Kat - stay safe and I hope that it's the best of the worst lose-lose situation for everyone! There is nothing worse that being in a flood.


WFDT - We're going out with friends to celebrate my birthday and having Asian. Looking forward to it.

WFD italian sausage sandwiches with peppers and onions. Fruit salad on the side.

I hope to catch up this weekend, we will see how that works.:rolleyes1
 
Kathy - That stinks! I really hope that things don't get really bad. We can sympathize, however, as we are going through a lot of flooding ourselves. Back in 1983, the main street in Salt Lake City, state street, was diverted into a river to keep the flooding under semi control. Forecasters are saying that this year's flooding looks to be worse than 1983.
 
It's a quarter to 11 pm and I am so stuffed!

We went out for dinner and we had rice with beef rendang, vegetable curry, barramundi cooked in a hotpot with tofu and mushroom, pandan chicken and a steamed fish mince wrapped in banana leaf. We had a chocolate mud cake for birthday celebrations.

If I eat anything tomorrow, will one of you please rap me round the knuckles?? Thanks!

Marilyn- have a great time at the "ball"!!!!!!!!!!! You must be so proud of your nephew, varsity is a big deal!

Kat- First, I have been glued to the weather forecasts and have been so worried about all of you. It seems silly but I am one of those folks who hopes that if I do not acknowledge something it will go away. This has not, sadly.

Laura- It is going to take a while to adjust to fitting everything in along with work. I know you will but you were crazy busy before :dance3:

Kat- I did not think of the mole removals as surgery because I got to stay awake ;) I liked the surgeon and thankfully Buddy was not working so he took me back and forth a few times. I generally go myself or Marisa will take me. He has turned into a worrywart, which is nice I guess.

The food last night was excellent! I have to say that I was always a Tastefully Simple gal but Partylite has a line that is excellent and is less expensive. I used the Garlic-Parmesan vinaigrette in a veggie/chicken pasta alone with extra garlic seasoning; the spinach and herb in a veggie tortellini salad that I served at room temp. It would have been wonderful cold but was good warm. I used the rosy blush vinaigrette in a romaine, strawberry and pineapple salad. I also made dips with the seasonings and they were very good,. The garlic went first but I made a cucumber dip with the spinach and herb that was good. I think it would have made a good spread on crackers for appetizers.

The sleeper of the evening was a snickerdoodle cheese ball that I made as an afterthought thinking I could replicate it myself. Holy Yummy! I served it with animal crackers and Scooby Doo (don't hate me) graham cracker bones. I am going to remember this ion on Halloween :thumbsup2

Dinner is going to be something that Buddy willlike, I have no idea what. He hated teh pasta but knew he had to keep that to himself :lmao:
 

Dinner is meatloaf tonight, but this is for after dinner:

BCB's Hot Pineapple Scotch

1 cup of your favorite scotch
5 habanero peppers ( 4 of them are for garnish )
1 cup pineapple juice
4 pineapple slices (to garnish)

Directions

1. Put a single slit habanero pepper in the cup of scotch.

2. Let the pepper sit in the scotch for an hour or so.

3. Pull the pepper out and discard it.

4 .Pour the scotch into 4 glasses.

5. Add 2 ounces of pineapple juice to each glass.

6. Add ice.

7. Garnish with a slice of pineapple and one habanero pepper.

Enjoy.
 
They are supposed to make a decision on opening the spillway today. It’s so sad watching people on the news asking “Why is it ok to flood us and ruin our lives”? Thanks to all for the supportive words.:grouphug:

Glynis – I’ve been to Salt Lake City several times and never knew that about State Street! I’m hoping the forecasters are wrong.:hug:

WFD – Bacon wrapped chipotle shrimp, charred corn relish and rice pilaf.
 
I am still doing a terrible job of checking in during the week. The last two weeks have been a little crazy and out of my normal routine. Hopefully things will settle down soon.

PrincessInOz- I'm not sure I introduced myself yet. :upsidedow I live in New Orleans with my husband and dog and I'm a teacher. I've been following along with the WFD thread for a few years now, but I still can't cook my way out of a paper bag. A shame for someone living in Louisiana. :laughing: I do have to say I LOVE how you post your recipes, where you have PICTURES for every step! If only I could find a cookbook that is like that, then I might understand what I am supposed to do! Happy (late) Birthday! :dance3: And sorry to hear about your uncle. :hug:

Laura - It always amazes me how many activities your kids do and how you keep up! I agree, that was sweet for Liam to be upset to miss Caili's performance. I hope the production goes well!

I think I have driven on State Street before. Sorry you will likely be dealing with so much water too. All that melting snow has to go somewhere when it melts. Hopefully it will not go in people's homes. :sad1:

I stopped worrying and being anxious. It was helping nothing. Don't get me wrong - I'm still concerned about the whole thing. I have a river levee outside my window, and I am well aware of what COULD happen. But I'm choosing to trust the levees are going to hold strong.

It is painful to watch the news when they talk about the Atchafalaya Basin and knowing that opening Morganza is going to devastate those people. :sad1: I understand that it's supposed to be the "better" of the two options, but it still sucks that it has come to this. :sad1:

It is dark and cold today Only in the mid 50's quite a change from the 80's and 90's this week.

WFD is a roast beef, baked potatoes and broccoli.

I am sad that so many people are affected by the flooding. There is no easy solution to this problem. I just hope whatever they choose really helps in the long run and not ruin more lives and land.
 
I just got a breaking news alert on my phone from CNN. The first bays of Morganza will open at 3pm Central Time. That is 75 minutes from now. :sad1:

I just got another breaking news alert from CNN. They opened the first bay of the Morganza. I have heard that they are only opening one or two today. They are opening it gradually so that there isn't a wall of water but rather a gradual increase. I also have heard that they are only planning to open about 25 of the 125 bays.

