Welcome back Bethany! Looking forward to the pictures. Sorry you are having such trouble with facebook. Mine is wonky sometimes too.

Thanks! I am taking it nice and easy! I should have photos up soon. We had a lot of lightning right overhead yesterday; I don't like to have my laptop or hard drive (all my pictures!) plugged in when it's lightning that close. I've heard of too many getting fried that way. So I wasn't getting a lot uploaded yesterday.

Bethany ~ How did you fare with FB. I don't frequent FB very often. I know I miss out on a lot but I just always seem to spend more time trying to figure it all out. I don't have time to spend there.

Tomorrow is our All Church Garage sale with all of the proceeds to go to our Mission Trip to Panama. We leave in 19 days :scared1: I so hope it is a good day. We have worked so hard getting it ready. So tonight will be spent getting all of the items priced.

Today is also Ethan's 7th Birthday. My oh my where has the time gone. We have bought him a "big boy" bike, I can't wait to give it to him. Matthew is coming home for the party tomorrow at the pool. Then the boys want to get some golf in.

It didn't go so well. I was trying to scroll down through my news feed to see the statuses people had put, but I couldn't go down past about the last three hours of posts because it kept jumping back up to the top of the page. :confused3 I didn't even try to check the WFD group page because when I went to the NOLA one, there was only ONE post on there. The rest of the page was all white. I gave up with it at that point. I have no idea what it's problem is. I haven't deactivated the account; I'm still trying to fight with it, but gee whiz! More trouble than it's worth lately!

Good luck with the garage sale tomorrow! That trip is going to come up FAST!

Alice Springs Chicken

Recipe
• 1/2 cup Dijon mustard
• 1/2 cup honey
• 1 tablespoon canola oil
• 1 teaspoon lemon juice
• 4-6 boneless skinless chicken breast
• 1 tablespoon vegetable oil
• 2 cups sliced mushrooms
• 2 tablespoons butter
• 1/2 teaspoon salt
• 1/2 teaspoon pepper
• 1/2 teaspoon paprika
• 12 slices cooked bacon
• 3 cups shredded Mexican blend cheese
• 2 teaspoons chopped fresh parsley

Directions
1. Combine the mustard, honey and 1 tablespoon of the oil along with the lemon juice and mix.
2. Place the chicken in a 1 gallon Ziploc bag and pour half of the mixture on top. Refrigerate for 2 to 24 hours.
3. Save and chill the remaining marinade to serve later with the chicken.
After the chicken has marinated:
1. Preheat your oven to 375°F.
2. Place the remaining oil in a frying pan, heat and sear chicken on both sides.
3. Put the chicken in an oven safe pan and brush liberally with the marinade.
4. In the same frying pan and add the butter and sauté the mushrooms.
5. Season chicken breasts with salt and pepper and paprika.
6. Place bacon strips across each breast, spoon mushrooms on top, and then add approximately 1/3 to 1/2 of a cup of cheese on each breast.
7. Cover the pan with aluminum foil and bake 7 to 10 minutes or until the cheese is melted and bubbly. Sprinkle with parsley and serve with honey mustard marinade.

Just wanted to pop in real quick and thank you all for the well wishes. I can't believe my kiddo graduated elementary school! It was a really cute ceremony and my eyes got a little watery but that's it. One of the moms made bags for all the parents. It had two water bottles, some hard candies, and a pack of tissues. She put a class picture on the front, it was a really sweet idea.

Kathy- My kiddo loves to get Alice Springs quesadillas. Outback is far away from us but we have a stack of gift cards people keep giving us.

Bethany- Good bagels are one of the things I miss most about NY.

I'm going to put a mini-trip report in here if y'all don't mind... :rolleyes1

The first day, my friend arrived at the airport at about 10. I picked her up and then we came to my house to drop her stuff off. We did, in fact, eat some of the leftover jambalaya. :laughing:

Then we went to the New Orleans Museum of Art. It's free on Wednesdays, and it also has an outdoor Sculpture Garden. We got to the NOMA at 12, and we stayed inside until 1. Then we were outside in the Sculpture Garden and City Park (NOMA is in the park) until 3:30. Yes, that is 2.5 hours of solid outside time. The heat index was something like 103. :upsidedow

After we went walking in the heat, we stopped at a nearby Burger King for milkshakes. :thumbsup2

Then we went to Lake Pontchartrain:


At Lake Pontchartrain they had this "Mardi Gras Fountain & Plaza" that has seen better days. Each little pedestal thing had a krewe's name on it.






After looking at the sad fountain, it was still a little too early to eat, so we drove around a little bit in some nice neighborhoods near the lake. I have the realtor.com app on my phone, and there's a button you can push that will use the GPS in the phone to find houses for sale near where you are. Sooo, we drove past some houses for sale in the million dollar range. :lmao: We also saw a house that had an observatory attached to the back porch! :eek:

We went to dinner at a place called Port of Call. They are a hole in the wall place that serves great 1/2 lb burgers that come with a loaded baked potato that could be a meal in itself. :thumbsup2

Then we came back to my house, and we went on the levee and my friend took some pictures of the Natchez steamboat as it went past. It has a dinner cruise that plays jazz music.

