That's the hardest thing to do! I have been there. Letting Katie go to the mall, and then the movies with her friends, just about killed me! However, she did just fine, remembered all the "rules", and survived just fine! Hang in there, mom!!!

Ellen – Welcome back! I’ve been thinking about you and admiring what you are doing. I am proud to call you my friend.

Glynis – Happy packing and have fun tonight!

Vickie – I’m afraid this is just the beginning my sweet friend. The first time he drives off on his own is the big one. I’m sure he will be fine, we are all here for you.:grouphug:

We are the same way. My sister eats them like you would an apple. Just salts them up and bites into it. Funny thing is her oldest hates "raw" tomatoes, not sure what's wrong with that kid. :sad2:

It sounds like that kid needs an intervention. :scared1:

No hazing here! Just a bunch of ladies who enjoy chatting and occasionally swapping a recipe!!!

Yes, I have a teenager. At this point, I think I'd be happy to swap her with a boy! We are dealing with the hormones at "this time of the month." At least the surly, uncooperative stage will be over before we hit Disneyland!

Alan just left with all 5 kids. He's taking them to a local waterpark so I can pack for both trips. I'm not looking forward to the packing, but I'm loving the peace and quiet! I thought I was going to have to keep Timothy, but they decided to take him! Hooray!!!

Dinner will be something fast and easy! We have a rodeo to go to tonight!!!

When I think of myself as a teenage girl, I'm often thankful for my son. :lmao:

I think Disney cures all bad attitudes, though.

These sound good. popcorn::

Well, we're back from the orthodontist. Poor J had to have teeth impressions today. :scared1: 2 weeks and he'll get his braces on.

It's 3:00 in the afternoon here. I think it's time for a nap. :teeth:

Hey all! I had every intention of getting on here today and catching up but I woke at 5 to take A to the airport and T was a terror today and I just crashed.

We loved Vero Beach and cannot wait to go back. For all of you on FB, I am sure you saw the pics I posted. I have more in a disposable camera because some little one threw sand in my real one and it is now broken...it was on its way out so this just speeds up the process of getting a new one!

Glynis, Becky and Laura, have wonderful trips!

All the cooking pics look awesome!

Ellen, nice to see you back!

Nancy, I missed the Otto story. I hope all is OK.

Vickie, I hope you will be OK with the Boy gone. I have those moments everytime Andrew boards a plane. I actually sit at the computer and watch the plane en route!

I have been cooking since I am home. yesterday was shrimp, beef and corn salsa. Tonight is pork kabobs (looking forward to this...I used a Filipino marinade packet that my Filipino neighbor uses and I will use her baste recipe too...Ketchup and olive oil!), fried rice and a big salad.

Here are the recipes that I have used that are AWESOME and lower fat:

Bangin Good Shrimp:

Beef Barbacoa:

Corn Salsa:

I served the beef and shrimp over rice. Yum!

I guess I should introduce myself. I am Lauren. Originally from NJ but just moved to the Pittsburgh area. I have 3 boys: 2 years, 13 years and 40 years (hubs)...they all drive me nuts! 2 cats, a dog and a fish. Possibly adding another dog (my neice who is in Vet school has been fostering dogs and has won my heart with current foster...am I nuts?) I was a frequent poster here but with the 2 year old and my recent thyroidectomy, I have fallen off the radar a bit. I miss my WFDer's...they are like sisters to me!

Have a great night all! I will try and be back tomorrow but if not, dinner tomorrow will be either Janice's sausage and potatoes or pasta bolognese or easy chicken cordon blue.

Well the boy is home but not without incident.
They missed a bus so decided to walk to another stop, the road they walked is really busy and has a very narrow pavement ( sidewalk ) so I am not best pleased.

They got home ok but I wish the boy had called and more so I wish I had insisted on picking him up.

oh well, lesson learned...and leash well and truly re - tightened.

