Kat - 100 days to F&W? I'm insanely jealous. I was there last year and wish I was going again this year. Sadly, that little pond of a Pacific Ocean means that it takes 22 hours door to door for me to get there. Enough to make me think at least once about hopping on that plane.

Janice- we also were hit bad our downtown has literally been all roped off. Hope college has lost alot of bigggg trees. Cemetary is a mess our town is a mess needs alot of clean up. Bryan was at work from 9am-430 pm with no power that has never happened before and hes been there 23 or 24 years.

Morning, everyone! We're up and moving early today. Jacob and I are heading to the doctor in about an hour and a half. I need a new iron prescription, and Jacob is having a hard time with allergies this summer. He usually gets them bad in the spring and part of summer, but this year it's so bad, the usual OTC meds aren't touching them. Poor little guy just cannot breathe, at all! It's awful to listen to him try to breathe through his nose. Hopefully, we can get him all sorted out.

After that, it's library day at the kid's schools. We'll hit those libraries and come home for some laundry and cleaning. Well, I guess I'll be doing those things. I'm sure the kids will find some other things that "urgently" need to be done.

At 4:00, my assistant den leader and I are taking our Webelos den to tour the local television and radio station. It ought to be a lot of fun! After that, it's dinner time. I was going to make mom's meat sauce, but it has to simmer for 2 hours, and I don't think I'll have that kind of time tonight. Guess I'll go back to the drawing board and see what else I can come up with.
 
Glynis, congratulations to Alan on both being accepted into the masters program, and on his pay raise! Such great news.

Nancy, that salmon sounds delicious! I would do exactly what you are planning with the leftovers--salmon on a salad. Yum!

Janice, I saw pictures of some of the storm damage out your way. Scary!

Kathy, do you go to Food and Wine every year? I would like to get back there for that one of these years. No Disney in our plans this year though.

John and I went to Montreal for the weekend. What a beautiful city! I would definitely like to go back for a longer visit. Traveling meant no cooking of course. My parents were kind enough to put some fish and vegetables in my fridge for me to cook when we got home Sunday evening, but we were too fried to eat so I saved everything for last night. I made grilled swordfish, grilled squash, vidalia onion, and roasted poblano quesadillas with spicy crema and (jarred) corn relish. The mango-pineapple salsa was another contribution from my Mom on Sunday. They were really good!

WFD: I have lots of vegetables to use up from last week's CSA box, so the tentative plan is for a summer squash quiche like thing with roasted beets and some romano beans.

Yesterday was a wild morning. If you saw in the news we had another storm blow through. This is the year of storms. We have once again made it through thank you God :worship: A lot of trees both whole trees and large limbs are down in the area. My maple only lost a few clusters of leafs and a few branches.

The humidity is coming down for a few days so that will be a good thing. I might actually feel like doing something around the house.:rolleyes1 maybe even cook. Thank goodness for leftovers

Princess - I can’t blame you, 22 hours would make me think twice as well. We leave NOLA and two hours later we’re in our favorite place!:goodvibes

Lauri – I’m so excited y’all will be joining us this year, we’re gonna have a ball!!!!

Glynis – I hope Jacob can get some relief, Kyle suffers terribly so I know how miserable your little guy is.:hug:

Becky – This will be our fourth consecutive F&W trip. It is the reason we decided to purchase DVC, we LOVE F&W time and being at BWV makes it so convenient! It’s now become a time to get together with so many of our DIS friends annually! Montreal sounds lovely, y’all really go to some fantastic places!

Good morning!

Been at work for the last 2 days. I don't work Mondays and Thursdays (nor at the weekends). I'm usually pretty tired by the time Wednesday night comes round. Thank goodness for dinner at Mum's.

Hope everyone is doing okay too.

Dinners are kind of boring here. Last night was smoked sausage cheesy potatoes and grapes.

I think tonight will be something with eggs. I have lots of eggs to use up. I am in a cooking rut:confused3
 
stopping in quick! I am taking Dan for shoulder surgery today. Erica is just back to work from her vacation so it is better that she stays there. She works from home so he will get spoiled once back.

Dinner was steamed clams with a cucumber and onion salad for Buddy and a big salad with a lot of my own cucumbers with a ham steak for me.Too hot to even think about food!
 
