The What's For Dinner Thread - March '11 (recipe index in OP)

Good Morning! Quick fly by...I haven't been a great friend, I am sorry. We are having a patio poured this week and it really has me a little nutty having all these guys working. That and falling on my **** and being sore!

I have chicken marinating in Montreal and I was going to make the garlic brown sugar chicken but I may turn it into that cajun pasta that Kat just posted. We had rice last night. That or go eat fair food! Not sure if we are going to the fair but they are having a school bus demolition derby that sounds like fun.

Andrew is starting football today too so I am not sure how he is going to feel later.

Well, off to the gym. I am sore frommy fall but have to push myself. My eating has been a bit off lately.

School starts next Tuesday, and, let me tell you, I CAN'T WAIT!!! Katie is about to drive me nuts!

We did clothes shopping with Mary yesterday, and it was really fun! She's always so grateful for some one on one time! I'm taking Jacob out today, but we're waiting until after lunch so I can drop the girls off at a pool party.

Dinner last night ended up being make your own pizzas. Not really good, but the kids liked them. Tonight will be quesadillas, Mexican rice and corn on the cob.

Ellen- Glad Doug had fun with you at zumba! Is eggplant lasagna the same as eggplant parm?

No not really. Here is my recipe for my Eggplant lasagna using the eggplant as the noodle layers. I served it to someone who proclaimed she hated eggplant and zucchini. She had seconds! This is my own recipe based on the idea of using the veggies as noodles


Eggplant Lazagna

Slice one medium eggplant ito 1/2 inch slices - I don't peel mine
Slice one smallish zucchini lengthwise into thin slices to resemble lasagna noodles

Brown 8 ounces ground white meat chicken or turkey
Add 1/4 cup chopped onion
Add 1 clove garlic, minced
Cook together until onion is transparent over medium heat

Combine in a small bowl:
1 cup cottage cheese
2 tablespoons grated parmesan cheese
1 egg
1 tablespoon parsley
1 tsp oregano

Spray 9x13 pan with nonstick cooking spray
Spread 1 cup of spaghetti sauce in pan
Place eggplant in pan for first layer I use at least 1/2 of the eggplant cutting it to cover the bottom of the baking dish
Top with meat mixture
Add the cottage cheese mixture
Lay the zucchini over the top for next layer as you would lasana noodles
Add another cup of Spaghetti sauce over the zucchini
Sprinkle with 1/2 cup of chopped green pepper and mushrooms if desired
Add the 1 cup shredded mozzerella over the top
Sprinkle with a dusting of Parmesan cheese

Bake in 375 degree oven for 30-45 nminutes until cheese is browned and bubbly
Let sit 10 minutes before cutting

Makes 6 servings

246 calories per serving

Enjoy - it is totally addicting.

Kat and Sheryl - Congrats on your bookings at F&W. Something to consider. Aside from the $$$, Disney have worked out that most of us Disers like to think about eating our meals at least 180 days in advance. In true Disney service and style, they have most graciously allowed us the pleasure of being able to wake up at an ungodly hour so that we can go on line or ring up to book the Table Service restaurant of our choice at the 180 day advance mark. Such is the demand for this pleasure that it would seem that many of us have now taken to camping in front of our PCs or phones so that we can be the first transaction or call taken by the CMs in the rush to ensure that we get the restaurant and time of our choice.

Assuming that most Disers make the 180 day mark, this would mean that by the time we get to the restaurant, we would have spent at least the equivalent of
· 4,320 hours; or
· 259,200 minutes; or
· 15,522,000 seconds
salivating over a meal that we might not feel like eating by the time we get to the parks.

I don't know about you but I'm pretty sure that my tastebuds would be sick of tasting the meal for this amount of time.

These bud-tingling timeframes of course do not include any of the time that we may have spent in advance determining which menu and restaurant we would like to eat at and so the actual time it takes us to chew the fat of our meal may actually be longer!

Despite this, I would trade places with you ANYTIME during those 15,522,000 seconds to be heading to F&W at the World. Enjoy!

If we had not done these events before & known that most are really excellent, I wouldn't do it either. Kat & I have also gained a lot of foodie friends going to F&W. So getting into the events with some of them, is just a blast! Plus we get to see some of our WFD pals! It's really a great fun time!

If only Disney would make it easier to spend all of that money! :confused3

Marilyn- My daughter just turned 11. She knows how to swim and loves being in the water, she just stinks at it. Considering where we live I'd like her to have stronger skills though. She's taken lessons at the local gym for a few years, but the teachers always change and they are never consistent. They touch on each type of stroke, but never stuck with one long enough to learn it.

Swim team might still be a good idea. At least she would get some consistency then. My oldest DN, who is 11 too, for years struggled to learn the butterfly, hated it, but suddenly this year it just clicked and she took off with it. It is now her best stroke. Sometimes it just takes a little while for the coordination to connect.