Lauren - Welcome back!!! I've MISSED you!!!!!!!! I've got to go check out those recipes.:goodvibes

Vickie - Glad to hear he is home and safe.

Princess- Buddy move heavy equipment for a local construction company. He needs to get in and out before the crews arrive so Summer time is early rising time for us. He woke me at 3:30 this morning:scared1: He would get up and leave with me in bed but I like to be up with him so he makes sure coffee is ready and I stumble in with my "bright and sprightly" self every day :thumbsup2

Broccoli souffle????? Recipe please???????'

Heavenly days, I went to sleep at 4am the last few nights - and you were getting up!

We're about an hour and a half south of you in the hill country. We'll be in your area this weekend though...well, Grapevine. We're going to do a weekend at Great Wolf Lodge to escape this heat! It's insane, isn't it!

I was at Great Wolf (for the first time) about 2 weeks ago - I seriously could have moved in! And I HATE water parks! You'll have a blast.

We loved Vero Beach and cannot wait to go back.

We went a few years ago and loved it, too! Glad y'all had a great trip!

This week is VBS and I'm already dragging. I'm having some health issues that are painful (esp when walking - um, hello? that's what I do this week!) so I'm getting as much sleep as I can.

I napped later than I thought I would so I just picked up dinner tonight.

Awesome! Can I pick your brain since we've never been?

How late does the water park/pool stay open at night? Did you eat at any of the restaurants? Our package came with a buffet dinner, but other than that, we have no idea what we'll be eating.

Any other tips would be greatly appreciated!

Y'all need to try these. Soon.

Honey Lime Enchiladas
6 tablespoons honey
5 tablespoons lime juice (1 large lime)
1 tablespoon chili powder
1/2 teaspoon garlic powder
1 pound chicken, cooked and shredded (I used rotisserie chicken)
8-10 flour tortillas
1 pound monterey jack cheese, shredded
16 ounces green enchilada sauce
1/2 cup evaporated milk

Mix the first four ingredients and toss with shredded chicken. Let it marinate for at least 30 minutes.

Pour about 1/2 cup enchilada sauce on the bottom of a 9x13 baking pan.

Fill flour tortillas with chicken and shredded cheese, saving about 1 cup of cheese to sprinkle on top of enchiladas.

Mix the remaining enchilada sauce with the cream. Pour sauce on top of the enchiladas and sprinkle with cheese. Bake at 350 degrees for 30 minutes until brown and crispy on top.

Outside was open 10am-7pm and inside was open 9am-9pm. We stayed two nights so one night, we finished at the waterpark in the afternoon, changed, and went to Grapevine Mills and had dinner at the Rainforest Cafe. It's only 2 miles up the road. Then we saw a movie at the theater there.

The second night, they got tired by the afternoon so we went out to Chili's for dinner and then came back and wandered the hotel and rented a PPV move in our suite.

I stayed outside 99% of the time even with the heat. the inside is humid and 84 degrees so I just sat and sweat the whole time. Inside, there was a breeze and it felt great. I just laid on a chair near the zero entry pool and when I got hot, I wandered into a fountain thing, got wet, and laid back down.

I found the whole hotel a lot like a cruise ship. The downstairs level has openings to both pool areas plus a big arcade, sweet shop, pizza hut fast food spot, kids spa, glitter tattoo stand, build a bear stand, hair extension stand, and teen club. All over that hotel is that magicquest game that is pricey but seemed to be really common. Be prepared for your kids to ask to play it  I think they shut the pool down so early so that you'll come inside and spend money at those spots to keep them occupied

There is a bar and grill, but we didn't stop by there, and the main restaurant in the lobby. We ate the breakfast buffet one morning and it was really good and not that expensive. Your dinner is there I'm sure since it's a buffet then, too.

There is also an A&W snack bar inside the indoor waterpark and a snackbar outside (with chicken fingers and such). We didn't eat any of those places.