Hi all, dinner last night was scrambled eggs. Nothing fancy here!

I'm leaving for a day and a half with Alan, and we're leaving Katie in charge. I'm a bit nervous, but I think she can do it. If she gets into trouble, my SIL will come over (she lives like 30 seconds away), and help out. If you could keep a prayer in your hearts that all will go well while we're away, I'd be grateful! I really would like to come home to all 5 kids and a house intact!

I already fixed dinner for the kids: french dip sandwiches. They just need to heat the meat up tonight.

Alan and I will be going out to eat somewhere!

Dinner last night was roasted beets, braised romano beans, and a summer squash quiche. I forgot to take a picture. It was good but nothing earth shattering.

I think tonight I am making grilled pizza.
 
dinner turned out to be a good idea plus it tasted really good.

I chopped up a couple of pieces bacon sauteed with some onion. I chopped up a couple of small potatoes and added that to the mix. I cooked that until the bacon was crisp the added eggs mixed with some half and half. I almost forgot I sliced up a small zucchini and threw that it as well as some cheddar.

It was kind of a mixed skillet but tasty and it got rid of some small odds and end from my frig.:thumbsup2

Our boy went for his 3 months check up already!!! (on Monday) He did very well with his vaccinations, no fever, no crankiness! He's 12 lbs 6 oz & 24 inches! :lovestruc

I had a epidural neck injection today. Praying that it helps as much as it did the last time. I going to follow up with the low back in a 1 wk &1/2, like I did last time. Also checked to make sure I could get them again in early Oct. before F&W. I can, so that's good.

We had take-out tonight. On Monday Bob brought home fresh caught redfish "on the half-shell" that I grilled with butter, garlic, lemon & lemon thyme. It was delicious. (half-shell is what we call it when the fish has the head & center bones removed but is cut in half with the skin & scales left on. great for cooking on the grill.) Yesterday I made a buttermilk panna cotta with stewed blueberries. Easy & yummy. I'll try to post the recipe tomorrow. Our aide was here & just left, so I really need to get to sleep. Nite y'all!

I did end up grilling pizza last night. It was good and I forgot to take a picture again! I am getting lazy. ;)

Here's the recipe I promised.

Buttermilk Panna Cotta with Stewed Berries
A simple yet indulgent dessert!
Servings 6

Ingredients
PANNA COTTA
2 cups heavy cream
1/2 cup sugar
2 packets unflavored gelatin
3 and 1/2 cups buttermilk

STEWED BERRIES
1/2 cup light corn syrup
1 vanilla bean, split lengthwise
1 teaspoon freshly grated lemon zest
1 cup halved strawberries
1 cup blueberries
1 cup blackberries

Preparation: PANNA COTTA
Combine cream and sugar in a heavy-bottomed saucepan.
Heat over moderate heat, stirring often until sugar dissolves. Meanwhile, sprinkle gelatin into 1/4 cup of cool water in a small bowl and allow to swell and soften.
Remove pot from heat and stir in gelatin.
Let mixture cool for 15-20 minutes before adding buttermilk.
Divide mixture evenly between 6 8-oz ramekins.
Refrigerate uncovered until set, around 3-4 hours.

STEWED BERRIES
Put corn syrup, vanilla bean and lemon zest in a saucepan and bring to boil over medium heat. Remove pan from heat and let syrup cool for 2-3 minutes. Add berries and let sit to stew in the syrup.
Top each panna cotta serving with a spoonful of stewed berries.

Recipe from "My New Orleans - The Cookbook" by Chef John Besh

My Notes: Cut recipe in half, it filled six 4 oz. ramekins. I found the panna cotta mixture a bit too sour, I added a little vanilla & about a 1/4 more sugar.

Kat, I don't have Jude on Fridays, but just let me know another day that you're off, maybe you could come by to see him. ( I haven't attempted running errands or lunch out with him on my own, just yet.) Maybe soon though, he is getting much better sleeping at night & going down for naps!

Good morning all!

Tonight is going to be crazy. We have to get the lawn mowed tonight when I get home. Today is only in the low 80's then tomorrow it starts climbing again. God I love summer. I so much rather be warm than cold. Humidity is not my friend though.

Dinner will be on the fly. Possibly takeout. Tomorrow we are going to see the last Harry Potter movie. A is soo excited.