My friend used to teach with my in NYC, but she quit teaching in June of 2010 to pursue professional photography. So one of her main objectives on this trip was to take a lot of pictures!
 
Good morning! The sun is shining and will get warmer. Yesterday we didn't get out of the low 60's and very cloudy.

My Aunt and Uncle lost power in Tuesday nights storm and got the power back late afternoon Thursday. Luckily no damage other than a few lost tree limbs.

I am not sure if I will cook tonight or eat at one of the festivals going on around here. Since the weather is going to be so nice I am leaning on the festival route.;)

Robin I have been know to shed a tear or twelve at graduation. Glad you did well. WOW another year down, time sure seems like it is moving faster:hug:

Zucchini Pasta


Dinner tonight was a vegetarian pasta meal. It is surprisingly moor-ish and I would recommend you try this dish to find out for yourself. It will take about 20 minutes to cook in total.


My starting ingredients:

  • Pasta, about 100 g per person
  • Zucchini, 2 large, grated
  • Anchovies, 80 g
  • Vegetable Stock, 1 cube or equivalent
  • Olive Oil, 2 tablespoons
  • Salt and Pepper
  • Parmesan cheese, as little or as much as you like, grated
Missing – but should be included
  • Garlic, 2 cloves, minced


Cook the pasta as per instructions. The pasta I used had a cooking time of 14 minutes.

With 12 minutes to go, empty the anchovies, oil and all, into a large pan and slice into cubes.

Add the olive oil to the pan and the anchovies. Yes, I know it seems like a large amount of oil but this recipe needs it.
I ran out of garlic but this is where I would add the garlic to the pan. Fry the anchovies (and garlic) on low heat until it has changed colour a little. This should take about 2 – 3 minutes.

Add the grated zucchini to the pan and turn the heat back to a medium/hot flame.

Fry the zucchini until it just starts to wilt. Then add enough water to just cover the zucchini. I use the boiling water from the pasta pot.

Add the stock and allow to simmer for about 3 – 4 minutes.

By this time, the pasta should be cooked. Drain the pasta well and add it to the pan.

Mix the pasta and the sauce together. Season with pepper (and salt, if required).

Serve in a bowl, with lots of the zucchini on top. This is my dinner, without Parmesan.

Aimee Glad camp went well.

My day yesterday was mostly good. We went out to my favorite old fashioned meat market then out to lunch. I came home with tons of meat. I bought two of the most beautiful racks of ribs, burgers, steaks and ground buffalo meat and buffalo hot dogs. I have never had buffalo hot dogs.

Last night we had some of the buffalo burgers and salads.

My DSL was giving me fits yesterday. I think I found what was the problem no thanks to AT&T's wonderfully helpful customer service. pirate::mad:. It was just the power cord. Not the modem. Good thing I do know enough about things to not get ripped off. Or so I hope.

Last night we had shrimp scampi and a Caesar salad. Tonight will be Lauren's marinated flank steak, grilled veggies and twice baked potatoes.

I need to pick up some pillows that the tornando (aka Hershey) knocked off the couch but my cat has claimed them. He is currently on nap number 20 I hate to wake the little thing. I think in my next life I want to come back as a pet.:thumbsup2
 
I had every intention of making dinner tonight (the gyros I had to put off) but DH came in from the golf course "starving" and advocated that we eat leftovers tonight instead so dinner would be sooner than later ;)

So we had hamburgers/hot dogs that I had left from camp.
 
(For those of you on both the NOLA and WFD threads, I do apologize....these take too long to write out two times, so I admit to copying and pasting.)

Day 2....

We had my DH drop us off at the Algiers/Canal St. ferry. From there, we walked to Cafe du Monde in the French Quarter. We didn't have to wait for a seat, and we had prompt service. My friend decided she liked the beignets and her cafe au lait. :thumbsup2 I had my beignets with chocolate milk. I drink hot coffee every morning, but INSIDE! It was too hot for hot coffee outside!

Then, we walked up St. Ann Street to the state visitor center to see if they had any useful brochures and maps. (Really I was looking for the coupons that they sometimes attach to them, but no luck there...) They ask anyone who walks in the door to write down your zip code and how many nights you are staying. I gave them my zip code but left the # of nights part blank. :rotfl:

Then of course we had to go to Jackson Square to see the St. Louis Cathedral and take pictures.



After that, we went to the Presbytere and the Cabildo. If you plan to visit both in the same day, you can get a 20% discount if you buy the tickets for both at the same time. It was $9.60 per person to enter both museums. The Presbytere currently has a Katrina exhibit on the first floor and a Mardi Gras exhibit on the second.

I was not sure what to expect out of the Katrina exhibit, but we both thought that it was well presented. It told stories from several different perspectives, all of which made me cringe. They had stories from medical workers, tourists who were stuck here, residents who stayed, and some news clips from that time. It was a mix of video, written information boards, photos, artifacts, and some audio stories. They also had information boards about the levee system and what does and does not work as well as the importance of wetlands.

