The What's For Dinner Thread - March '11 (recipe index in OP)

Sheryl ~ I did not mean to be so harsh. I hope I didn't offend you. I know you have to do what you are told to do. Afterall we are just Grandma's - we don't know everything. ;) But we are both Mother's and it just really hurts to hear them cry. We all have different attitudes to this for sure. I never ever let my children cry - all three of them, and they were sleeping in their beds way before they were 10. So you really need to do what your heart says. He will grow up just fine. Love you sweetie!!

Nan ~ My prayers and good thoughts are with Gail today and this weekend. Darn change just sucks!!!! Bless her heart!

Janice ~ I couldn't sing to save my soul. Even my babies didn't like it. :rotfl2:

Aimee & Princess ~ DONT't stop the food porn. This country girl loves it. I am such a meat and potato kind of girl. It is so amazing to see all of the different ways we all cook. I love it!!

Kat ~ I miss you. Sure hope you are back soon.

Glynis ~ I feel the exact same way about "You Are My Sunshine". Momma always loved that song and it was sang at her funeral also. To this day I cry like a baby whenever I hear it.

My Kindle died last night. :scared1::eek: I am lost with out it. I called Amazon this morning and they are overnighting me a replacement. Yea right!! I just laughed when she told me that. Out here in the boonies overnight means at least 5 days. She said I would for sure get it tomorrow and she was going to call me. We shall see!! I only hope it is here before I leave for Panama as that is my saving grace at night. There is no TV, let alone lights at night. I am with my Kindle like most are with their cell phones. I GOTTA HAVE IT and am lost without it.

I was going to make dinner... but had a craving for a restaurant we had free meal vouchers for so we went there instead. We both had chicken fried steak plus it's all you can eat sides (green beans, corn, mashed potatos, salad). VERY good. It never likes me when I eat there but it's worth it :laughing:

I remember one time I was watching Liam when he was a baby and I was trying to sing him to sleep. He actually reached up and covered my mouth with his hands! Even now if I threaten to sing they run away screaming :laughing:

The only song my kids would ever let me sing to them was "You are my Sunshine." Any other song, and they would wiggle away. Now, I can't sing that song anymore without crying. My niece who passed away a couple of years ago loved that song, and we sang it at her funeral.

Well yesterday was long! My sister is a pack-rat. An organized pack-rat but Holy Moly! She has a lot of stuff! She gave me some of her outdoor Christmas decorations and I sure do wish we put lights on the house. She has no less than 5 gynormous bins of icicle light! I confess that I wanted to take all her stuff and "save" it for her but I am not organized and my yard is a postage stamp so I restrained myself. I did the same when we went through my Mom's house and this time I held back. We did deliver the rooftop decorations to the neighbor down the street, they used to rent the boom together with Mike so they wanted them.

Marisa is going over to help her price things but I think she is going to practically give her things away, she just wants people to use them.

I took a trip down memory lane though. WE used to decorate cakes and she was storing the pans. WE are getting rid of the vast majority of them but I kept my first pan (Donny's 1st birthday)...Mickey Mouse! and Donald Duck. I also took Winnie the Pooh and Tigger, Darth Vader and R2D2. WHere did the time go.....

Dinner was scrambled eggs, steamed broccoli and a green salad.

Well I just checked on my Kindle and it is out for delivery. I can't believe it - I really am going to get it today!!! WooHoo!!!! I am so excited - I even have goose bumps - pretty pathetic huh?? By tonight everything should be back to normal. I'll let you know when I have it in my grubby little hand.

WFDT ~ Chicken salad sandwiches on whole grain wheat bread, sliced tomatoes, cantalope and fresh berries. A true summer meal!!

It's winter school holidays here and we didn't stick with our normal pattern for a fish & chip take-away dinner.

Instead, we headed to the western end of the city....Docklands.

We looked around the shops and found a restaurant to have dinner.


DH had the vegetarian hokkien noodles. It reminded me that I haven't cooked this in a while. Might do a dish at home later in the week. :rolleyes:

We decided that we needed to gain a couple more pounds (that we don't need) and ordered 2 desserts to share.


This was supposed to be Apple Strudel.

It was tasty but definitely not the strudel dish I was expecting. I would have called this more a turnover than anything else.