Glynis, I never knew about the flooding by you. I hope all is OK. I am glad the kids are doing better in school. I had some issues with Andrew this year too but he is somewhat on track now.

The bourbon chicken was great the other day! I have no idea why it is called bourbon chicken...the recipe does not call for bourbon! here is the recipe:

2 lbs boneless chicken breasts, cut into bite-size pieces (I sliced thin)
1 -2 tablespoon olive oil
Sauce:
1 garlic clove, crushed
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/3 cup light brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1/2 cup water
1/3 cup soy sauce

***I added 1 heaping TBS of cornstarch to the sauce to help thicken. I also added snow peas, broccoli and green onion and a shot or two of bourbon.

Directions:
1 Heat oil in a large skillet.
2 Add chicken pieces and cook until lightly browned.
3 Remove chicken
4 stir fry vegetables and remove.
5 mix sauce ingredients and add to pan and bring to a gentle boil. Boil until thickened. Add chicken and vegetables to heat through.
6 serve over rice

Dinner tonight is cheeseburgers and fries.

Lauren Dark and cold here, no rain yet but it sure looks like it wants to.

I went earlier today to a local garden center. It seems wrong to be looking for tomato plants when you have your hands freezing and you are stuffing them in you pockets. I hope we are past the frost.:worship:
 
Today is a day off from work for me, so I am going to try to get caught up before our crazy weekend starts. Caili has her ballet production tomorrow, so she has to be at rehearsal from 4-7:30 tonight, and then the shows are at 1 and 6 tomorrow. Liam has a baseball practice tomorrow afternoon, so he will miss the show. He actually was looking forward to it and is disappointed he can't be there. I thought it was kind of sweet. He asked me if I could videotape it. I don't think I can, but the ballet school usually does and sells copies. Anyway, dinners are going to be grab-and-go for the next couple of days.

Everyone down here is on pins and needles with the anticipated flooding. Looks like the opening of the spillway will divert the water and NOLA/Baton Rouge will be spared at the expense of flooding thousands of others. It's a lose-lose situation.:sad1:

You should check out Pioneer Woman recipes if you haven't already. Her pics are all step by step. I think Rachael Ray has a new cookbook that is like that... look and cook maybe? I can't remember...

And give yourself more credit on the cooking aspect! You can cook!

Aimee, Did you watch movies all night? It sounds like your church does some really nice things.

I'm glad you're feeling better. Yes, we did it drive in movie style on a huge blow up screen so you can't really see the screen when it's light outside. So, we started at 830 and finished the last one at 645 - the sunlight started around 615 but we had to finish that movie!

It was a big hit but I'm not sure I can be responsible for another one. It's one thing to bring a mattress and fall asleep, like many of the people (ie, adults) did, but I was the staff person there so I couldn't. I'm SO TIRED.



I had big plans of grocery shopping this afternoon, after napping for awhile, and then making dinner but instead I can't hardly function. Tomorrow is a big day at church and I have to go run some errands to prep for that so we'll probably just get something out.

I have recently gotten back into going to chapel.I wont get into why but suffice to say it was more a stance than a calling.I have tho been surprised at how much i have enjoyed it and found it very fulfilling.

Still a long way to go before I can see ma self sittin at the right hand but hey Im trying....:laughing:

Celtic have a very,very,very slim chance of winning the title.
We need to win and hope Rangers ( spit) lose or draw.
There has been some crazy stuff going on ower here with the Celtic manager receiving bullets and parcel bombs in the post.
He and his family are under 24hrs security and he was actually attacked by a rival fan on the side lines on Wednesday night.
It is absolutely disgusting the abuse this man has had to suffer.

I can quite safely say I have never ever wanted us to win a title so much,not for me but for Neil Lennon.

Same here! DH rototilled the garden today and wanted to spread mulch. Noooooooooooooooooooo!

Lauren- I was uncomfortable a little that day, it seemed to be pulling a bit. Tylenol fixed that. I am already glad it was done, I was so self conscious of the one right on my forehead. I felt like it was the sun in the solar system :headache:

Buddy is going to be in Heaven this evening! :rotfl2:I hope he enjoys it, I made a huge pot of cabbage soup and we all know what that means.I am going on a diet and he is coming with me :lmao:

Dinner had a slight change in plans. I made spaghetti with some of the leftover sausage and of course garlic bread. I needed to be good and use up the leftovers. The roast will move to tomorrow

Thanks for the vote of confidence, but most of the cooking is done by my husband. Today I biffed up a can of soup! :rotfl: I put it on the burner a little too high and then went to look at the jazz cruise boat that was going past on the river and the soup boiled over. Oops!

The short version is that there is too much water and it has to go somewhere. A decision was made to send some of it through farmland and some towns in order to relieve the pressure on the levees through Baton Rouge and New Orleans. They (for certain) are flooding some people to (potentially) save many. It was not a decision made lightly and I'm glad I wasn't the one who had to make it.

I'm still looking for a place to go to church. I know what you mean. What I cannot comprehend is people who cause trouble like that for no reason. What's it matter to them what church they go to or what team they cheer for? :confused3

I was looking at pics of the flooding in TN (esp since we were just in Memphis a few months ago) and it's all just heartbreaking. Water can be so damaging. I'm thankful the people had the opportunity to get out of the way but you can still only do so much in saving your home, business, and livelyhood.

It was a misty, cool day here.

My godson didn't get to play because it was a hard fought game and they needed all of the best, most aggressive players. He's good but not that good yet. They ended up losing 13-10.

I'll have prom pics up on FB soon, waiting for them to load now.
