Nan – I’m gullible as well and I could really appreciate how they GOT YOU!!!!!!! Too funny! I’ve never been on any structured diet of any kind so I can’t really comment on the one you’re planning on trying. Good luck and I’ll be praying it’s a success!

I’ve got Johnny home today with an upset stomach, so I’ll be heading out soon. Seems like I’m in need of a pedi/mani after the gym.:rolleyes1

We are having those (damn) gyros tonight! The yogurt has been straining since last night, the chicken is marinating, it's HAPPENING! I hope it's good :laughing:

Though I don't have any "events" this week, I do have a big week ahead. I'm going to post on FB about it as it's TMI to post on a public board. It's all good!!

Everything has already been eaten!! I actually contacted them and said I wanted two boxes for this week since it is a long holiday weekend.

The peas were so small and tender. We all commented that they almost tasted like corn. I just served them with some butter:

I made a salad with some of the vegetables from the market box. The dressing was a homemade buttermilk ranch, again using herbs from the box:

That was Saturday. Sunday we I baked some Turkish sesame-cilantro-scallion rolls. The recipe is in the current bon apppetit:

Last night after my drama with Minnie. I grilled burgers and had fruit on the side.

Tonight is grilled chicken with potatoes and veggies.


For those not on FB. I had both dogs outside with me doing general clean up. I keep the door from the garage to the backyard open so I can easily get what I need and put things away. A came out and Hershey went in with him. I finished and then went into the garage and closed the door. I didn't see Minnie and thought she went in with A. I started getting things ready for dinner and thought where is my cooking buddy? I went back outside and no Minnie so I called for A to come help me find her. I retraced my steps all the while calling for her like a looney. I opened the garage door no one or dog came out. I turned on the light and there sitting in the dark is Minnie just looking at me:rolleyes1. Yes she can get lost in a box. I am seriously thinking she suffers from doggy dementia she gets herself turned around and lost all the time. Sorry this got soo long.:upsidedow

Kat- mani and pedi are indeed in order!

I have Nola this morning. I think Rylee is teething, she cried all night long. Welby is on her way to the Dr with her now.

Yes, it's the same one as last year and the year before! :lmao: We are going to a BBQ at a friend's house. It will be the usual BBQ food like burgers, hot dogs, corn, etc...

Well, after trips to 4 different stores to find Belgian endive, I finally found some to make this stuffed Belgian endive that Melissa D'arabian featured awhile back that had great reviews. Sadly, neither one of us liked it. I wanted to like it but it just tasted like hot bitter lettuce :confused3

DH went and ate the leftover gyro and tomato rice. I picked at mine and gave up.

Anyone else have stuffed endive that's cooked? Did you like it? I typically like just about anything so I'm disappointed. I don't think I'm going to post it on my blog...
 
These were all VERY good.

Chicken Gyros
1.25 lbs. chicken pieces (I used boneless/skinless breast)
4 cloves garlic, smashed
Juice of 1 lemon
2 tsp. red wine vinegar
2 Tbsp. extra virgin olive oil
2 heaping Tbsp. plain yogurt
1 Tbsp. dried oregano
Salt and pepper
1/2 batch of tzatziki (recipe below)
Sliced tomatoes
Sliced onions
4 (pocketless) pitas

Whisk together the garlic, lemon juice, vinegar, oil, yogurt, and oregano in a bowl. Add the chicken and rub the marinade in. Cover and refrigerate for at least an hour.

Preheat the broiler (or grill, or pan on the stove). Sprinkle the chicken with salt and pepper on both sides, and then broil until cooked through, about 5 minutes per side, depending what size/type chicken you are using. Allow the chicken to rest for a few minutes before slicing into strips.

Meanwhile, heat your pitas. I threw mine into the microwave but you could throw them on the grill for a few minutes or put them on your burner, if you are lucky enough to have a gas stove.

Top the pita with the chicken, tzatziki, tomatoes, onions. Enjoy!


Tzatziki Sauce
32oz. container of plain yogurt (Not fat free, unless it's a Greek yogurt like Fage)
1 hothouse cucumber or 2 regular cucumbers
3-5 cloves garlic, crushed
1-2 tsp white wine vinegar
Salt and a little pepper
Squeeze of fresh lemon juice (optional)
Drizzle of extra virgin olive oil

Strain yogurt using a cheesecloth over a bowl (or, line a strainer with a coffee filter or paper towel) for several hours or overnight to get out as much moisture as possible.

Peel and seed the cucumber. Shred the cucumbers and then squeeze them to get rid of as much excess moisture as possible. I use a towel to do this, and you will get a lot of liquid.

Mix together the strained yogurt, shredded cucumbers, garlic, vinegar and lemon juice (if desired). Salt to taste. It’s best to refrigerate for 30 minutes or more before serving, so flavors can meld.

Drizzle a little olive oil over the top.

Greek Tomato Pilaf
Olive oil to coat your pan plus a tablespoon of butter
1/2 onion, finely chopped
2 cloves of garlic finely minced
1 large can crushed tomatos
2 cups of chicken broth or stock
1 and 1/2 cups of basmati rice
1/8 teaspoon cayenne
1 teaspoon smoked paprika
1 teaspoon sugar
1 tablespoon red wine vinegar
A handful of finely chopped parsley
Salt and pepper to taste

Saute the onions and garlic in some olive oil and butter until they become translucent.

Add the tomatoes and cover allowing it to cook for about 15 mins or until the sauce begins to thicken.

Add the remaining ingredients except the rice and bring to a boil.

Add the rice, stir thoroughly and reduce the heat.

Cover the pot and let it simmer on a low heat for 15 mins until the rice is just tender BUT the liquid has NOT all been absorbed.

Remove from the heat and place a kitchen towel between the lid and the pot and let it rest until the rice has swollen. The residual heat will allow this to cook a little further.

Serve with a dollop of Greek yogurt, if preferred.

Yes, they were very good. They looked really weird when I put them in the oven--like 90% herb and 10 % bread, but they puffed up while baking.

I've never cooked endive. I always eat it raw.

Not getting much done at home. Then again maybe if I stopped playing Angry Birds at night I would get more done. :rotfl:

Got to the pick your own farm for tart cherries, beets and stopped in the barn for squash and a few other things on Saturday. Going to make a cherry chocolate ice cream for the 4th. We are going to my aunts for the day, probably have the same as usual, hot dogs, hamburgers, etc.

I am also heading to my sisters for the weekend for my two neices swim meet. Got to go play with my camera and see if I can get some great shots.

She had a raging ear infection and her molars are ready to pop out. Poor little peanut is having a hard time teething.

Been really frantic here! WE had grinders last night. Buddy will have the rest this evening. BBL!