We did lots of snacking at the sweet shop because the ice cream and treats were really good... and they are open until 11.

Oh - and most importantly - there is a Starbucks. It's also open late and has refills on anything but Fraps! Seriously, I got a Trenta Iced Coffee and refills if I kept the same cup were $1!! Refills on Talls and Grandes were 50cents! The kids drank lots of passionfruit lemonades since they were so cheap to refill.

I brought that to the pool with me.

The rooms all have microwaves and fridges so we brought some snacks.

I'm trying to think what else... I was really impressed with the place. Tons of staff, lots of lifeguards, I just set the kids free and had them check in every once in awhile. They cleaned up used towels all the time and there were plenty of chairs outside and inside.

You can check in and start using the pool at 1pm on your first day so bring some changes of clothes with you. They will call your cell when your room is ready, if it's not at 1pm. The indoor area has a big changing room inside the restrooms and lockers for rent (or someone can watch the bags).

They have other activities going on, too, like a bedtime story and bingo but I had 11 and 12 year olds with me who thought that was all lame

Really, Grapevine Mills Mall is right down the road so you could easily hop there for restaurants, movies, or even visit LegoLand that just opened. the kids I had would spend hours in the waterpark but after awhile, you need a break to do something else. There is also a lot of fast food near the mall, like ChickFilA, and downtown Grapevine is super cute to visit with more restaurants nearby.

Let me know if you have any other questions!!

Thanks for all of the suggestions, you guys. I am really leaning toward and B&N card with a book date and/or the Dr. Suess books. Thanks for all of the tips!

I'm really sorry if I came across harsh towards electronics. I have a rule for myself that I don't post anything on the internet until after I've had my coffee, but I was afraid I was going to forget to ask for help and went ahead and posted, lol. I just feel really bad for my nephew because he really wants attention and he doesn't get it. When he's "Mommy, mommy, mommy, mommy, etc" she hands him the Touch and tells him to "go over there and play" rather than engage him. Make sense? When he comes to my house, the first thing he does is crawl in my lap. I love on him, tickle him, "wrestle-play" with him, and don't put him off. Don't get me wrong, he can be quite the handful, but I just want to be able to pull him up in my lap and have an age-appropriate book ready to read to and with him. I just had no idea where to start for his age.

Again, thanks again!

Today is Scott's birthday so I am making him some of his favorite tonight: Original Kitten Chicken, (remember that one, lol? it's Parmesan Ritz chicken) macaroni and cheese, and green peas. Mmm mmm mmm!

I'm off to the salon in a little while to get my hair worked on so it's going to be a busy day.

Want to see some pics?

Sorry for the crazy sizes!

WOW! I'm learning so much about you gals from the newby. I guess we never really got round to the formal introductions when I jumped on this thread, did we?

Let's just say that despite my post count, I'm really a shy, retiring type and haven't yet gotten round to sharing my name with too many people on the Dis.

But if anyone looks at my PTR/TRs, you'll find out that I'm married with a DS about to turn 11 with 2 cats. I work part-time 3 days a week for money $; and then work as a SAHM (unpaid) for the other 4 days.

We love to travel and have been treking across the Pacific pond a fair bit in the last 8 years because DH job is based in Silicon Valley. We choose to live in Oz and DH travels about 3 or 4 times a year. We have made the most of the opportunity to travel around the US.

Hope everyone is well!

Lindsay - Gorgeous pictures of Chloe! I'm sure you'll work out a great gift for your nephew.

Princess Don't worry about names. We are all the shy retiring types:rolleyes1

Lindsay I never felt you were harsh. I understand about the electronics part. I struggle with Mr A sometimes and he is 16. We live in a very different world than when we were small. Taking him to the book store is a great idea that way he will experience the wonderful world of books and have a respect for them. I also think the library teaches not only about books but how to respect things that are not ours.

As usual the morning has gotten away from me. I will be back after work is done with me.;)
