. Trying to unload the rest of the store stuff from New Orleans and Ebaying alot of the collectibles stuff. There's a reason but I can't share yet. (Although I've bit all my nails to the quick dying to tell).... but there may be a travel blog somewhere in the future...;)

Anyways, tonight is burgers and fries and coleslaw.... not too thrilling, I know.

But it looks like grilled sweet lemon poundcake with carmelized pineapple for dessert. That should be fun!
 
I didn't realize I was so behind on this thread, so forgive me for being a little lost. We've been completely stretched between work, school and activities. There are some days I leave the house at 7:30 AM and come back at 8:30 PM. For all I know, I already told you that. Last night, I went to bed at 8:30. Crazy. Today Caili had skating and yoga. Yoga went long, so dinner was a very rushed sesame noodles and broccoli.

Nancy -- I can't believe I missed wedding weekend. I will have to read back, but from snippets, it seemed like everything went well. I have to question...4.5" heels???? Oh my, I would end up with a sprained ankle, a fractured head or worse.

I'll have to get caught up more later this week. The kids have a day off (already!) on Wednesday, so I might have some computer time then. We'll see. I am working from home.

Tomorrow Caili finds out what part she has in the Nutcracker. I am just praying she is not a soldier.

Also, we have raccoons living in our crawl space. :headache:

This is me after making the sour cream enchiladas ---> :worship: I'll blog them tomorrow, prob, and post the recipe. I think DH finally stopped after 7 of them... he's gonna be sicker than a dog later but he loved them so much.
 
Most of y'all already probably have a standby taco seasoning mix but I'm sharing anyways. This is the recipe I've been using awhille so I finally took pics and blogged it tonight.

One Minute Taco Seasoning
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper

In a small bowl, mix together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper. Store in an airtight container.

*This will make about 3 tablespoons. Use 2-3 tablespoons seasoning mix per 1 pound browned ground beef/turkey, plus 1/2 - 2/3 cup water. Just like you would with a seasoning packet.

When I moved to Texas last year, I had hair past my shoulders. It's now about two inches long at its longest. :lmao:

I've thought about growing it out, but I am TERRIFIED of that "growing out" period.

Tonight's dinner was a success! I made creamy baked chicken taquitos. They are from the Our Best Bites blog. Very easy to make, and tasted yummy! Even Timothy ate 3 bites. Considering the fact that he doesn't eat, I'll take it as a win!