The Mardi Gras exhibit was like the cheap version of Mardi Gras World, without the stale king cake sample and seeing actual floats worked on. They had videos of parades and a lot of info boards. They also had a reproduction of a float stuck behind NOPD barricades. :rotfl: The part that we found most amusing was this, however:



Yes, they put a facade of porta potties in front of the real bathrooms! :lmao:

The exhibit covered both current and past Mardi Gras, and other parts of the state. They also had historical artifacts like old trinkets and ball invitations and a large collection of dubloons.

My friend rarely ate lunch, but I was hungry and wanted a counter service meal so we actually went to Arby's and I got a sandwich and she got a milkshake.

Then we went to the Cabildo. This is Louisiana history. Three floors of it. It's an interesting history, but I think two museums in one day might be too much for my attention span.

They did have a hallway of all the flags that have flown over Louisiana.


I think this was the day I took the least amount of pictures. We were allowed to take pictures in both museums, I just didn't take that many.



After the Cabildo, we went into St. Louis Cathedral before heading back to the ferry. We remembered that the ferry left the EB at the :15 and :45 after the hour. We left the Cathedral at about 4:30 and made it on the 4:45! That was a quick walk in that heat! :scared:

The river level has gone down, but it still looks so high in this picture since that tree is there.


We got to my house and freshened up a bit before heading out to the Ogden Museum of Southern Art. On Thursday nights they have live music in the atrium; you can listen and browse the galleries for $10 admission.

The Ogden has a photo exhibit on the Haiti earthquake. I thought for sure that after seeing both the Katrina and Haiti exhibits in the same day I was going to have some sort of nightmare. Fortunately, I didn't!

We ended up leaving the Ogden at 8 and getting dinner at Popeye's on the way home. We had to wait a few minutes for the chicken to be ready, so they gave us both a free mud pie. :thumbsup2

That is a cute idea! Do kids have to do that whole "apply to middle school" thing where you are, or are they assigned a neighborhood school? For some reason elementary school to middle school always seems like a huge step up!

What? Low 60s? Kathy...when is the last time we were down into the 60s? Do you remember? :confused3 Our dew point was 77 yesterday - the temp was 94 or something.

I am glad that is the only damage they had. Although it must have been frustrating to be without power for 48 hours. I always forget how much I take it for granted.

I have been up to the lake at the end of Canal Street several times. This was the first time I even noticed the fountain, and it was only because my friend asked me what it was so we went over to investigate. I don't have any amazing memories of it, but it still made me sad to see it in such a condition. :sad2:

Aimee- I am so glad that the camp went well. I hear you on starving husbands, mine will eat anything in the fridge if he comes home hungry. He says that he doesn't want me to have to cook but he really means it takes too long and he wants food now. :thumbsup2

Janice- I can picture your little tornado scooting the pillows while kitties are stealing them right from under her nose!
 
Well I am going to try something new. I never never never try diet plans that you need to eat differently but I am going for a consult one day this week. I spent the better portion of Saturday and Sunday with Gail, a good deal of which was trapped in a car with nothing else to do but talk. She has lost a lot of weight on a diet plan called Ideal Protein and looks FABULOUS!!!!!!!!!!!!!!!!!! I don't mean good. I don't mean great. I mean drop dead fabulous! I told Buddy about it and how I tried my own version, lasted one hour and got sick but that I tried some of the food she had and was okay. He told me go for it and (best part) he would pay for it. I was not just thinking about that but if he would be comfortable with the food I would cook for meals because I am eliminates a lot of carbs and he loves them more than this Irish Girl. Wish me luck!

I also wanted to tell you that we moved Debbie on Saturday. Her LT helped her find an awesome house. I was concerned because we thought that she was going to be even further away but the ride is not as bad as we thought. I can see a lot of road trips to visit her, she has three bedrooms so plenty of room for us to enjoy the most magnificent view.Buddy and Daniel are already making plans to go help her get plenty of wood ready because she has a backup wood burning furnace in the basement and a fireplace in her LR.

Just a little more. Buddy hunts but I don't think he really hunts.........I think he naps. :lmao: Anyway, the LT called in the Chief of Police to help unload the trailer ( I also think he wanted the local folks to know that Deb was there so her Mom and I knew she was not alone) They guys were teasing that Buddy would not need a license because he never got any deer but added that we should not tell the game warden. Ha HA wink wink. Well a few hours later a friend of Deb's showed up to help clean and we were all chatting about the morning so I told her about the conversation. Her friend told me just to get Bud a non resident license. Oh no......he doesn't need one....that's what they said.....just don't tell the ............oh no! I was HAD!!!!!!!!!!!!!!!!!!!!!!! Didn't I forget that I was talking to the game Warden :scared1::scared1::scared1: and did not even realize that Deb's friends were teasing the heck out of gullible me! "Ummmmmmmmm ................Mrs G................... please ask Bud to get a license..............please??????" As I hang my gullible head in shame while Deb and Gail cannot even stand up because they are laughing so hard. Brats!

Nancy What did you think about the Thai? Be careful with any diet that goes to extremes. Make sure it has a balance of carbs, protein and veggies and fruit.