The Docklands precinct of town is somewhere that is fairly souless. It was built about 10 years ago and has never quite hit the right mark with the Melbournians. There are plans to renovate the area and try to rejuvenate it so that more people come to visit.

In the meantime, this area tries to organise events so that more people come down.

July - is a time for fireworks on Friday nights.

Princess, you take great firework pics!

I made Fettuccini Alfredo tonight, Alfredo's recipe from Epcot, and it was delicious as I had remembered.
 
Yesterday was a busy day. I am glad that was over.

Last night was pizza and eggplant parm (the Parm was for me) I was not cooking.

Tonight is a flank steak that has been marinating grilled potatoes and some kind of veggie.

HAPPY BIRTHDAY, KATHY!!!! You and my Katie have the same birthday. What a tremendous day!!!!!

Katie's friends are coming over today to decorate her room, so I'm trying to get her to clean it up without actually spoiling the surprise. Hope it happens!

Katie and I spent the afternoon yesterday with my sister and her daughter. We tie dyed 14 shirts for our Disneyland trip. I was really nervous, but things seemed to go well. We'll see when we get to unwrap them today. Cross your fingers! These will be the grandkid shirts for a picture for my dad. If they don't turn out, I don't know what we'll do. I'll try to remember to take some pictures!

Dinner tonight will be frozen pizza for Jacob, Leslie, Mary and Timothy. Katie gets a night out on the town with mom and dad! She has chosen Olive Garden for her dinner, and asked if she could hold off on her birthday movie, as she really wants to see Harry Potter on opening day. Alan is purchasing the tickets today so we can give that to her at dinner tonight.

Ellen- I have a Kindle top tip.
The thing that put me off gettin one was that I love to read in the bath.
My friend told me to put it in a sandwich/freezer bag and you can read away without fear of the condensation ( I like it hot ;) )
I tried it today with my mums kindle and it works a treat.

Dinner was pan seared wild flounder.which I made a mess of. tasty but messy! Steamed haricot vertes, big salad a and a baked sweet for Buddy.

I went back to Gail's today. Debby took my truck load of stuff home and we got it all in before Buddy got home :laughing:. I am going to take the decorations that do not sell tomorrow. She is doing good but there are a lot of outdoor decorations and I do decorate! ;) Anything else left will go into my truck and to the Too Good to Throw away section we have at our landfill.

I love tie dying! We did it at minicamp with my wee kids and theirs all turned out (and it was a crazy mess!) so I'm SURE y'alls were great! I did mine on pink this time and it looked even cooler than just white.

The kids were so anxious to unwrap theirs; thankfully, the hot Texas sun allowed them to open them up by the next morning so they could see their masterpieces.



Have you Kindle lovers discovered Lendle.com? I just borrowed my first book from someone - it's The Hunger Games. Anyone read it? Gets great reviews and I've heard about it... I figure if I hate it, I didn't invest a dime into it!



We ended up shopping all afternoon - I needed ONE pair of denim bermuda shorts for my whirlwind week. Do you know how hard it is to find? So hard I had to darken the doors of our local MALL to find some! Did find a pair at Sears, of all places!

Since we got home too late to thaw chicken, we just ordered pizza tonight.
 
I freakin' love this dish. It's from my Delicious Disney cookbook (Alfredo's recipe)

Fettuccine Alfredo
1 cup (2 sticks) butter, softened (I used Kerrygold Irish butter)
1/2 pound Parmesan cheese, grated (plus more for garnish)
1 pound fettuccine (preferably fresh)

With an electric mixer, beat the butter and cheese until creamy.

Cook fettuccine according to package directions. Drain, reserving 1/2 cup cooking water.

Return fettuccine to pot. Toss with cheese mixture and 1/4 cup of the reserved water until all strands are coated (add more reserved water as needed to make a smooth creamy sauce).

Garnish with fresh Parmesan.

The shirts did turn out. Well, all except Timothy's which unfortunately was done with pink and purple, instead of red and yellow. I'll have to redo his. No biggie. 13 out of 14 is not bad.

As for The Hunger Games, I loved it! It's kind of a disturbing concept, but I really loved the book. I actually loved the whole series. There are 3 books in the series. I hope you like it, too!