I didn't get home until late last night so today I am dragging. Not sure what's for dinner, may just use chicken strips to make Chicken Parm and have it with some pasta.
 
Okay help!!! Does anyone have a recipe for collards besides the usual cooking method. In my delivery I have collards and would like to try something new.


Tonight dinner is going to be lettuce wraps with ground beef.


Hopefully my financials will be in better shape next year and maybe we can meet up for F&W. If A's school calendar also cooperates too :rolleyes1

I am now going to vent about our new principal. Please feel free to skip, if you want!

We got a new principal last year. She was really kind of a "meh" principal, and we all hoped that it was just first year jitters. However, things don't look good. In April, she asked that we get in our teacher requests for next year. Ok, fine. We all did. At the beginning of summer we were told that the class lists for this year would be available the second week of August. The day before they were to be released we received an automated phone call from the principal that class lists would not be released for another week. By now, my kids are dying, wanting to know who their teachers will be. This last Monday, I called the school to find out when the lists would be available. I was told "sometime this week." I'm friendly with the secretaries, but there was a definite feeling on the phone that they were not able to speak freely. There was also some exasperation on their part. Well, today, I ran into a neighbor who had called today to ask about the lists and was told that the earliest the lists would be available is Friday (school starts next Tuesday)! I couldn't believe it. Then she told me that she had contacted one of the teachers at the school, and he told her that the hang up is the hiring of one teacher. At this point, every 4th grade teacher has 38 students in his/her class. Unbelievable! When they got the class lists, they complained to the principal that that was just not going to work! So, she is starting now, at the end of summer, to hire another teacher!

I'm beyond livid! How could this principal think that #1 it was ok to put 38 students in a class, and #2 how could she think that any teacher she hires this week is going to be prepared to start school on Tuesday!?! And of course, the twins are in 4th grade, so I'm worried that the teacher I requested will not be the teacher that they get, but that they will get the new teacher. Can we say incompetent!?!

I'm really praying that things go well, and that my kids get the teacher that I want them to have!

Thanks for listening! I know that you guys will understand and help talk me down from this anger!
 
Glynis Is this principal the one we just got rid of? They sound soo alike. We think that he was taking money from the PTO. I would lodge a complaint with the district.

We don't have Trader Joe's in Texas and I'm sad about it. Because I don't love any store like I love TJ's. :lovestruc

My lovely family gifted me with some "pamper yourself" gifts from Bath & Body Works (my fav). But we're not doing my big birthday celebration until this weekend. I'm just too tired still.

Tomorrow, I'm having the root canal on my tooth. Happy birthday to me. :laughing:

Tonight's dinner was tostadas...one of my favorite meals.

Yikes on the root canal! :scared1: How long did it take you when you were at the dentist? I'm just trying to figure out if my whole afternoon is shot tomorrow or not. :laughing: Did you have a lot of pain afterwards?

No special recipe on the tostadas, except we add my refried beans on the bottom, so they're bean and meat tostadas. :lovestruc I love easy dinners.

Tomorrow, I'm making Aimee's honey chicken lime enchiladas. I can't wait to try them!

Janice - I don't have a collard recipe; but whenever I'm stuck, I make a chinese style soup - a broth and then blanch the veg in the soup before serving.

Jen - I've had 2 root canals. In both cases, the tooth was dead and the procedure was pretty much painless. I cannot, of course, speak for my nerves or bahookie....:sad2:....the former was highly strung and the latter was tired by the end. Good luck with it and yes, Happy Birthday! :rolleyes:
How long does root canal work take in the US? For us here, we need 2 or 3 visits. The first one to clean everything out, the second to refresh the dressing and the third to fill it all back in again.

We have a man coming over on Friday morning to finally install our wood burning stove!!! I'm really excited!!! Once that's done, Alan can finish the whole project and I'll finally get my bannister back!!! Then, we need to do some furniture shopping to get stuff to go around the stove (think easy chairs, I think.).

Another crazy day but it's one big project down so I can move to the next one. I just want school to start already so I can put summer behind me!

Doubt there will be any cooking going on this week. I barely have time to take a shower much less grocery shop or cook! I miss it - it's my therapy.

Just as an aside... tonight, of course in the middle of my big presentation, I started to get really intense abdominal pain - same pain that I'm, sadly, really familiar with. I put on a smile and did the entire night but really was in bad shape by the end. I've taken 3 Vicodin and it has taken the edge off but is still not "normal." I'm pretty anxious abt it, honestly, bc I've had NO ab pain since my resection in Feb 2010. I knew things were active again but hoped we'd stop it before this.

I suppose it could be a fluke but it's probably not. I'll see how I feel in the morning and if it persists, I'm calling the GI tomorrow.

And work be damned, if it hurts this bad tomorrow, I'm not uncurling from the fetal position.
